Whey pancakes are soft and tender. However, here you need to take into account that when using acidic whey, the pancakes will also have a sour taste. However, this can be easily corrected by adding more granulated sugar to the dough.

Recipe for thin whey pancakes with holes without soda

I offer you one of the simplest but most successful whey pancake recipes. There is no soda in the composition. However, this does not prevent them from being light and soft. The composition and preparation are simple. Even a beginner in the “pancake skill” will definitely cope.

To prepare we will need:

  • Teaspoon dry yeast
  • Liter of whey
  • 500 grams of flour
  • 3 raw eggs
  • 3 tablespoons granulated sugar
  • 50 ml. vegetable oil
  • Salt - half a tsp.

Preparation:

1. Place the whey on the stove and heat it up a little. The temperature should be warm and comfortable for your finger. But under no circumstances is it hot!

2. Add salt, granulated sugar and dry yeast here. If you only have fresh ones, you can crumble them. You can add more or less sugar - to suit your taste. Mix everything thoroughly with a whisk.

Choose a high and wide bowl for the dough. Please note that when you knead it, it will rise about 2 times more from this level.

3. Pour in eggs and vegetable oil. Whisk everything carefully with a whisk or fork so that the mixture is even in consistency.

4. Now, in parts, in several batches, add the sifted flour into the liquid mass. You can even sift it several times - this will only make the dough more airy.

5. Using a whisk or mixer, mix each portion of flour so that there are no lumps left. When all the flour is in the dough, the mass should be liquid, like low-fat cream.

6. Now cover the bowl with the dough with cling film. You can simply cover it with a napkin. Place in a warm place for 1-1.5 hours. As a result, it will grow and “come to life”. Active bubbles will appear.

7. Prepare a frying pan for frying. It should be thick-bottomed and wide-bottomed. We heat it thoroughly at high power (slightly below maximum). Lubricate with a small amount of oil. This will only be required once. Then you will no longer need to oil it. Pour in an incomplete scoop of the mixture and immediately pour into a thin circle. When the edges begin to brown, check to see if it releases well from the pan.

8. If the pancake leaves the bottom surface perfectly, you can safely turn it over. On the second side it will cook 2-3 times faster. Once it slides easily across the pan, you can take it out.

We place each new pancake on top of the previous one in a stack. Serve to the table immediately, piping hot.

Prepare thin pancakes for 1 liter of whey with filling

Whey-based pancakes can be served as a dessert with a sweet filling (honey, jam, condensed milk, melted chocolate, etc.), or they can be served as a main dish by wrapping the meat filling in them. So I offer a recipe with minced sausage filling. To do this, we need to bake strong and elastic pancakes so that they do not tear while wrapping the filling. Well, let’s not waste time, let’s start frying our “suns”...

Ingredients:

  • Whey – 1 liter
  • Flour -800 gr.
  • Eggs - 3 pcs.
  • Soda - 1/2 tsp.
  • Salt - 1/3 tsp.
  • Sugar - 2-3 tbsp. lie
  • Vegetable oil - 150 gr.

For filling:

  • Sausage (not hard) - 500 gr.
  • Rice 1 cup
  • Mayonnaise (or sour cream) - 50-100 gr.
  • Greenery

Cooking process:

1. Break the eggs into a deep bowl, carefully so that the shells do not get in

2. Add salt and sugar to the eggs

3. Then whisk the egg mixture until foam appears. You can use a mixer.

4. Add whey and soda, which is quenched in an acidic environment and mix well.

5. Add vegetable oil and mix again with a whisk

6. Now we need to gradually add the sifted flour and stir until all the lumps disperse

Important! The amount of flour indicated is approximate, because it always varies. Therefore, the dough needs to be controlled so that it is liquid - the consistency of cream, and spreads well in the pan.

If the consistency turns out to be thick, add a little more whey; if it runs out, add boiled water. When the dough is too liquid, add a little flour. In this simple way we can bring it to the consistency we need.

7. Heat the frying pan well and grease it with vegetable oil, then put it back on the stove so that it heats up well. Then mix the dough with a ladle and pour it into the pan, turning it in a circle so that it spreads over the entire diameter and bake the pancake until brown edges appear.

We grease the frying pan with vegetable oil only before frying the first pancake, then there is no need to do this, because we added oil to the pancake dough and they will come off the pan well.

