Hello, dear friends! Today we have pea soup for lunch. This very tasty and aromatic dish is one of my family’s favorites, along with borscht or kharcho.

I used to cook it with fresh meat. And not so long ago I learned that it will be even tastier if you cook it with various smoked meats. I started trying it and realized that people are right, it’s even better.

Any will do. Be it ribs, sausage, carb, bacon, etc. In principle, they can be combined with fresh meat. But today I will tell you recipes without it.

Dried peas take the longest to cook in this soup. That’s why I buy it already chopped into halves and soak it in advance. It is recommended to keep it in water for at least 5 hours and then rinse thoroughly. If you have not done this, then you will have to increase the cooking process until it becomes soft. Well, let's take it in order...

How to make pea soup with smoked meats

As smoked meats, you can use whatever you like and what is currently available. For example, you can take smoked sausage. This is one of the most budget options. At the same time, the soup turns out very tasty - you will lick your fingers!


To prepare we will need:

  • Potatoes – 1 kilogram
  • Water – 3.5 liters
  • Peas – half a kilo
  • Onion – 200 grams
  • Ground pepper and salt - to taste
  • Carrots – 250 grams
  • Laurel – 2 leaves
  • Dill - a small bunch
  • Smoked sausage – 300 grams
  • Vegetable oil – 50 milliliters

1. Peas must be washed very carefully. The last batch of water should be completely clear, without turbidity. Fill with cool water and leave for a couple of hours. I always do this at night. Then the peas cook well.

2. Now drain the water, pour the peas into the pan and fill with clean drinking water. We put it on the stove. Foam scale will build up before boiling. We delete it. Cook until the peas are almost ready, 40-50 minutes.

3. While it is cooking, prepare the rest of the ingredients. Peel the potatoes and cut them into small cubes or bars. The shape of the cut does not matter.

4. Cut the sausage into small cubes or strips.

5. Pour vegetable oil into a frying pan and fry finely chopped onion and grated carrots in it. Simmer everything together for 7 minutes, until the vegetables are soft.

6. Add potatoes to the boiled peas and cook until tender. Then we transfer the roast, sausage, salt, add bay leaves, and season to taste.

7. Mix. After boiling, boil for 10 minutes. Then add finely chopped greens. The soup is ready. But in order for it to become saturated with the aroma of dill, you need to let it stand without heating for 15 minutes.

Pea soup with smoked meats without ribs and potatoes

And yet, this soup is one of the simplest first courses. You can use different sets of products for it. And even those that seem so familiar to us that it’s difficult for us to imagine a dish without them are not necessary in a pea dish.

Students in the hostel from Armenia taught me how to cook first courses without potatoes. And I was convinced that such a dish has the right to exist: it is more tender than usual, and in it those ingredients that play a primary role in taste are even more distinct.

Ingredients:

  • Peas – 300 gr.
  • Bacon (smoked undercut) – 150 gr.
  • Carrots – 40 gr.
  • Onion – 40 gr.
  • Vegetable oil - for frying
  • Salt
  • Water - ok. 1.9l

Preparation.

In 1.5 l. Add washed peas to hot water.

Let the broth boil and reduce the heat to low. Cover the pan with a lid halfway and cook for another 1.5 hours.

Prepare other ingredients: finely chop the onion and carrots.

Cut the bacon into large cubes.

Simmer the onions and carrots in a frying pan until the onions are transparent.

Add bacon to the pan and fry for another 7 minutes.

Little trick! Pour one ladle of pea broth into the frying pan and simmer the fry in it until fully cooked.

Place the roast in a saucepan and cook until the grains are completely cooked.

Pea soup with smoked ribs - step-by-step recipe

Smoked pork ribs are the most common ingredient in this dish. The soup turns out extremely tasty and aromatic. Words cannot describe it - you have to try it!

Rich, satisfying and aromatic - what else is needed for a good appetite and a tasty lunch.


To prepare we will need:

  • Medium sized carrots – 2 pieces
  • Smoked pork ribs – half a kilo
  • Medium sized onion – 1 piece
  • Greens - to taste
  • Peas – 300 grams
  • Salt and peppercorns - to taste
  • Bay leaf - a couple of leaves
  • Medium size potatoes - 5 pieces
  • Toast loaf - optional

1. Cooking any pea dishes begins with soaking the cereal. It is better to take ground peas for these purposes. Wash it carefully and fill it with water so that it rises 5 centimeters above it. Leave for 3-5 hours. It's best to soak overnight.

