Pasta carbonara recipe - classic and not so

Pasta is probably one of the most favorite dishes of many people. One of the best traditional recipes is carbonara with bacon and cream. It turns out surprisingly tender, but at the same time satisfying and appetizing. It is important that it is prepared very simply and from ingredients available to everyone.

With pasta you can cook not only the beloved Italian pasta, but also some other dishes. For example, we previously prepared classic lagman , a pasta casserole. But now I propose to please yourself and your household with carbonara pasta. I have prepared several different recipes, but all of them will always contain bacon and cream. And for the first thing, I suggest preparing a healthy, appetizing cauliflower puree soup .

Recipe for pasta carbonara with bacon and cream

Let's start with one of my favorite carbonara recipes. Even if it is not very faithful from the point of view of the classic version, it turns out very, very tasty. Ready to try it?

Ingredients:

  • Parmesan cheese – 100 g;
  • spaghetti – 250 g;
  • brisket (cheeks) – 200 g;
  • cream – 200 ml;
  • olive oil - to taste;
  • yolk – 1 piece;
  • salt - to taste;
  • ground black pepper - to taste.

Preparation steps:

1. Cut the brisket into small slices and fry in a frying pan without oil. Transfer the golden bacon to a container, removing excess oil.

2. Boil the pasta until half cooked in boiling salted water.

3. In a container, mix finely grated Parmesan, cream (1/3 pack), salt, pepper and yolk (you can add one more if desired.

4. Pour the remaining cream into the pan and heat, but do not boil.

5. Place the cheese in the cream, simmering over low heat, stirring well until it dissolves.

6. Drain the water from the semi-finished pasta, pour the cream and cheese into it, and mix thoroughly.

Place the finished pasta on plates and sprinkle the desired amount of bacon on top.

The dish is ready, you can try it. If desired, you can decorate with greenery.

How to make Carbonara sauce with cream

We will start preparing the pasta by placing a pan of water on the stove. Let's boil the water. Place the spaghetti in salted (optional) water. Cook according to the instructions on the package. Spaghetti should not be too hard, but not soft either. Something in between. They will arrive after cooking.

While the pasta is cooking, prepare the sauce. Break 2 eggs and put the whites in the refrigerator. You can make meringues out of them later, we won’t need them. Grate Parmesan on a fine grater. Beat the yolks with half the grated cheese. Add heavy cream. Salt and pepper. Beat with a fork. Carbonara pasta sauce is ready!

Cut the bacon into thin cubes or strips. Drain the water from the spaghetti. Place bacon in pan with pasta. Then immediately pour in the sauce and stir quickly. It is important to mix the spaghetti with bacon and sauce as quickly as possible after draining. The hot spaghetti will soften the egg sauce a little.

Place the pasta on a plate. Sprinkle dried herbs and various spicy seasonings on top to suit your taste. Sprinkle each serving with additional grated Parmesan. Bon appetit!

Carbonara with bacon and cream - a classic recipe

This recipe will be an ideal option for those who are thinking about what to cook for dinner so that it turns out satisfying and tasty, but without spending a lot of time. Carbonara pasta is the best solution. The classic dish is prepared with egg yolks and cream, and believe me, you will definitely be satisfied.

  • bacon – 100 g;
  • fettuccine – 200 g;
  • egg yolks – 3 pcs.;
  • cream 33% or 20% – 150 ml;
  • parmesan – 50 g for sauce and 10 g for decoration;
  • garlic – 1 clove;
  • salt - to taste;
  • ground black pepper - to taste;
  • fresh parsley - for decoration.

Preparation steps:

1. Cut the bacon into small pieces and grate the cheese on a fine grater.

2. Pour the cream into a container, add cheese and egg yolks there.

3. Add salt, pepper and mix thoroughly with a whisk until smooth.

4. Boil the pasta in boiling salted water until half cooked, stirring occasionally.

5. Place the peeled and crushed garlic clove in a frying pan, add the bacon there and fry over medium heat until lightly golden brown.

6. Remove the garlic, add the pasta to the bacon, pour in the sauce, mix thoroughly and cook for another 2-3 minutes.

Serve the dish hot. Before serving, sprinkle with herbs and cheese.

Spaghetti Bolognese with bacon and cheese

This recipe will add variety to your everyday menu and is a delicious way to make Bolognese sauce.

Ingredients:

  • spaghetti – 300 gr.,
  • bacon – 300 gr.,
  • beef – 300 gr.,
  • olive oil – 2 tbsp. l.,
  • butter – 50 gr.,
  • carrots – 1 pc.,
  • onion-lettuce – 100 gr.,
  • tomato paste – 2 tbsp. l.,
  • garlic – 3 cloves,
  • red wine – 100 ml.,
  • salt and spices to taste
  • Parmesan cheese – 100 gr.

