For vegetable lovers, I suggest taking note of a surprisingly simple recipe for cabbage pancakes in the oven with cheese. This is a great breakfast or healthy snack option for the whole family.

Cabbage pancakes - food preparation and cooking features

  • It is a mistake to believe that cabbage pancakes belong only to vegetarian cuisine. They can be a great addition to any meat dish. Recipes can also be supplemented with minced meat, both meat and fish.
  • But at the same time, even with meat filling, cabbage pancakes are low in calories. So 100 g of the finished product contains 80 kcal, which can be reduced during steaming.
  • Also, cabbage cutlets can complement the children's menu. It's no secret that children refuse to eat this healthy vegetable. But by lightly frying the pancakes in butter and adding aromatic sauce to them, the kids will not remain indifferent to the dish.
  • The technology for making delicious cabbage pancakes is very simple. Minced meat is prepared from fresh vegetables, and a variety of fillings are added to it according to the recipe. The mass is thoroughly mixed and cutlets are formed from it. There are several ways to prepare them: using a frying pan, a double boiler or an oven.
  • To get a delicious crust for cabbage pancakes, use breading. It can be crackers or regular flour. If you make the minced meat more liquid, then your pancakes will turn out thin.
  • Even such a simple dish can be given a spicy taste. Add chopped apple and hard cheese to the minced cabbage. You can also sprinkle sesame seeds on top when baking.
  • Some housewives do not use raw cabbage for minced meat. They take it into sheets, blanch it in boiling water with salt, and only then grind it in a meat grinder. Or cut into several large pieces and boil until half cooked. This method of pre-processing the vegetable makes the dish softer.

Cabbage pancakes - a classic recipe

To master the technology of preparing this dish, you should first study the classic recipe for white cabbage pancakes. Thanks to it, you will learn how to cook juicy and tasty pancakes, which can become a light snack or a side dish for lunch.

List of ingredients:

  • raw cabbage – ½ head of medium size;
  • onions – 3 pcs.;
  • chicken eggs – 2 pcs.;
  • wheat flour – 1 tbsp.;
  • spices with salt - to taste;
  • vegetable oil - for frying.

How to make cabbage pancakes from raw cabbage:

  1. Rinse the cabbage in warm water, dry and cut into 4 pieces. Grind the vegetable in any way. Most often, a grater is used for this, but you can also process the cabbage in a blender. Only in this case, set the speed to low so that the pieces are not too small.
  2. Transfer the cabbage to a large container. If juice appears, then drain it. Boil water and pour it into the cabbage. In this case, the mixture should be completely covered with boiling water. Leave the cabbage alone for 1 hour. Then use a colander to drain the water. Leave the mixture in it for 10-15 minutes. This will allow excess liquid to drain.
  3. Onions are used in the recipe in two states. Peel it, cut into small cubes. Divide the entire mass into 2 equal parts. Fry one half until golden brown, after cooling, combine it with the raw vegetable.
  4. Beat the eggs into the chopped cabbage, add the onion mixture, salt and add spices. Mix thoroughly. Then add the sifted flour. Stir the minced meat until smooth, let it stand for 20 minutes.
  5. Heat a frying pan, pour any vegetable oil into it. If your cabbage mixture is liquid, then spoon it into the pan. With enough flour, the minced meat becomes thick, which makes it possible to form small cutlets. Cook the pancakes on both sides until golden brown.
  6. For those housewives who do not like a rough crust on pancakes, fry them lightly on one side, then pour in a little hot water and cover the pan with a lid. Simmer the dish for 10-15 minutes. Cabbage pancakes according to this recipe are served in any form: hot or cold. If you use them as a separate dish, then add sour cream sauce on top.

  4. Transfer the cabbage to a bowl and wait 10 - 15 minutes. During this time, the vegetable will release juice, which must be drained. Then squeeze the cabbage with your hands and transfer it to the dough. Mix the mixture thoroughly with a spoon and let it rise again for 20 minutes.

  2. Finely chop the cabbage leaves and blanch in boiling water for 5 minutes using a metal sieve. This will make it easier for you to get the vegetable later. Let the excess liquid drain and cool the ingredient.
  3. Be sure to sift the flour and mix with soda. It must be mixed very thoroughly so that the grains are evenly distributed throughout the mixture. Add oatmeal to it. Use them finely ground, so they will quickly swell in the dough.
  4. Combine boiled cabbage with zucchini without juice, beat in an egg, add dry ingredients and finely chopped herbs, and salt the dough. Stir the mixture and put it in the refrigerator to cool for half an hour.
  5. Since the dough will be liquid, it will be convenient to pour it into the pan with a spoon. Fry the pancakes until done.

Cabbage pancakes - cooking secrets

Experienced housewives have long learned to prepare delicious cabbage pancakes because they know little tricks. You can also apply them to any recipe.

  • If you use flour for minced meat, then it must be sifted several times. In this way, you will enrich it with oxygen, as a result of which the pancakes will turn out fluffy.
  • You can also use baking powder, which is pre-mixed with flour and then added to the cabbage mass. But the best effect is achieved with natural ingredients such as baking soda. Use it strictly according to the recipe, but mix the minced meat thoroughly.
  • To emphasize the sweetness of the dish, add vanillin. You can also add vanilla sugar. For cutlets with meat filling, on the contrary, use aromatic spices and herbs.
  • After you have kneaded the minced vegetables, let it sit for a while at room temperature for half an hour. During this time, the ingredients will be saturated with each other, and the soda will begin to act in combination with the flour.
  • The thickness of the dough also affects the fluffiness of the pancakes. A consistency that is too thick will prevent the mixture from rising during cooking. Therefore, the mass should resemble homemade sour cream.
  • Make sure that the cake has the same thickness. Otherwise, its edges will burn while the middle remains raw.
  • Some housewives have a problem when preparing cabbage pancakes - they fall apart. To prevent this from happening, grind the vegetable as finely as possible. If necessary, pass the cabbage through a meat grinder 2 times.
  • When baking cabbage cutlets in the oven, use an egg to form a crust. 10 minutes before the end of cooking, remove the pancakes, brush them with yolk and place them back in the oven.
  • After frying, be sure to remove excess fat from the surface of the cutlets. Use paper towels or thick napkins for this.

It is very easy to prepare an unusual dish from simple but healthy cabbage. To make the pancakes tasty and fluffy, follow not only the cooking technology and recipe, but also the tricks described above. Bon appetit!