2. Cut the onion into thin quarter rings. Heat a little oil in a frying pan and add the onion, season it with ground pepper and fry for a couple of minutes.

3. Now cut the carrots into thin quarter-slices. If you wish, you can grate it. We send it to the onion and simmer at low power until semi-soft.

4. Divide the ribs into parts. Cut the intercostal meat into strips. Place on top of the fried vegetables. Let's fry it a little on one side. Then mix the contents. Warm the ribs and meat well over low heat.

5. Wash the peas again, strain and add water in a saucepan. Let it cook for about 20 minutes. Soon foam will boil up - it needs to be skimmed off.

6. When the peas are well cooked, add diced potatoes to it. We also put bay leaf and a few peppercorns here. Salt to taste. Cook until the potatoes are ready.

7. At this point, prepare the croutons. For this, it is better to take not very fresh bread. Better than yesterday or two days ago. Cut it into medium sized cubes. Place on a parchment-lined baking sheet. Dry in the oven until lightly browned.

8. Transfer the roasted ribs into the soup. Boil for another 7-10 minutes.

Now remove from heat and pour into plates. Sprinkle with chopped herbs and croutons. Bon appetit!

With smoked knuckle

Smoked knuckle has a high calorie content. It is not advisable to cook dishes on this basis every day, especially if you are following a diet. But you shouldn’t constantly deprive yourself of food like pea soup with knuckle - it contains a lot of iron, calcium, phosphorus, iodine, magnesium, fluorine, and vitamins. This is a filling meal, so eaters may refuse the second course. So, let's prepare pea soup with smoked knuckle and spices.

Ingredients:

  • smoked-boiled shank – 1 pc.;
  • split peas – 500 g;
  • bay leaf – 2-3 pcs.;
  • water – 5 l;
  • carrots – 3 pcs.;
  • onions – 2 pcs.;
  • salt and spices - to taste.

Cooking method:

  1. Boil the peas in a saucepan until tender.
  2. Cook the smoked shank with peas for about 3 hours, until fully cooked.
  3. Remove the cooked meat from the water and cool with cold water.
  4. Chop the carrots into thin strips and chop the onion. You can sauté them, but it won’t be any worse if the vegetables are dipped into the broth raw.
  5. Remove the bones and skin, cut the meat into pieces, add to the soup, and cook until tender.
  6. Salt and add spices.

Pea soup with smoked meats - a classic recipe

The most important thing when making pea soup is to prepare the peas correctly. Therefore, I plan the preparation the night before cooking. The cereal should be washed and soaked in cold water. You can start preparing in the morning. Everything else is a matter of taste!

You can add any smoked meat to this soup: chicken, pork, sausage. Try to keep the smoked meats natural; the smell and taste of this dish depends on their quality.


To prepare we will need:

  • Peas – 250 g
  • Carrot – 1 medium size
  • Salt and ground pepper to taste
  • Medium potatoes - 4 pieces
  • Small onion - 1 piece
  • Smoked pork loin – 200 g.
  • Allspice peas - 5-6 pieces
  • Bay leaf – 1 leaf
  • Garlic – a couple of cloves

1. Wash the soaked peas well again and drain the water.

2. Transfer to a saucepan. Add bay leaf and peppercorns. Peel the onion and garlic cloves, add them here, and cook until the peas are soft, skimming off the foam.

3. Cut the pork into small cubes. In the same way, cut the peeled carrots and potatoes.

4. Heat vegetable oil in a frying pan. We send meat here. Fry it until golden brown.

5. When the peas are cooked, remove the garlic and onion. We won't need them anymore. And here we put the potatoes and carrots. Cook until done, 10-15 minutes.

6. Now we combine all the ingredients. Salt and pepper to taste, stir and wait for it to boil. Remove from the stove. The soup is ready to serve! Bon appetit!

Delicious pea soup with smoked meats

Incredibly delicious soup with fried bacon, garlic and rosemary. Prepare it for the whole family. Even the most fastidious taster will surely appreciate it! Preparing is not at all difficult, which will especially please busy housewives.


