Classic recipe

According to this recipe, the delicacy needs to be baked, but this process will not take much time. Ingredients: 110 g fatty butter, 220 g shortbread cookies, vanilla pod, 1 tbsp. very heavy cream, 3 tablespoons eggs, 140 g of powdered sugar, half a kilo of cream cheese.

  1. The base for cheesecake is always prepared according to the same principle. First, the cookies are turned into fine crumbs, after which they are kneaded with melted fat butter. After mixing, a loose mass is obtained, from which the base for the dessert with small sides is formed. Their height should be about 3-4 cm.
  2. To make the cream, mix the cheese and powder very carefully with a whisk. Slowly pour in the heavy cream, then add the eggs one at a time and add vanilla. Kneading continues.
  3. The resulting filling is poured onto the base. The delicacy will be baked for 80-85 minutes at medium temperature.

All that remains is to cool.

With cottage cheese

Delicate cream cheese goes well with soft cottage cheese, especially if it is a homemade product. Both milk ingredients are taken in the amount of 250 g. Other products: half a glass of powdered sugar, 2 tablespoons eggs, 90 ml of heavy cream, 1 tbsp. flour, a pinch of vanillin and baking powder, 1 tbsp. high-grade flour, 80 g butter.

  1. For the dough, mix all the dry ingredients (only 1.5 tablespoons of powder), an egg and softened butter. It should rest in the cold for about half an hour.
  2. Next, a base with sides is formed from the dough.
  3. For the filling, combine the remaining egg, cheese, cottage cheese, and the rest of the powder. After whipping with a mixer, cream is added to the mass. The consistency of the mixture should be liquid.
  4. The filling is poured into the mold with the base.
  5. Bake for 40 minutes at medium temperature.

Even when preparing a dessert without a water bath using this recipe, it turns out successful and does not crack.

Chocolate cheesecake with mascarpone cheese

If the classic version of the dessert has already been mastered, you can try interesting variations. For example, chocolate. Ingredients: butter and biscuits for the base, 260 g of mascarpone, 160 ml of very heavy cream, 3-4 large spoons of powdered sugar, 2 large spoons of cognac and the same amount of cocoa, a bar of dark chocolate.

  1. The sand base is prepared according to the standard procedure and laid out in a suitable refractory dish. It is baked for 12 minutes at high temperature.
  2. For the filling, combine melted chocolate with a small amount of cream.
  3. In a separate bowl, beat the cheese, powder and remaining cream.
  4. Liquid chocolate and cognac are added to the resulting mixture. All ingredients are mixed well.
  5. The filling is poured onto the base and leveled.
  6. The baked goods will take 35-49 minutes to prepare in the oven.

Cooking without baking

In order not to worry that the cheese cake may burn or not be completely baked, you can do without an oven altogether. There is an excellent recipe for the discussed dessert without baking. Ingredients: products for the base of cookies and butter, 620 g of cheese, half a liter of heavy cream, 170 g of powdered sugar, 90 ml of milk and water, 25 g of instant gelatin, a pinch of vanillin. How to properly prepare a no-bake cheesecake with mascarpone is described below.

  1. The base is prepared from cookie crumbs and melted butter. It is compacted into a mold and sent to the cold.
  2. Gelatin is poured with cool water.
  3. The cheese is combined with powder and beaten well. During the process, cream is gradually poured into the mass. Both dairy products should not be cold.
  4. The boiled milk cools slightly. Gelatin is poured into it.
  5. Continuing to whip the cream, add dissolved gelatin to it.
  6. The resulting soufflé is poured onto the base. The dessert goes into the refrigerator to harden.

If desired, you can decorate the treat with any jelly.

Cheese layer with mascarpone

  • Mascarpone cheese 150 gr
  • Orange and lemon zest
  • Cream 33-35% 45 g
  • Milk 45 gr
  • Sugar 80 gr
  • Leaf gelatin 12 g
  • Cream 33-35% 270 gr

For the cheese layer with mascarpone you will need: the cheese itself, milk and cream (1), sugar, zest, gelatin and cream again (2). We will whip the cream (2), it will add lightness and volume to the cheese layer. I used orange and lemon zest in this recipe. You can choose any citrus, it will be delicious.

Soak the gelatin in cold water.

In a saucepan, combine milk, cream (1), sugar and zest. Bring the mixture to a boil. Turn off the stove and let the mixture sit for 15 minutes.

Heat the mixture again to 50 C (higher is not necessary) and add gelatin.

Pour the gelatin mixture into a cold bowl and let cool to room temperature. Meanwhile, whip the cream until it becomes melted ice cream. The cream will increase slightly in volume and become airy, but will not hold its shape.

