For stuffed and jellied burbot in Latvian style you will need the following ingredients:

  • 0.5 kg of fish;
  • 2 slices of white loaf;
  • 70 ml milk (preferably cream);
  • 3-4 tbsp. l. butter;
  • 1 onion;
  • 1 egg;
  • a bunch of parsley;
  • 2 carrots;
  • parsley root;
  • spices and seasonings to taste;
  • 10 g gelatin.

First, the skin is removed from the carcass with a stocking, the fillet, along with the bread soaked in milk and onions, is twisted in a meat grinder. Then add a raw egg, chopped parsley and spices to the minced meat, mix thoroughly and stuff the skin. To prevent it from bursting, tie it with thick or culinary thread.

After this, boil in a small amount of water along with parsley root and carrots. The finished stuffed burbot is placed on a dish and the threads are removed. The swollen gelatin is added to the fish broth and poured over the carcass and cooled. Before serving, cut into pieces and garnish with green peas.

With tomatoes and mayonnaise

For 800 grams of burbot you will need:

  • 3 tomatoes;
  • 2 cloves of garlic;
  • 1 onion;
  • 2-3 tbsp. l. mayonnaise;
  • 2 tbsp. l. chopped parsley or dill;
  • vegetable oil, salt, pepper.

Spread the carcass lengthwise along the belly, remove all the bones, add salt and pepper. Fry the garlic and onion in oil, add the tomato cubes, and simmer the herbs until the liquid evaporates.   • Art. spoon of vegetable oil;
  • Art. spoon of ground crackers;
  • salt, seasonings.
