Delicious “Rogaliki” cookies with jam can be prepared in just one hour. The filling for such bagels can be boiled condensed milk and even fresh fruits or berries. In fact, everything is very simple.

How to cook “Cookies “Rogaliki” with jam”

1. The shortbread dough makes excellent bagels that go perfectly with jam. Shortbread dough is quite easy to prepare. So let's get started...

2. Grind the butter in a deep container, add sour cream and soda. Let's start mixing everything.

3. Add a pinch of salt and flour. Knead elastic dough.

4. Divide the finished dough into parts (usually 4-5 parts). We wrap each part in cling film and put it in the refrigerator for 30 minutes (then we will take it out one by one).

5. Roll out a round layer and divide it into equal parts (6-8). Coat with jam and wrap each bagel.

6. Roll the bagels from the wide edge to the narrow.

7. Place the finished bagels on a prepared baking sheet, then place them in an oven preheated to 180 degrees for 30 minutes.

Cottage cheese bagels without yeast are more tender than tender

The cottage cheese bagels turn out rosy, tasty and very tender. You can use any filling to suit your taste.

Ingredients:

  • cottage cheese 250 gr
  • sugar 80 gr
  • egg 1 piece
  • flour 300 gr
  • vanilla sugar 10 g
  • baking powder for dough 10 g
  • vegetable oil 100 ml

For filling:

  • canned cherries
  • pumpkin jam

We start by kneading the dough. Place cottage cheese in the bowl of a chopper or blender, add sugar, vanilla sugar and break the egg. Grind everything into a homogeneous mass. If you don’t have a grinder, you can rub the cottage cheese through a sieve.

Place the resulting mass in a bowl, add sunflower oil and mix. Add about half the flour and all the baking powder to this. Mix well and add the rest of the flour and knead until a soft, plastic and homogeneous dough is obtained. You may need less or more flour, depending on the type and type of flour you have.

Roll the resulting dough into a ball, place it in a bowl and cover with film, let it rest at room temperature for 30-40 minutes.

After a while, divide the dough into approximately 4 equal parts. Take one part and roll it out into a circle. The rolling thickness should be 2-3 mm.

Cut the resulting circle into eight parts. Place filling on each piece.

For bagels, you can use any thick filling.

We roll each of the triangles into a bagel. Transfer to a baking sheet lined with parchment paper. Lubricate the top with yolk diluted in half with water or milk.

Place the baking sheet in an oven preheated to 180 C and bake for about 20 minutes.

These bagels are very easy to prepare and turn out tender and tasty.

Alternative option

There is another rather interesting recipe for margarine. Its secret is that the dough turns out fluffy even without adding soda. In addition, there is no sugar in the recipe. This makes the bagel a little bland, but that gap can easily be filled with a sweet filling.

Products needed: 600 grams of flour, a glass of sour cream, a pack of creamy margarine, a pinch of salt, 40 grams of grated lemon zest, 2 eggs, a bag of vanilla sugar and 100 grams of powder.

Preparation is carried out in the usual way:

  1. Grind the heated margarine in a bowl with sour cream.
  2. Add eggs, salt and zest.
  3. With constant stirring, add flour until a plastic dough forms.
  4. Divide the mass into parts, roll each of them into a round layer.
  5. Cut the resulting cakes into triangles with a knife.
  6. Place a spoonful of jam on each of them, and then carefully roll into a tube.
  7. Place the blanks on a tray lined with oiled parchment and place in the oven for 30 minutes at 150 degrees.

Before serving, sprinkle hot bagels with powder. But you don’t have to do this.

I suggest you start making bagels today. We will cook them exclusively using yeast dough. And this means whether it is puff pastry or rich, yeast will be present in the composition. This is the only way we can achieve splendor for our baked goods.

Before we start cooking, I would like to tell you a little about this delicacy. Let's make things a little clearer, so to speak. Bagels have a slightly curved shape, which is why they are rarely made from puff pastry. But despite this, we will consider one of these recipes today.

The history of this delicacy is very diverse. Here is one of them: one baker, celebrating the liberation of Buda from the Ottoman Empire, baked magnificent products in the shape of a crescent, like on the Ottoman flag.

This is where the curved form of baking came from, which is still very popular today.

They won’t take you much time to prepare, but the result will certainly please you. By the way, any baked goods that use yeast, soda or baking powder turn out very fluffy. So now you know how to achieve the desired effect.

