You can also check readiness with a toothpick. When piercing the mass, it should remain dry. In this case, the marshmallow can be taken out. It should be dense, but not sticky, and the color should be light brown. There is no need to turn off the oven.

Final stage:

  1. cut the cooled marshmallow into several strips depending on the desired height of the final result;
  2. each layer should be generously greased with the mixture, which was sent to the refrigerator;
  3. Bake the greased layers again for 2-4 hours.

After completing the baking process, you need to thoroughly rub in the powdered sugar on all sides. The finished layers will then require infusion for half a day. After this, you can cut the marshmallow into portions.

  10. After this, you need to cut the layer into several parts, grease them with raspberry mixture and stack the pieces on top of each other.

Then you should put the marshmallow back in the oven for 3 hours at 90°C. After this, it will be ready to be cut into portions.

The pastille will bake in the oven for quite a long time - at least 2.5 hours (at a temperature of 80-100 degrees). It is important to prevent it from drying out. After about 1.5-2 hours, the dessert will acquire a darker color, and the top will harden a little and dry out. This means that the delicacy is almost ready; you still need to keep it in the oven for literally half an hour.

After this you need to roll out the apple “dough”. Its thickness can be from one to four centimeters. Do it at your own discretion. Some people like thin pieces, while others like thicker ones. Cut the marshmallow into squares or roll it into rolls. Now you can enjoy dessert!

This very tasty, delicate dessert, along with Tula gingerbread, is known and popular far beyond the borders of our Tula province. Back in 1890, Belev marshmallow, produced by the merchant A. Prokhorov, won first prize at a horticulture exhibition in St. Petersburg. This dessert was bought with pleasure even in Parisian confectioneries of that time. In France, pastille was served with champagne and white wine, and in Russia with milk, tea, and even mead.

Of course, you can now buy this delicious delicacy in our stores without any problems, but I always really wanted to try making marshmallows myself. I had to tinker a little, but believe me, it’s very tasty!!!

To prepare real Belev marshmallow, Antonov apples have always been used, since they contain a high content of dry substances. Well, you say, this should have been prepared in the fall in season... And you will be absolutely right! But somehow there was no time in the fall, and there are still a lot of apples in the basement after a bountiful harvest. I made both apple marmalade and pie filling - it was time for marshmallows.

So, to prepare Belyov apple marshmallow, we need very few ingredients.

Dry the marshmallow for about 6-8 hours. But I advise you to keep the process under control. Its readiness will be determined by the fact that when pressure is applied, the layer will spring back. It will dry completely. After 4 hours, you can turn the layer over to the other side.

9. After the marshmallow has completely dried, remove the paper, if necessary, wetting it a little if it doesn’t come off well. paste

10. Before slicing, it’s better to let the marshmallow sit for a little while; I left it in the oven that was turned off. Then I trimmed the edges a little. They dried out more than the main layer, resulting in such delicious crunches that very quickly disappeared with the tea))). The layer was cut into three parts.

Before tasting, we still gain patience for 8-12 hours. We store the pastille in parchment paper. There are recommendations for long-term storage in the refrigerator, but if you make a little for yourself, it is better to store at room temperature.

Preparing marshmallows in a bathhouse

In general, this dessert was originally dried in baths, because in the old days there were no ovens. Today you can also use this option. You just need special trays with holes so that the marshmallows dry evenly on all sides.

Cut the apples (in any quantity) into pieces and place on pallets. Place them in a heated bath on the canopy (shelves). The treat should dry out a little there. After this, hang the apples on the clothes lines in the dressing room. After two days, you can eat dessert.
