It is also important to note that the dish, the preparation algorithm of which will be described below, is the most traditional way of preparing tiramisu cake.

Preparing the cake

This recipe will use a slightly unusual cream, which is used to replace tiramisu without mascarpone in the recipe. It is worth noting that it also gives the dessert an extraordinary taste. To prepare the correct dish according to this recipe, you must follow the following procedure:

  • The eggs need to be broken. In this case, the yolks and whites need to be divided into different containers.
  • Pour sugar into the bowl with the yolks. Mix both ingredients and grind using a hand whisk.
  • After this, add a pinch of salt into the container with the whites. Start whisking the contents and continue until a white fluffy mass appears.
  • Next, you need to pour homemade cream into the resulting mixture. Start beating all the ingredients again until the mixture acquires a dense texture.
  • As soon as the desired consistency is achieved, you need to start adding the mixture made from yolks in parts. All contents are carefully whisked.
  • After this, you need to pour the coffee into a separate bowl and fill it with warm boiled water. Mix the contents until a homogeneous mass is obtained.
  • Now you need to dip the cookies into the mixture one at a time. Next, it should be laid out in a layer in a mold with high sides.

  • As soon as the first layer is laid out, it needs to be filled with the previously prepared mixture of whites and yolks. Smooth everything out using a spoon. Then repeat the procedure with the cookies, also dipping them in coffee and placing them in the mold. The cream is poured on top and smoothed.
  • The last layer is watered with the entire remaining mass.
  • Cocoa powder is poured on top of it. Next, the tiramisu practically prepared according to this recipe without mascarpone is sent to the refrigerator. It must be allowed to harden for three hours.

Homemade tiramisu recipe with mascarpone and cream

Tiramisu with butter cream is no less tasty. Not everyone has the opportunity to buy proven eggs. As you know, in their raw form they can be unsafe. Therefore, they are often replaced with cream.

Ingredients:

  • Savoyardi cookies – 35 pieces
  • Water - 300 milliliters
  • Mascarpone – 500 grams
  • Liqueur/cognac - optional - 50 grams
  • Powdered sugar - 120 grams
  • 2 tablespoons instant coffee
  • Cream 33% - 250 milliliters
  • Cocoa - 2 tablespoons

Preparation:

1. We dilute coffee in hot water. It is better to do this immediately in a spacious, wide and deep bowl.

2. Pour alcohol here. This may not be done if the dessert is being prepared for non-drinkers or children. But a small amount of cognac or liqueur gives a subtle and very piquant note. Mix everything. Leave to cool to room temperature.

3. The cream should be well cooled and thick. Beat them at high speed with a mixer until fluffy.

4. Add powdered sugar here and add cheese. Beat on low mixer speed until smooth. But before that, it’s better to mix a little by hand so that the powdered sugar doesn’t fly all over the kitchen.

To prepare this cake, you will need a decent set of ingredients. Their list is given below:

  • 15 pieces of Savoyardi cookies;
  • 150 milliliters of strong coffee or espresso;
  • one and a half tablespoons of cocoa powder (you can add it depending on your preferences, but to get a really tasty dessert, it’s worth using it);
  • 30 grams of dark chocolate;
  • four chicken yolks;
  • one hundred grams of sugar;
  • two tablespoons of wheat flour, preferably with a slide;
  • the same volume of corn starch;
  • two grams of vanillin;
  • a pinch of salt;
  • half a liter of milk;
  • twenty grams of butter.

Preparing dessert

To make this fairly simple and incredibly tasty dessert, you will need to spend about an hour of your time (not taking into account the separate preparation of some components), without significantly dirtying the kitchen. For everything to work out correctly, you must follow all of the following steps and their order.

