Probably the simplest and most favorite apple pie is charlotte. Because it takes very little time to prepare. There are a huge number of recipes for making this pie, and I tried and selected the best ones and combined them in one article.
Today we will look at simple recipes for fluffy charlotte with apples baked both in the oven and in a slow cooker. Where, during cooking, apples will give the pie special tenderness and softness. And in order for the pie to have an additional aroma, we will add a little cinnamon or vanilla during the cooking process.
And before you start cooking, I want to say that many people ask this question: how long does it actually take to bake it? It is impossible to give a specific answer. The dish is approximately ready in 30 minutes, but it happens that it may take a little less or more time. It always depends on the type of dough prepared and the temperature set in your oven.
Apple charlotte according to the classic recipe
Ingredients:
- Apples - 3 pcs
- flour - 1 cup
- egg - 4 pcs
- sugar - 1 glass
- vegetable oil - 1 tablespoon
- vanilla - 10 gr.
Cooking method:
First, we need to take the eggs straight from the refrigerator, this will give the dough fluffiness and beat with vanilla and sugar using a mixer until thick foam.
Next, add the sifted flour to the eggs and mix well.
We wash the apples under running water, peel them, remove the core and cut them into small slices.
Now take a suitable baking dish, grease it with oil, put the chopped apples in it and fill it with the prepared dough on top.
Place the filled pan in an oven preheated to 180 degrees and bake for 45 minutes until a nice, golden crust.
Before you are completely convinced, you can check the readiness of the pie using a match or a toothpick; if, after piercing the pie, dough remains on the match, then the pie must be held still, and if the match remains clean, then the baking is ready.
What is “classic charlotte”? Let's look at 2 recipes.
I must admit that I always considered a classic charlotte to be exactly the recipe that I baked 20 years ago and am still baking, which was prepared in my childhood by the mothers and grandmothers of my friends, which even now will be “reported to you by heart” by almost any housewife of all ages - “ 4 eggs, a glass of flour, a glass of sugar - beat everything, pour this mixture over the chopped apples and bake until done.” It’s probably easier to just fry some eggs, by God... :-)
But thanks to the fact that I was preparing material for this article, I learned that charlotte was originally an apple pie with... bread! Slightly shocked by this new information for me, I went to search and compare different recipes for “charlotte with bread”. It turned out that this recipe is called “French classic charlotte” and here I found two main directions, which I will now tell you about in more detail.
So,
1 OPTION for classic French charlotte.
We will need:
- apple 4 pieces
- sugar 50 grams
- butter 200 grams
- toast bread 6 slices
- cinnamon 5 grams
1Peel the apples. Remove the core. Cut into pieces. Place in a saucepan. We put it on fire. Add sugar. Cover with a lid. 2Then open the lid to allow the liquid from the apples to evaporate. Melt the butter in a saucepan. 3 Cut off the crusts of the bread. Trim the bread slices to the height of the sides of the pan. Dip the slices into melted butter. 4 Place the slices along the sides of the mold. Place a slice on the bottom of the mold. Cover the gaps with pieces of bread. 5Add cinnamon to apples. Place the apples in the mold. Cover with a slice of bread. We close the holes with pieces of bread. 6Place the charlotte in the oven at 190 degrees for 35-40 minutes. Then turn the pan over onto a plate. Carefully remove the form.
Important note for this recipe: Dip the bread pieces into the oil for just a split second, do not keep them in the oil for too long - it will turn out too greasy!
I would never have thought that you could bake such a delicious apple pie with bread and apples, without any dough, but judging by the reviews of this recipe, it turns out very tasty, many people liked this recipe. I’ll definitely try it, I just need to find a suitable form.
If you are afraid of “bread and butter”, look at the second version of the classic French charlotte, with bread, but of a slightly different plan.
2nd OPTION of charlotte with bread and apples.
We will need:
- 1 loaf (preferably yesterday's)
- 3 - 4 apples
- 400 ml. milk
- 3 eggs
- 25 gr. butter
- 6 tablespoons sugar
- 1 - 0.5 teaspoon cinnamon or vanilla (optional)
This option differs in that we dip the pieces of dried bread not into pure butter, but into an egg-milk mixture whipped with sugar. But in general, the essence is the same as in the previous recipe - we lay out a frame of soaked pieces of bread, place apples inside (you can simply cut them into pieces, you can process them in a frying pan, as in the previous recipe), and cover the top with the same croutons.