To prepare we will need:

  • Dry split peas – half a kilo
  • Salt, ground pepper - to taste
  • Garlic - one head
  • Bacon – 150 grams
  • Medium sized carrots – 3 pieces
  • Butter – 50 grams
  • Medium sized onion – 2 pieces
  • Rosemary – 1 sprig

1. Wash the peas and pour boiling water for an hour so that they swell a little.

2. Cut the bacon into small cubes.

3. Sprinkle a thick-bottomed pan with vegetable oil and heat. We send bacon here. Cut the unpeeled, washed head of garlic into 2 parts crosswise. Add a sprig of rosemary and butter. Fry the bacon until golden.

4. Transfer everything to a separate bowl.

5. Place the finely chopped onion into this pan (you can put it in a frying pan). Let's gild it for a few minutes, stirring.

6. Cut the carrots into small cubes. You can grate it with a grater. We send to the onion. Salt and pepper to taste. Transfer the swollen peas and pour in water.

Bring to a boil, then simmer at a constant low simmer for 40 minutes.

Now put the soup into bowls, add fried bacon, rosemary and cloves of fried garlic to each bowl.

Step-by-step recipe for split pea and chicken soup

Light soup is a great option for those who don’t know what to cook. A dish with split peas will turn out deliciously tasty and aromatic if you add ginger and cumin to it.

Ingredients:

  • split peas - 1 cup;
  • purified water - 1500 ml;
  • carrots - 1 pc.;
  • chicken breast - 0.4 kg;
  • cumin - ½ tsp;
  • turmeric - ½ tsp;
  • salt and pepper to taste.

Preparation:

  1. Prepare the broth, place the chicken fillet in a saucepan, fill it with water, turn on the gas.
  2. Peel the carrots, ginger, and chop the fruits.
  3. Fill the peas, carrots, ginger with water and wait until it boils. Add cumin and turmeric.
  4. Turn the heat to medium and continue cooking the soup until the peas are ready, this process will take about an hour. Cook without covering the pan with a lid.
  5. Add salt and black pepper only at the very end.

The soup prepared according to an easy recipe is ready.

Pea soup with smoked ribs in a slow cooker

If you have a multicooker in your kitchen, then preparing any dish becomes much easier. Including making pea soup. I offer you this recipe. It turns out incredibly tasty, aromatic and satisfying.


To prepare we will need:

  • Split peas – 2 multi-cups
  • Smoked sausage – 250 grams
  • Medium sized onion – 1 piece
  • Medium sized potatoes - 3-4 pieces
  • Medium carrots - 2 pieces
  • Bay leaf – 2 leaves
  • Peppercorns - to taste
  • Salt, herbs to taste

1. Wash the peas well, add cool water and leave for 4-6 hours.

If you don't have much time to cook, it's still worth soaking the peas, at least for a couple of hours. You can add a teaspoon of baking soda.

2. Pour vegetable oil into the multicooker bowl. Set the frying mode. While the oil is heating, finely chop the onion. Three carrots with a grater. Place the vegetables in the slow cooker and fry for 4 minutes, stirring.

3. Meanwhile, cut the sausage into cubes and add it to the vegetables. Fry for another 4 minutes. Then the frying mode can be canceled.

4. Peel the potatoes. We cut it as we are used to for soup. We send it to the vegetables. We also transfer the washed peas here again. Add bay leaf, salt and spices. Fill with water. It must be hot. Its level should be slightly higher than the products, but not exceed the maximum mark.

5. Stir everything. Close the lid tightly. Set the “Soup” mode for an hour.

The finished soup can be served immediately. But if you still have time before lunch, you can leave it on the heat for half an hour. This will make it more aromatic and rich.

It's not easy to refuse a bowl of flavorful, tender pea soup with smoked meats. And after eating one serving, you just want to ask for more.

I repeat that the main thing in this matter is to prepare and boil the peas. It should be a smooth puree, not tough peas. To avoid adding soda when cooking, you need to pre-soak it overnight. Well, or at least for 2-3 hours.

Every housewife should know how to make pureed pea soup with smoked meats. Most children get used to it in kindergarten, therefore, as adults, they love to treat themselves to a thick, rich dish, especially in winter, at the family table after work or a long walk. So, we buy groceries, set up a blender, study the recipe with step-by-step photos and cook creamy pea soup with smoked meats.

Ingredients:

  • smoked meat products – 200-300 g;
  • dry peas – 400 g;
  • onion – 1 pc.;
  • carrots – 1 pc.;
  • celery – 2-3 stalks;
  • salt;
  • greenery;

Cooking method:

  1. Soak the rinsed peas overnight or at least 2 hours.