  • Brew a cup of strong coffee and leave it to cool.
  • As in the previous recipe for tiramisu without mascarpone, you need to break the eggs and separate the yolks and whites, placing them in separate cups.
  • Add the specified amount of sugar to the yolks.
  • Start mixing both ingredients until the mixture turns white and the sugar is almost completely dissolved. To achieve the desired result faster, you can use a mixer.
  • Next, add corn starch, wheat flour, salt and vanillin to the resulting mass. All contents must be thoroughly mixed again.
  • Then heat the milk in a ladle, but do not allow it to boil.
  • Next, starting to knead, add one tablespoon of milk to the previously obtained mixture. This approach is necessary to prevent the yolks from curdling. As soon as the contents have warmed up due to the milk, you can carefully pour in the rest of the milk, while continuing to stir.
  • Next, the resulting mixture must be filtered and poured into the container in which the milk was heated.
  • Now start cooking the contents over medium heat, while constantly stirring everything with a whisk. You need to stop the process when the mixture begins to thicken.
  • Once this stage is reached, set the heat to low and, without stopping stirring, continue cooking the cream for another six minutes. The procedure should be stopped when it finally becomes thick and the whisk leaves marks on the surface.
  • Next, set the heat to the lowest setting and, also without stopping stirring the cream, continue to cook it for two additional minutes. Such a thick consistency will allow the cream not to spread when assembling the dessert, thanks to this you can get clear layers. This is true for those situations when you serve this dessert in transparent containers.
  • After you have finished preparing the cream, pour it into a separate bowl and add butter. Stir until the latter is completely dissolved.
  • Now this dish needs to be wrapped in cling film. It should fit snugly to the surface of the contents. Remove the workpiece and leave until it cools to room temperature. After that, put it in the refrigerator for three hours. It is advisable to leave it there overnight.
  • Grate the chocolate on a coarse grater.
  • Once the cream and coffee have cooled completely, you can assemble the dessert itself.
  • Place three tablespoons of cream on the bottom of the dish in which you plan to serve the tiramisu.
  • Next, dip the cookies in coffee and place them in a layer on top of the cream.

  • Sprinkle some cocoa powder on top and sprinkle over the cookie layer.
  • Place a layer of grated chocolate on top of this.
  • Repeat these steps until all ingredients are gone. Once all the portions are finished, put them in the refrigerator for several hours. However, if necessary, they can be served immediately.

Recipe for making Tiramisu without Mascarpone

Ingredients:

  • fresh chicken eggs – 2 pcs.;
  • lady fingers cookies – 30 pcs.;
  • powdered sugar – 100 g;
  • fat sour cream – 450 g;
  • strong coffee;
  • vanilla – 2 tsp.

Cooking method::

  1. Brew coffee in a Turk, pour it into a wide bowl to cool;
  2. Add vanilla to the sour cream, mix everything thoroughly and place in the refrigerator;
  3. Carefully separate the egg whites from the yolks;
  4. Mix the yolks with half the specified amount of powdered sugar. Mix the resulting mass with sour cream;
  5. Beat the remaining powdered sugar with the egg whites. When a dense foam forms, add the mixture to the sour cream and mix everything;
  6. Soak the cookies in the coffee that has cooled down and place the first layer of delicacy on a dish or in a special form;
  7. Then spread a little less than half of the cream;
  8. Make a second layer of soaked ladyfingers;
  9. Hide the cookies under the cream, and spread the remaining “lubricant” on the sides of the treat;
  10. Place the treat in the refrigerator overnight and decorate as you wish before serving.

We will need:

  • mascarpone cheese - 500 g
  • savoiardi cookies - 200 g
  • egg - 4 pcs.
  • powdered sugar - 8 tbsp
  • cocoa powder - 6 tbsp
  • liqueur - 2 tbsp
  • strong coffee - 400 ml

Cooking method:

1. Take coffee and fill it with water, cook until ready in a special pot.

Important! It is best to take Expresso coffee; it will highlight the taste and magic of this dish very well.

2. The next step, for some it may not seem safe, so if you don’t like it, you can do it differently, I will write about this later in this article. And the point is the eggs, in true Italian style they must be raw, and as you know, it’s not recommended to eat raw eggs, as there is a risk of contracting salmonellosis, but you can’t do without them, because they are what gives the cream such a richness.

Important! You can use whipped cream or sour cream instead of raw eggs. But this will already be a parody of real tiramisu.

Separate the whites from the yolks; it is best to use a special device that will help you successfully separate them from each other. Beat the whites with two tablespoons of powdered sugar with a mixer until stiff, as shown in this picture.

Important! Check in advance that the bowl in which you are whisking is clean and dry.

3. In another container, beat the yolks with powdered sugar. What a creamy shade it turned out to be, simply beautiful!

4. So, an interesting point, which gives a very cool impression to this dessert, add cheese to the whipped yolks, beat with a whisk. Next, add the whites gradually and beat well, until you get a thick consistency without any lumps.

5. While making the cream, the coffee has almost cooled down, add liqueur to it, it’s better to take Amaretto, if you don’t want to add alcohol, you can replace it with almond essence. It's a matter of taste, and of course what you have on hand.

6. Now it’s time for the cookies, dip them in this brown solution.

Important! To make it delicious, it is recommended to dip the cookies not completely, but only on one side, where the powdered sugar is, you can shake off excess liquid.