You can also add any fruits to apples, you can add nuts, in a word, whatever your imagination tells you. Don't forget to add vanilla or cinnamon for flavor.
The bread in this recipe must be pre-dried; if you take fresh, it will not completely absorb the egg-milk mixture, so prepare yesterday’s or the day before yesterday’s bread or dry fresh in the oven.
You can lay out the bread not as a frame, placing apples inside, but in layers - place a layer of apple slices with soaked crackers. In this case, pour a little egg mixture into the bottom of the mold and pour on top. It turns out this kind of pie -

Lush charlotte with apples in the oven
To prepare, you first need to prepare the apples and preheat the oven to the desired temperature. As soon as the dough is prepared, it must be immediately poured into the mold and sent to the oven. To make it fluffy, you need to beat the eggs well, and add flour and knead only without a mixer, since the weight of the flour will cause the eggs to shrink and you will then end up with a sole.
Mix the flour with the already beaten eggs with extreme care. Carefully pour the dough into the mold without shaking or hitting it and place it to bake, otherwise the dough will shrink and then there is no need to talk about any splendor.
Ingredients:
- Apples - 5-6 pcs.
- flour - 130 gr
- eggs - 3 pcs
- sugar - 1 glass
- powdered sugar - for decoration
- cinnamon - to taste
- vanilla extract - 1 teaspoon.
Cooking method:
We thoroughly wash the apples in water, peel them, cut them into slices and place them in a deep baking tray.
Break the eggs into a deep cup, add sugar there and beat with a mixer. Add flour and start kneading the dough.
Pour the resulting dough into the mold with apples and immediately place in an oven preheated to 180 degrees.
In about 45-50 minutes our fluffy charlotte will be ready.
Sprinkle powdered sugar on top and serve.
How to make Lush Apple Pie
First of all, separate the whites from the yolks. Beat the whites into a fluffy foam (add a pinch of salt at the very beginning) with the addition of sugar. Then gradually add the yolks and beat.
Cut the apples into small pieces. There is no need to peel them. Sift flour into flour with egg mixture. Mix gently (from top to bottom) with a spatula.
Grease a baking dish with butter (I bake the pie in a slow cooker). Place the dough into the mold. And on top are apples. Apples can be laid down, or “in the middle” of the dough.
As I already said, I bake the pie in a slow cooker. I set the mode to “Baking”, time - 45 minutes.

Charlotte with apples in a slow cooker
In this recipe I will share with you a method for preparing this delicacy in a slow cooker. My wife and I love this pie. And since only 3 sides are baked in the slow cooker, and the top remains pale, I always turn it over before serving. In this case, you get a nice golden crust on top.
Ingredients:
- Apples – 450 gr
- flour - 1 cup
- eggs - 3 large pieces
- refined oil - 1 teaspoon for greasing the mold
- sugar - 1 glass.
Cooking method:
We are preparing ingredients for the future pie. Wash the apples thoroughly, select large eggs and sift the flour.
Break the eggs into a deep bowl and add sugar, then beat with a mixer, only at maximum speed, until a light, fluffy consistency and approximately 3 times the size.

Pour the sifted flour into the total mass, and using a mixer at low speed, bring the dough until smooth and try to make it without lumps.
If desired, for flavor, you can add a small pinch of vanillin to taste.
In this case, I cut the apples with the skin into small slices, cutting out only the core; if suddenly your skin is thick and harsh, then it is better to cut it off. Grease the multicooker bowl with oil and evenly place the chopped apples in it.
Pour the dough evenly into the cup so that it all spreads between the apple slices and set it in the multicooker to the “Baking” mode for 50 minutes.
After turning it off, open the multicooker and let the finished pie cool, then take the mold, turn it over onto a plate and sprinkle powdered sugar on top.
Slice the finished charlotte and serve.
Charlotte with cottage cheese and apples is a very dietary dish
Charlotte with cottage cheese and apples is perfect for any feast. A wonderful apple pie goes well with cottage cheese. Cottage cheese gives a delicate taste. In this recipe, charlotte is very healthy and almost dietary, since instead of regular wheat flour, we add semolina.
If you have a sweet tooth, you can add a little more sugar than indicated in the recipe. This dish tastes a little like cheesecake, but the presence of apple notes will not allow you to confuse this curd dessert with any other.
