The fact is that this variety of apples has very small fruits, which is why they are also called “paradise apples.” However, this does not in any way affect the taste of the fruit, but it plays a role in canning.

How to properly cook compote from ranetki for the winter

Sterilize the jars in a water bath or steamer, boil the lids for 5 minutes. Arrange the ranetki among the jars so that the apples take up approximately half of each jar. Boil more water and fill all the jars with ranetki to the top. Cover the jars with lids and let them sit for 5-10 minutes. Now pour the water back into the pans, add sugar to it, boil the water again, stirring until the sugar dissolves well. Fill the jars again, this time with sugar syrup. Roll up the jars with boiled lids, turn them upside down, and let them remain in this position for a day or two. Then you can turn them back over and store them indoors at room temperature for 3-5 years.

Whole ranetka jam

Sort the Ranetki and wash under running water. You can trim the tails of the apples a little, but cutting them off completely is not recommended. Each fruit must be pricked in several places with a sharpened match or toothpick. Place the apples in an enamel bowl.

Let's make sweet syrup. To do this, pour purified cool water (200 ml) into a saucepan, bring the liquid to a boil, then dissolve granulated sugar (1.3 kg) and citric acid (1/4 tsp) in it. Let the syrup simmer for a few minutes, remove it from the stove and strain through several layers of cheesecloth.

Pour the prepared “paradise” apples with hot sweet syrup, place the basin on the fire and cook its contents for 15 minutes. During the cooking process, it is not recommended to stir the apples under any circumstances, as otherwise they may fall apart, which will spoil the appearance of the finished jam. Remove the fruit and sugar mixture from the stove, cover the bowl with a clean kitchen towel and leave for 24 hours. After time has passed, place the jam on the stove again and cook for another 15 minutes.

In order to check the readiness of the ranetki jam, you need to take out one apple (preferably the largest one in size) and cut it into two halves with a sharp knife. If the flesh of the ranetka is soft and resembles marmalade, then our delicacy can be removed from the stove. Otherwise, it must be allowed to cool completely, and then put back on the fire for 10-15 minutes. Place the finished ranetka jam into jars and close them with metal lids. Store in a cellar or basement.

How to cook a delicious compote from ranetki

1. Pour water into a large saucepan and place on the stove. The water should boil.

2. While the water is boiling, prepare the ranetki. Rinse and remove damaged areas. You can leave the tails.

3. Wash and sterilize jars and lids thoroughly. I sterilize jars in the microwave. To do this, pour a little water (1-1.5 cm) into the bottom of the jar. I put a cotton napkin in the microwave and a jar of water on it. Small jars standing, large ones lying down. I set the power to 70 and the time: 0.5-1 liter jars = 3 minutes; 2-3 liter jars = 4 minutes.

4. Place the Ranetki in sterilized jars. 1/3 of the jar should be filled with ranetki, then the compote will have a rich taste.

5. Fill jars with ranetki with boiling water up to the neck, cover with lids and leave for 10-15 minutes. Be careful to check the jars thoroughly for cracks so that the glass does not burst from the boiling water. The jars should not be cold, this can also cause them to burst.

Then pour the syrup back into the pan. Add sugar at the rate of 1 cup per 3-liter jar. Bring the syrup to a boil again.

6. Fill the ranetki with sweet syrup and screw the jars. Please note that depending on the variety of ranetki, when interacting with boiling water, the skin of the fruit may burst. If you do not want this effect, cook compote from hard, juicy varieties of ranetki, rather than loose and crumbly ones. Although this does not really affect the taste of the compote.

Chokeberry fantasies

Although the apple drink is tasty, it is not very attractive in appearance - almost colorless, similar to water. In order to make its shade, and at the same time its taste, more rich and tart, you should pay attention to the recipe for compote of ranetki and chokeberry.

Ingredients:

  • 0.5 kg ranetki;
  • 0.1 kg of chokeberry berries;
  • 0.5 kg sugar;
  • 1 liter of water.

Preparation:

  1. As in other recipes, jars and lids are sterilized.
  2. Apples and berries are washed well, rotten fruits with wormholes and defects are removed.
  3. The chokeberry is blanched: placed on a sieve in boiling water for a couple of minutes.
  4. Berries and apples are placed in a jar.
  5. Bring the water to a boil, add sugar.
  6. Pour the finished syrup over the fruit and cover the jars with lids.
  7. The jars are turned over, insulated and left to cool.

Cooking method:

1. We wash the fruits well under warm running water (if you wish, you can cut the ranetki in half).

  • The jars are covered with lids and turned upside down.