8. Turn over to the other side and bake until our bowl is empty, stacking it on a flat plate.

9. Our rosy beauties are ready! Now let's start preparing the filling for them.

Boil the rice; it should be crumbly.

10. I grind the boiled sausage in a blender and combine it with boiled rice.

11. Grind the pre-washed and dried greens and add them to the sausage-rice mixture.

12. Then add sour cream or mayonnaise so that our filling is not dry and mix everything well. Our filling is ready!

13. Next, we begin to wrap our filling in pancakes, placing it in the center of the pancake. Close one edge, then fold the other.

The more filling, the tastier, but don’t overdo it, our pancake still needs to be wrapped.

How to bake thin whey pancakes without eggs

This is perhaps the simplest whey pancake dough recipe. As a result, the products are soft and delicate. You can wrap something tasty in them (fried minced meat, cottage cheese or fruit, for example). Or simply enjoy them with tea, sour cream or condensed milk. There are plenty of serving options. In any case, it will be delicious.

To prepare we will need:

  • 650 ml. whey
  • 3 teaspoons granulated sugar
  • 350 grams flour
  • Half a teaspoon of salt
  • 5 tablespoons of odorless vegetable oil
  • ¼ tsp. soda

Preparation:

1. Prepare the liquid. The whey should be removed from the refrigerator a couple of hours before preparation and placed in a warm place. If you decide to cook pancakes spontaneously, you can simply heat it on the stove or in the microwave.

For now, pour about half the glass and leave it aside.

2. Then pour it into a tall bowl. Dissolve salt and granulated sugar here.

3. Sift the flour - this is mandatory. You can even do this twice. This will make the dough more airy and fluffy. This will have a positive effect on the finished pancakes. We send it into a bowl with whey, 2-3 times. After each addition, mix until smooth, without flour compaction.

4. Heat the whey that we set aside to a boil. No need to boil. As soon as the first signs of bubbling appear, remove from heat and add baking soda. An active reaction will immediately occur, foam. Mix everything and immediately pour into the dough. Mix into an even, smooth mass. Then pour in the oil.

5. The mass must be kneaded until all the butter is distributed evenly. It should not remain along the edges or on the surface. Place the frying pan on the fire. Lubricate with a thin layer of vegetable oil. Let's wait a little longer until it warms up.

Pancakes with semolina without eggs

A quick and budget option for preparing your favorite breakfast.

Ingredients:

  • 250 grams of whey;
  • 180 grams of semolina;
  • 2 tbsp. l sugar;
  • 1/3 salt;
  • vanilla sugar to taste;
  • 1 tsp the same amount of lemon juice or vinegar to extinguish the soda;
  • oil for frying.

Cooking time is about 1 hour.

Calorie content – ​​within 250 kcal.

Preparation:

  1. Heat the whey, remove from heat and immediately pour semolina into it. Leave for 15-20 minutes for the semolina to swell. That's the whole secret - semolina should swell.
  2. Add soda slaked with lemon or vinegar, sugar (including vanilla) and salt to the mass that has increased in volume.
  3. The dough is ready. Now fry the pancakes in a small amount of oil over medium heat. In this cooking method, it would be a good idea to cover the frying pan with a lid, so the pancakes will rise better.

A very simple, delicious recipe for whey pancakes. You can also use it to prepare dough using kefir or yogurt - it will also be very tasty. Try it! You will definitely like it!

To prepare we will need:

  • 360 ml whey (can be replaced with kefir or yogurt)
  • 20 g vegetable oil
  • Flour – 150 g.
  • Boiling water – 40 ml.
  • Medium size chicken egg – 1 pc.
  • Granulated sugar – 1-2 tbsp.
  • Soda - half a teaspoon
  • Salt – 1/9 teaspoon

Preparation:

1. Pour approximately half the volume of whey into the bowl where the dough will be kneaded. The liquid should be warm, at room temperature or slightly higher.

2. Add salt, soda and sugar here. If you add 1 tbsp. l. granulated sugar, then the pancakes will not be sweet. If you want to make them sweeter, you can add 1-2 more spoons. Mix everything thoroughly. The soda immediately begins to give a foamy reaction - this is how it should be.

Please note that the more sugar in the composition, the more the pancakes will burn.

3. Add the egg here and mix it. Now add the sifted flour here. 150 grams is approximately 1 medium glass. Mix with a whisk until smooth. At this stage the dough turns out thick, like rich sour cream.