For the composition, prepare:
- a glass of granulated sugar;
- butter - 100 grams;
- cottage cheese - 250 grams;
- one egg;
- medium-sized apples - 6 pieces;
- semolina - 1 cup;
- freshly squeezed lemon juice - 1 teaspoon;
- baking powder - no more than 1 teaspoon.
Let's move on to specific steps:
Immediately remove the central part of the apples; due to their hardness, the sensation when eating will not be pleasant. Next, cut them into pieces;
Add some sugar and sprinkle with lemon juice;
Add eggs there, add baking powder, butter, previously melted in a water bath;
Grind the cottage cheese through a sieve, pour it into the resulting dough, add semolina there;
Let the dough sit for a while;
Prepare a sheet, place apple slices on it and after 15 minutes pour in the settled dough;
Baking time 40 minutes.
The most delicious charlotte made with sour cream and baking powder
In this recipe, the entire process will take no more than one hour, of course, if you have all the most necessary products on hand. This pie has always surprised chefs with its ease of preparation and at the same time divine taste. This pie has always been and will always be an excellent solution for everyday and even holiday tables!
Ingredients:
- Apples - 3 pcs
- flour - 1 cup
- egg - 1 pc.
- sour cream - 1 glass
- sugar - 1 glass
- soda - 1/2 teaspoon or baking powder.
Cooking method:
For this pie, the dough is made just as quickly as for the previous ones. Mix eggs with sugar in a deep bowl, then add soda slaked with vinegar.
Add flour, add sour cream and mix everything well until smooth so that there are no lumps.
If the dough suddenly turns out to be thick, add a little milk.
Wash the apples, cut into small slices and place evenly in a baking dish.
And fill the entire contents of the form with dough. Place it in the oven preheated to 180 degrees and bake for 35-40 minutes. Don’t forget to check the charlotte from time to time so that it doesn’t burn.
The finished pie turned out to be very tender and tasty, let it cool a little and cut it into portions to serve to your household.
Apple charlotte with semolina without eggs
More precisely, this recipe is better called manna with apples, but it’s all in the details. The essence remains the same - this is a pie with apples and semolina. What you call it is up to you. No chicken eggs are used in the preparation, which means it is also vegetarian. It cooks very quickly, literally in 10 minutes (not taking into account the baking time).
Ingredients:
- Apples – 5pcs
- Flour - 200g
- Sugar - 200g
- Semolina – 200g
- Butter – 150g
- Baking powder - 10g
Preparation:
Place flour, sugar and semolina in one bowl. Stir everything with a spoon, then add baking powder and stir everything again.
After this, grate the apples. It is not necessary to peel them.
Then we take a tall baking dish, coat it with butter and lay out our ingredients in layers, compacting them quite tightly. First a layer of flour with sugar, then a layer of apples. And so on one after another. Each layer is 1.5-2 cm thick.
The top layer is flour with sugar, onto which we grate the butter using a grater.
To keep the butter firm and grateable, place it in the freezer for 15-20 minutes.
As in previous recipes, we send our form to the oven, preheated to 180 degrees for 5 minutes, until blush appears. Then reduce the temperature to 140 degrees and bake for another 15-20 minutes.
To check the readiness of the dessert, open the oven after half an hour and pierce it with a thin wooden stick along its entire length (for example, a kebab stick). If no dough sticks to it, then the charlotte is ready.
Let the pan cool slightly and remove the pie. Ready.
Butter gives charlotte a very pleasant aroma and delicate taste. Bon appetit.
How to cook charlotte with milk
Ingredients:
- Egg - 1 pc.
- apple - 3 pcs
- milk - 1 glass
- sugar - 1 glass
- flour - 3 cups
- vegetable oil - 3 tbsp. l
- soda slaked with vinegar - 1 tsp.
Cooking method:
First of all, we need to knead the dough. See above for how this is done.
We wash the apples, then cut them into small pieces, after removing the core and tail.
Now pour vegetable oil into the prepared form and, using a pastry brush, distribute it over the entire surface. Then we first put the apples in it, and then pour the dough on top.
Preheat the oven to 180 degrees and place the mold with the dough in it. Bake for 30-40 minutes until done. And don’t forget to check periodically, since the cooking time, depending on the power of your oven, will be different for everyone.
Charlotte on kefir without eggs according to grandma's recipe
Actually, I call any charlotte a “Guests on the Doorstep” pie, because it is a real lifesaver in the case when friends suddenly called and said that they would arrive in half an hour. It is always made quickly, and is simply eaten with a “Hurray”!!!