Add mascarpone cheese to the cooled milk. You won't be able to mix it by hand, so use a blender to puree the mixture.

Make sure the cheese mixture has cooled to room temperature. Add whipped cream and stir in cream cheese mixture.

Pour the cream into the mold and put it in the refrigerator.

Banana cheesecake with mascarpone

Of all the fruits, ripe bananas go best with the dessert under discussion. You will need 4 of them. Other ingredients: 1 tbsp. cream cheese, half a glass of granulated sugar, milk and filtered water, 2 small. spoons of agar-agar, cookies and butter for the base.

  1. The base for the treat is traditionally prepared from cookie crumbs and melted butter. It is compacted into shape.
  2. The fruits are turned into puree, after which they are combined with cheese and whipped.
  3. Sand, water and agar-agar are combined in a saucepan. While stirring, the mixture is brought to a boil. Then it is immediately poured into the cheese-banana mass. Again, the components are processed with a mixer.
  4. The finished fruit and cheese mass is poured onto the base and sent to the refrigerator until completely hardened.

Cheesecake with mascarpone - classic recipe

  • cookies 200 gr;
  • butter 100 g;
  • eggs 3;
  • cream 200 ml;
  • mascarpone cheese or its equivalent 400 gr;
  • ground sugar 140 g;
  • vanilla or vanillin.

The products need to be placed on the table in the room for an hour or two so that they become the same temperature. Then you can start cooking.

  1. Turn the cookies into powdery crumbs and rub with soft butter. Knead thoroughly by hand until you get a lump-like mixture. Place in the mold, make sides 2 centimeters in size. Place in the refrigerator.
  2. Meanwhile, combine mascarpone and powder, mix until smooth and gradually add cream, continue whisking. Then beat in the egg and add the vanilla, beating thoroughly one last time.
  3. Now you can remove the “cake” from the refrigerator and fill it with the creamy mixture.
  4. Place the mold on a baking sheet with water. Bake for 1 hour 20 minutes at 160 degrees.

Cheesecake with mascarpone is cooled and left for a couple of hours before eating.

Important! Use a one-piece mold with a high side. If you have a sliding model, before putting it in water, form a “protection” from liquid from baking foil of 2-4 layers.

With strawberries and white chocolate

This is another option for making a cheese cake without baking. Ingredients: half a kilo of quality mascarpone, 160 g of white chocolate, 1 tbsp. powdered sugar, a little fresh mint, 320 g fresh strawberries, cookies and butter for the base.

  1. It is most convenient to compact the base of cookie crumbs and melted butter using a regular cut glass. This will make it as dense as possible.
  2. The chocolate is melted in the microwave and then mixed with powdered sugar and mascarpone. If you take ordinary sand, then its grains will be found in the filling.
  3. The chocolate and cheese mixture is laid out on the base. The container with all the ingredients is covered with film and placed in the cold for 3-4 hours.
  4. Thin slices of strawberries are laid out on top of the ready-made delicacy.

The dessert is decorated with mint leaves.

With cherries

You can even take frozen cherries. Enough 300 g of berries. Other ingredients: cookies and butter for the base, 430 g of cheese, 1 tbsp. granulated sugar and the same amount of heavy cream, 15 g of gelatin, 60 ml of cherry juice.

  1. A base of cookies and melted butter is compacted into a mold.
  2. The juice is mixed with the same amount of water and gelatin. The mixture is left for half an hour, after which it is heated and stirred until the lumps dissolve.
  3. Sand, cream and slightly cooled gelatin mass are added to the cheese.
  4. The seeds are removed from the berries. Cherries are mixed with cream.
  5. Creamy berry filling is placed on the base.

There is no need to bake the treat. You just need to put it in the refrigerator until the gelatin hardens.

Preparation

1. Make a base of cookies and butter and line the bottom of the mold.

2. Break the chocolate into pieces, put it in a bowl and melt it in a water bath, add 2 tablespoons of cream, stir.

3. Add mascarpone into the chocolate mixture in small portions and continue stirring.

4. Add cream and powder a little at a time. Adjust the amount of sugar to your taste, since the chocolate bar is also quite sweet.

5. Add cognac to the filling, which can be replaced with liqueur or rum if desired. Or you can exclude it altogether.

6. Place the cheese filling in a mold, cover with cling film and let the chocolate cheesecake cool for at least 5 hours.

7. Remove the dessert from the mold and decorate it at your discretion. You can pour melted chocolate, sprinkle with grated tiles or cocoa powder.