Bagels made from yeast dough on kefir with jam

Well, guys, let's start cooking. Let's look at the first recipe. We will prepare bagels with kefir. Please note that this cooking option is not quick. And it will take some time for the dough to mature. Therefore, you should take care of the kneading in advance, like any yeast mass.

We will need:

  • Kefir - 250-280 gr.
  • Chicken egg - 1 pc.
  • Granulated sugar - 80 gr.
  • Salt - 0.5 teaspoon
  • Butter - 50 gr.
  • Dry yeast - 1 teaspoon
  • Flour - 500 gr.
  • Jam or marmalade - for filling
  • Poppy or sesame seeds for sprinkling

Preparation:

1. Let's start preparing the dough. Take a deep bowl; it will be much more convenient to knead the dough in it. Pour in warm kefir, add granulated sugar and yeast. Mix the resulting mass thoroughly.

2. Then add the egg and melted butter (cooled) to the kefir mixture. Mix the entire mixture thoroughly until a homogeneous mass is obtained.

Butter can be safely replaced with margarine. But I advise you not to skimp on this dairy product and take a better quality product.

3. All that remains is to add flour and knead the dough. But before this, the flour should be sifted, preferably more than once. This way the product will be saturated with oxygen, and the baked goods will turn out even more magnificent. Add salt here and mix everything.

Add flour in small portions. Please note that if the composition contains one weight, you may need a little more or less. Here everything will depend on the quality of the bulk ingredient, its humidity and other factors. That's why I say, don't rush.

You can continue kneading on the table, dusting it with a small portion of flour in advance. The result should be a homogeneous dough without lumps. Moderately dense and slightly stick to your hands.

Now place the dough in a bowl, you can add a little vegetable oil. Cover with a cloth towel or cling film and place in a warm place to ripen. This process may take you from 1.5-2 hours.

4. After the stated time, remove the dough from the bowl. Divide it into equal pieces.

Please note that the size of this piece will determine the size of the finished baked goods. That is why try to do everything evenly. So that the bagels are ready all together.

Now roll out the cake into a layer. Please note that the shape of the cake is oval, but not round. Place a teaspoon of jam on the top edge of the dough. Cover the top with the same edge and press well. Make cuts on the rest of the dough, not going all the way through. Then roll it up and shape it into a bagel.

Place the prepared buns on a baking sheet. Cover it with parchment paper in advance. Let the products “rest” for 25 minutes in a warm place. Then brush with yolk and sprinkle with poppy seeds or sesame seeds.

We will bake the bagels in the oven at 190 degrees for 25 minutes.

We take out the finished baked goods, check for doneness using a wooden skewer and serve. Every family member will be happy with this delicacy.

Yeast bagels with margarine in the oven

Here is the ideal recipe: if you don’t have butter at home, you can always replace it with margarine. This dairy ingredient can be found in any housewife. For example, my mother always buys several pieces of it and stores it in the freezer, which is very convenient, by the way.

One more nuance, in this case we will use cottage cheese as a filling. You can replace it with jam or thick preserves. In any case, it will be very tasty.

We will need:

  • Flour - 3.5 cups
  • Milk - 1 glass
  • Margarine - 100 gr.
  • Pressed yeast - 25 gr.
  • Granulated sugar - 3 tablespoons
  • Chicken egg - 1 pc. (for lubrication)
  • Cottage cheese or jam

Preparation:

1. Similar to the previous recipe, prepare a deep bowl for kneading the dough. Immediately add granulated sugar and yeast. Let's grind these two ingredients together.

Next, add softened margarine and mix thoroughly again. The result should be a homogeneous, viscous mass.

Now pour in warm milk in small portions and stir our mixture.

2. Well, guys, all that’s left to do is add flour. But first we sift it and mix it with salt. We will add to the bowl in small portions. Then knead a homogeneous dough. You can immediately cover it with a towel and put it in a warm place to ripen for 1-2 hours.

The fewer drafts, the dough will rise many times faster. In summer you can put it under your pillow, but in winter you can put it next to the radiator.

3. Divide the finished and matured dough into two or three equal parts. Then we roll one of the parts into a layer. The thickness of such a cake should be no more than 5 mm. Then we divide it into triangles. If you have a curly roller, you can walk with it. Then the edges will turn out to be openwork, and the baked goods will look more interesting.

If you use country cottage cheese, then add a little granulated sugar and an egg to it. The city product is more moist, in which case there will be enough sugar.

Then place the filling on the wide edge of the dough and roll it into a roll. Fold the edges slightly, giving the product a crescent shape.

Place the prepared pieces on a baking sheet, after greasing it with vegetable oil. Lubricate the surface of each product with yolk and you can safely proceed to the next process.