To prepare such a dessert, you need to follow these steps step by step:

Add sugar to 100 grams of soft butter and rub well with a wooden spatula. If you like it sweeter, take a whole glass, and if not so much, then take it like I did, just 150 grams.
And, continuing to grind, little by little we begin to add 1 glass of kefir. Instead, you can take sour cream or yogurt, or even better if you make a combination, for example, half a glass of kefir and sour cream. It will be very tasty.
Now sift all 300 grams of flour into the same bowl at once (about 2 glasses of 250 ml), add another 1 tsp. baking soda mixed with half a teaspoon of citric acid (or, instead, one packet of baking powder).
Stir, trying to move the spoon in one direction (clockwise or counterclockwise, whichever is more convenient for you). The dough turns out thick, it barely falls off the spoon.
Now place it on a greased and floured baking sheet or mold and try to distribute it evenly.
We cut the apples into beautiful slices, not very thin, about 4 - 5 mm thick, so that they remain juicy.
If you cut the apples too thin, they will become dry, like chips, when baked.
I usually take 3 apples, and then, if necessary, I cut more, see for yourself - according to the size of your fruit.
And now we lay all the plates slightly overlapping. This is very important, because our pie will rise, the dough will spread and all the apples will lie on top just as they should.
Next, we take walnuts, in large pieces, straight into whole quarters, and stick them under the apples, as if we were hiding them in the dough, and then we put almost every apple slice.
The more nuts, the tastier the pie, of course!
Next, sprinkle everything with sugar (you can use brown). Make, as it were, a whole layer of sugar, which in the oven will become caramel and especially sparkle in combination with sour apples and you will get a sweet and sour pleasant taste. Sprinkle cinnamon on top.
Place in an oven preheated to 180 degrees and bake for 30 - 40 minutes.
Or until done, which we check with a toothpick.
Do not cut the cake until it has cooled thoroughly!
This is how you get a very soft, tender, airy dough and a magical pie with apple caramel, cinnamon and walnuts - simply delicious!
This pie can be made with any fruit, especially seasonal ones, such as pears, plums, apricots, peaches or even cherries. Some people add raisins to the charlotte as a filling, and use honey instead of sugar.
Very tasty, airy apple charlotte
This recipe has two features that add incredible piquancy to the pie. It contains orange zest. The smell is amazing. To make the baking airy and the dough tender, add just 1 spoon of sour cream.
Required Products:
- 4 eggs;
- 4 large apples;
- 150 g sugar;
- 150 g flour;
- 1 packet of vanilla sugar;
- zest of one orange;
- 1 tbsp. l. sour cream (with a slide);
Sequence of actions: Remove the core with seeds from the fruit and cut into slices up to 0.5 cm wide. Beat the eggs with a mixer with granulated sugar and vanilla. Until a white, airy mass is obtained.
Add sour cream. Grate the orange zest. Sift the flour through a sieve.
Mix the dough carefully, rotating with a spatula in one direction. It is important to maintain the fluffiness and airiness of the dough texture. Lightly grease the paper at the bottom of the mold with oil. Place a layer of fruit pieces. Sprinkle them with cinnamon. Fill with dough. Using the dough mixture, we make a beautiful pattern on top with apple slices. Dip them a little into the dough.
We bake the product at 180 degrees. If the mold is 18 cm in diameter, then 30 minutes is enough.
Charlotte with condensed milk
Natural condensed milk cannot spoil the taste of apple charlotte. It’s worth trying to make this version of dessert. It is quite possible that for you this will be the most delicious charlotte with apples.
Set of ingredients:
- medium-sized apples – 5 pcs.;
- eggs – 4 pcs.;
- a teaspoon of baking powder;
- 2 tbsp. l. walnuts and seedless raisins;
- a glass of wheat flour;
- can of condensed milk;
- cinnamon to taste.
Dessert preparation steps:
- Using a whisk or mixer, beat the eggs with condensed milk.
- Pour sifted flour with baking powder into the fluffy mass. Mix well.
- Wash, dry with kitchen paper towel, peel and finely chop the apples.
- Chop the nuts a little.
- Line a 26 cm diameter mold with baking paper.
- First, lay out the apples, sprinkle raisins and nuts on top. Sprinkle with cinnamon if desired.
- Pour prepared batter over dry ingredients.
