Marinated tomatoes with onions for the winter without sterilization: my simple recipe for a 1 liter jar

I suggest you prepare excellent tomatoes and onions for the winter without sterilization, a simple recipe for which I got from a neighbor in the country. The tomatoes turn out sweet and sour, elastic and aromatic, just right in winter!

These marinated tomatoes with onions and sweet peppers are an easy-to-make and very tasty preparation for the winter. Each member of this delicious vegetable trio does not lose its bright taste, and at the same time, all the ingredients complement each other perfectly.

So, let's prepare:

  • tomatoes - at the rate of 300-500 g per liter jar (depending on the size of the tomatoes);
  • onions (I take half a head per jar);
  • sweet pepper (1 piece per jar);
  • dill umbrellas;
  • parsley;
  • cherry leaves;
  • garlic - 2-3 cloves;
  • spices (bay leaf, allspice, black pepper);
  • water;
  • salt - 1 tbsp. spoon:
  • sugar - 4 tbsp. spoons;
  • vinegar 9% - 70 ml per liter of water.

Tomatoes should be thoroughly washed, as well as other components of the preparation, otherwise there may be an unpleasant consequence - an “explosion” of a sealed jar. Pay special attention to the dill stems and parsley. Peel the pepper from seeds and divide into parts. Cut the onions into large segments.

Fill sterilized (steamed or oven) jars with herbs and spices. Divide the garlic cloves into two parts so that this ingredient is more willing to share its piquant taste with your neighbors. Parsley can be replaced with cilantro. The herb tarragon (tarragon) goes well with tomatoes.

At the next stage, fill the containers tightly with tomatoes, onion segments, and sweet peppers. Pour boiling water into the jars up to the top until the liquid covers all the ingredients. Drain the water after 15-20 minutes and repeat the procedure. This method of heat treatment allows you to keep the tomato skin intact - without cracks or tears.

While the jars with the workpiece are reheated, make the final filling - the marinade. For a liter of water you will need one tablespoon of salt and four tablespoons of sugar. The liquid must be boiled so that the ingredients are completely dissolved.

Add a measure of 9% vinegar to a boiling sugar-salt solution, the calculation is as follows: 70 ml per liter of liquid. Drain the water from the jars, then immediately fill the containers with the final filling. Vegetables must be completely covered with marinade.

Clogged jars should be turned over to ensure there are no leaks. Containers that are closed with a screw cap do not need to be turned over. Wrap the jars with the workpiece well in a thick cloth - a bath towel, a blanket. After a day, the workpiece can be moved to storage.