Cooking process:

Cook the pasta until tender in 1.5 liters of clean water with the addition of salt and olive oil. Place in a colander and leave to drain.

Grind the meat using a meat grinder or blender. Grate the carrots on a medium grater, chop the onion and garlic finely. Cut the bacon into thin slices, grate the cheese on a coarse grater. Melt the butter in a frying pan, add the bacon slices and fry over medium heat until the slices are browned and the fat has rendered. Add onion and garlic, fry for 1-2 minutes. Add carrots to the pan and fry the vegetables until golden. Place the minced meat in a frying pan and simmer, occasionally breaking up any lumps with a fork. Add tomato paste and red wine. Increase the heat and open the lid to allow excess moisture to evaporate. Add salt and spices, grated Parmesan, stir, cover and simmer for another 10 minutes. Serve the spaghetti on a flat plate, topped with Bolognese sauce. Bon appetit!

How to make pasta carbonara with bacon, cream and mushrooms

This dish differs from others in the presence of mushrooms. Thanks to them, the taste becomes even more delicate and the aroma richer. It turns out especially tasty with porcini mushrooms. This is how I cook the forest after our hikes, and the rest of the year I use the usual champignons. By the way, you can also use ham instead of bacon, but there is no fat in it, so the taste will be slightly different.

  • bacon – 100 g;
  • mushrooms – 200 g;
  • Parmesan cheese – 150 g;
  • cream – 150 ml;
  • garlic – 2 cloves;
  • onions – 2 pcs.;

  • butter – 1 tsp;
  • vegetable oil – 3 tbsp. l.;
  • salt - to taste;
  • ground black pepper - to taste.

Preparation steps:

1. Cut the bacon into medium-sized pieces. Cut the peeled and washed onions into small cubes. Grate Parmesan on a medium grater.

2. Wash the mushrooms thoroughly, dry them and cut them into thin slices (you can pre-boil them in salted water if you use wild mushrooms).

3. Add butter, finely chopped garlic clove and bacon to the frying pan. Fry for 2-3 minutes until the fat melts.

4. Place the onion in a frying pan with vegetable oil and fry until light golden. Transfer the finished onion to a saucepan.

5. Add mushrooms to a frying pan with heated vegetable oil and fry until golden brown, stirring occasionally.

6. Boil the pasta until half cooked in boiling salted water.

7. Place the saucepan with onions on the stove, pour in 100 ml of cream, stir.

8. Add the prepared mushrooms there, mix and continue cooking over low heat.

9. Add salt and ground black pepper and simmer for 5 minutes at low boil.

10. Place the egg yolks in a bowl, add salt and ground black pepper, beat with a fork.

11. Pour in 50 ml of cream, mix, add Parmesan and mix again.

12. Place boiled pasta, egg-cream sauce, mushrooms, bacon in a frying pan and stir quickly. The fire should be slow.

Immediately turn off the heat and place the pasta on plates, sprinkling with grated Parmesan.

Classic carbonara with bacon, egg and cream step by step

This is a dish that tastes perfect, where all the ingredients are harmoniously combined with each other. The highlight is the light garlic aroma. By the way, when serving, some cooks add raw yolk to the top and sprinkle with Parmesan cheese. Others put in a poached egg, but it's a matter of taste!

  • cream (35%) – 100 ml;
  • grated parmesan (grana padano, jugas, etc.) – 50 g;

  • freshly ground pepper - to taste.

Preparation steps:

1. Boil spaghetti in a saucepan of salted and boiling water until al dente.

2. Place cream, egg yolks, grated Parmesan into a bowl and mix thoroughly with a whisk. Add salt and pepper if desired and mix again.

3. Cut the bacon into small strips, place it in a frying pan and fry for a couple of minutes until the fat is rendered.

4. Add chopped peeled garlic and chopped parsley to the same frying pan. Mix everything and turn off the heat.

5. Place the spaghetti in a colander and add the pasta to the bacon and parsley, mix thoroughly.

6. Pour the sauce there and mix again.

Immediately place the pasta on plates and generously sprinkle with grated cheese.

How to make Carbonara with cream and bacon

1. Divide the bacon into strips and cut the whole thing into small strips.

2. I put the frying pan on the fire, without adding sunflower oil, I fry the bacon in a hot frying pan.

3. Pour water into the pan, add salt and bring to a boil, then add the pasta and cook until half cooked, as the Italians say “al dente”.

4. Wash the eggs and separate the yolks from the whites, using only the yolks.

5. Pour cream into the yolks and mix thoroughly until smooth, add grated Parmesan (50-70 grams).

6. I drain the pasta in a colander, and then return it to the pan, add the previously fried bacon, stir and heat over low heat.

7. Remove the pan from the heat and pour in the egg-cream mixture, stirring everything vigorously.

8. Sprinkle the finished carbonara pasta with a little grated Parmesan and fresh herbs, and be sure to serve the dish hot.