4. To make the pancakes thin and delicate, you need to make the dough more liquid. Therefore, pour in the remaining whey and mix with a whisk. Pour boiling water here (about 3 tbsp) and mix, brewing the dough. Finally, add odorless olive or sunflower oil. Final thorough mixing. The mass turns out to be quite liquid and pouring.

5. To fry the first product, grease the bottom of the pan with vegetable oil. There will be no need to oil it anymore. Heat well so that the pancake is fried immediately. Pour in an incomplete ladle of dough and roll it out by turning the pan into a thin circle. If you want a fluffier product, you can add more dough. When the edges become golden brown and the raw dough in the center is dry, you can turn it over.

6. Now let's fry it on the other side. They bake quite quickly, so don't leave the kitchen.

You can serve them with sour cream or other sauce. They are also suitable for any filling – sweet or savory. Alternatively, you can make a pancake cake out of them.

Delicious pancakes with boiling water on whey with holes

Thin, tender, covered with small, delicious holes - these are the pancakes obtained according to this recipe. I often bake them this way myself. When there is no whey, you can easily take kefir, yogurt or just milk. They will differ slightly, but the result will still be excellent!

To prepare we will need:

  • 500 ml. whey
  • 2 tablespoons vegetable oil
  • 2 tablespoons granulated sugar
  • Soda – 0.5 tsp.
  • Eggs – 2 pcs.
  • Boiling water – 250 ml.
  • Flour – 250 g.
  • Salt - half a tsp.

If you bake in a frying pan with a diameter of 22 cm, you get about 18 pancakes.

Preparation:

1. Beat eggs into a wide, roomy bowl. Next add salt and granulated sugar. Using a mixer or manually, mix everything into a total mass.

2. Now we send the sifted flour here. Also, with a special mixer or by hand, with a spatula, mix everything, trying to ensure that all the flour is absorbed into the dough.

3. Pour the whey here. It should be warm (room temperature or slightly higher). Carefully, sparing no time and effort, grind everything into a homogeneous mass so that there are no lumps. You can do this with a mixer. If lumps remain, you can grind the mass through a sieve.

4. Mix soda in boiling water. Immediately transfer this mass into the dough in a thin stream, kneading constantly. In this form, let the dough stand for about 20 minutes. Then pour in the vegetable oil and mix it thoroughly here.

5. For the first time, grease the frying pan with a thin layer of oil. You won’t need this anymore, because it’s already included in the test. Heat well so that the mass sets immediately when it hits the pan. Pour in a small ladle or even a little less and distribute over the entire bottom. To make the process go faster, you can use 2 frying pans at once.

6. When the products are browned on the bottom, pry them with a spatula and turn them over to the other side. Now let's blush on this side.

I suggest making pancakes with apple and cinnamon using whey. This classic combination greatly enhances the taste of the dish, and the fried pancakes will turn out lighter and more tender.

Ingredients:

  • Eggs - 2 pieces.
  • Sugar - 2 tablespoons.
  • Whey - glass.
  • Flour - 1.5 cups.
  • Apples - 2-3 pieces.
  • Cinnamon.
  • Baking soda - on the tip of a knife.
  • Sunflower oil for frying.

Preparation:

  1. Beat eggs with sugar. Warm the whey a little and add it to the bowl. Next add flour and soda. Mix all ingredients thoroughly. The dough turns out homogeneous, without lumps, and the consistency resembles thick sour cream.

  4. Pour sunflower oil into a frying pan and heat it up. Spread the pancakes with a tablespoon, leaving space between them, as they will expand during frying. Cook until golden brown, covered.

This is an old recipe that I found in my grandmother’s culinary notebook, and her mother told my grandmother, this is the family recipe that has been passed down from generation to generation...

Ingredients:

  • Serum – 1,200 ml
  • Eggs - 3 pcs.
  • Yeast (live) - 10 g.
  • Flour
  • Sugar - 2 tbsp. lie
  • Vegetable oil - 2 tbsp. lie

Pancake making process:

  1. Mix eggs with sugar, add yeast, vegetable oil and pour in 600 ml of warm whey

2. Then mix all the ingredients with a mixer and gradually add sifted flour. You need to add enough flour so that the dough turns out like pancakes - thick, we do this so that all the lumps break up.