Preheat the oven to 180-190 degrees, we will bake the products for 25-30 minutes.

Then remove the finished crumpets from the oven. Place on a platter and serve. Just be careful, the filling is still very hot.

Quick bagels made from yeast puff pastry

Let us consider with you a slightly different recipe, not similar to the previous ones. In this case, we will prepare bagels from puff pastry. By the way, some people prefer to call this pastry a croissant. The option is very simple, because we will create from ready-made dough. Which will make our work much easier. Just keep in mind that in order for the croissants to turn out fluffy, you need to choose yeast dough.

Finger-licking rolls

Grocery list:

  • Flour - 260 g.
  • Butter - 180 g.
  • Sugar - 1 tbsp. l.
  • Dry yeast - 0.5 sachets.
  • Water - 0.5 cups.
  • Marmalade - to taste.
  • Salt - 1 pinch.

Preparation:

The butter must be melted in a water bath. Add sugar, salt, cold water. Mix everything thoroughly until the sugar dissolves.

In a separate bowl, mix sifted flour and baker's dry yeast.

Pour the liquid component into the dry mixture and knead into a soft dough.

Form a ball, wrap in a towel (put in a bag), and leave the dough to rest for half an hour.

At this time, cut the marmalade for the filling.

Divide the rested dough into several parts, form into balls with a diameter of about 15 cm.

On a table sprinkled with flour, roll out a circle, which is then cut into 8 sectors. Place marmalade on the wide part of the piece and roll it up.

Dip each cookie in sugar and place on a baking sheet. Bake the resulting batch for half an hour at 200 C.

Recipe 2: Bagels with sour cream and nuts

These sour cream bagels are prepared from more ingredients than in the previous recipe. Another egg and a little soda are added to the dough. Walnuts are used as filling. The result will definitely delight your guests and loved ones!

Required ingredients:

  • A pack of butter or margarine;
  • 200 gram jar of sour cream;
  • Egg;
  • 0.5 tsp. soda;
  • Three glasses of flour;
  • Walnut kernels - about a glass;
  • Two spoons of sugar;
  • Powdered sugar.

Cooking method:

Melt butter and margarine in a water bath, pour into a bowl for dough. Break one egg there, add sour cream. Beat all ingredients with a mixer. Add soda and add flour a little at a time. Knead the dough. It should be moderately soft, but so that it does not stick and is easy to form. If the dough is too soft, you can add a little more flour. Crush the walnut kernels, but not into crumbs. Mix nuts with sugar. Divide the dough into 4 parts, roll each into a circle and cut into equal segments. Place the nut-sugar filling on each triangle. Wrap the bagels, sealing the ends tightly. Place the sour cream-covered bagels on a greased baking sheet and set to bake. Baking time: 17-20 minutes. Roll the finished sour cream bagels in powdered sugar.

Homemade shortbread bagel recipe

Shortcrust pastry bagels are so easy to prepare that it is simply impossible not to make them. And they turn out tender, sandy and fragile. This delicacy is eaten like sunflower seeds, instantly and gone.

Ingredients:

  • sour cream 200 gr
  • sugar 150 gr
  • vanillin
  • butter 200 gr
  • teaspoon baking soda + vinegar
  • flour 400 - 500 gr
  • egg yolks 3 pcs
  • salt 0.5 tsp

For filling:

  • peach jam
  • toffee
  • powdered sugar for decoration

We start cooking by sifting the flour into a deep bowl, where it will be convenient to knead the dough.

Grind the butter into flour using a coarse grater. And literally grind it a little while stirring. Then add a good pinch of salt, vanillin, sugar, yolks, sour cream. We extinguish the soda with vinegar and pour it into the flour. Now knead the dough until smooth.

The dough should be slightly sticky, but under no circumstances should we beat it with flour. Carefully transfer to a bag and place to rest in the refrigerator for 30 minutes. It will rest there, become smoother, and only then, during the rolling process, add flour.

Then sift 50 grams of flour onto the table and knead the dough so that it does not stick to your hands. Divide all the dough into 4 parts and start rolling it into a circle. The thickness of the rolled layer should be about 2 mm.

Afterwards we cut the layer into triangles. The number of triangles is up to you; if you want small bagels, cut more pieces and vice versa. We cut it into 12 triangles.

Place the filling on the wide edge and roll it into a roll. Again, I repeat, you can use absolutely any filling to your taste and color.

Place the finished cookies on a baking sheet lined with paper and bake at 200 C for about 10 - 15 minutes.
