Zrazy are meat cutlets with a filling that can be vegetable, mushroom or egg. Today I will show you how to cook meat zrazy with egg filling. See the recipe!

Meat zrazy with a whole egg - a delicious step-by-step recipe

We can safely say that classic zrazy is prepared with egg filling. Ideally, they put a whole boiled egg in a minced cake and give it the shape of a “pot-bellied” cutlet.

However, it is not always possible to use a dozen or more of these fillers at once, so many people prefer to crumble this ingredient. And for children, you can generally use quail “cocks” and make meatball-sized pieces.

We will need:

  • Minced pork + beef – 800 gr.
  • Sunflower oil – 1 cup.
  • Boiled egg – 8 pcs.
  • Fresh egg – 2 pcs.
  • Onion – 1 pc.
  • Flour, breadcrumbs - 5 tbsp. l.
  • Ground black pepper, salt - to taste.

Preparation:

  1. Chop a medium-sized onion into very small pieces. Pour into a cup with fresh or defrosted minced meat. Break a fresh egg here.
  2. It is imperative to add salt and pepper so that the finished minced meat does not have a bland taste. Roll the resulting mass thoroughly until it becomes homogeneous and plastic.
  3. Remove the shell with a thin film from the cooled chicken “cocks”. To ensure that the meat shell stays well around this “filling” and does not spread, roll it in flour.
  4. Eggs for filling must be boiled. Fresh ones are definitely not suitable - they will either spread out or turn into a solid mess inside our koloboks after “stuffing”.
  5. You can start sculpting. Carefully pinch off a good lump of minced meat. Using striking movements, turn it into a dense cake larger than the width of your palm. Place an egg covered with a layer of flour in the middle.
  6. Raise the edges of the minced meat round and connect it so that it completely encircles the placed voluminous filling. Using patting movements, give the workpiece the shape of a cutlet.
  7. In order for us to still get a beautiful zraza, and not an ordinary table concoction, we should cover our workpiece with a layer of good breading.
  8. And in order for it to hold well, it is worth making it from three mutually supporting layers. The first will be flour - just roll in ground wheat flour so that the entire surface seems well powdered.
  9. Then you need to dip it in lezone. It sounds scary, but in fact it’s just a fresh egg beaten with a small pinch of salt.
  10. After this, roll the cutlet in breadcrumbs so that they create a nice dense layer of bread crumbs.
  11. All that remains is to repeat the entire process with all the remaining eggs and you can start frying.

Heat the sunflower oil in a deep frying pan and drop several pieces into it at once. Fry over medium heat on each side for about 5 minutes until a nice elastic crust appears and the meat around the egg is completely cooked.

As an option, you can prepare fried-baked zrazy. Fry them in a frying pan for a couple of minutes so that the breading layer sets, and then place them on a baking sheet and bake for about half an hour in the oven at 180 degrees.

The second option will take a little longer to cook, but the cutlets will be juicy and have a pleasant smell of baked meat.

Meat zrazy from beef chop with lentils

As mentioned earlier, the side dish is inside the cutlet and all that remains is to find it.

Required:

  • beef – 0.5 kg
  • vegetable broth - 0.5 cups
  • spices, salt
  • vegetable oil - 2-3 tbsp. l.

For filling:

  • lard - 250 g
  • boiled lentils – 250 g
  • egg - 1 pc.
  • onion - 1 pc.
  • spices, ginger, salt

Progress:

  1. First prepare the filling. To do this, finely chop the onion and bacon. Pass the boiled lentils through a meat grinder, add ginger and spices, then salt and mix.
  2. Cut the beef into thin but wide pieces. Beat flat pieces with a hammer, sprinkle with salt and spices, and rub everything with your hands.
  3. Place the filling on each piece of meat, then roll it tightly and tie with thread.
  4. Simmer the meat in a sealed container, adding fat and broth. Towards the end of the stew, add the remaining spices.
  5. Before serving the meat zrazy, remove the threads and place the cutlets with the filling on a dish.

Place potatoes on a plate for those who wish. Pleasant to eat!

Recipe 5: zrazy with mushrooms, cooked in the oven

Zrazy are the same meat or vegetable cutlets, only with filling inside. Most often they are fried in a frying pan in oil. Which is understandable - a minimum of hassle and a delicious dinner or main course for lunch is already ready. But there are other options, for example - do not fry, but bake meat zrazy with mushrooms and cheese in the oven. Make a filling of mushrooms and cheese, plus add herbs and fried onions - it will turn out both tasty and quite dietary compared to fried cutlets. And you don’t need to stand near the stove; the oven will bake everything itself, without your active participation.

Meat zrazy is usually baked in the oven without gravy; a detailed recipe with step-by-step photos will help you prepare the dish. If you are afraid of drying them out, pour a couple of tablespoons of water into the mold or add water/broth during cooking.

  • lean meat (pork and beef) – 500 g;
  • onions – 1 pc.;
  • egg – 1 pc.;
  • white or gray bread - 1 slice;
  • black pepper – 0.5 tsp;
  • paprika – 1 tsp;
  • leek – 1 stalk (or + 1 onion);
  • fresh champignons – 200 gr.;
  • hard cheese – 100 gr.;
  • vegetable oil – 2 tbsp;
  • salt - to taste.

Grind the meat in a meat grinder or blender. Grind the onion together with the meat.

Add egg, salt, pepper and paprika to the minced meat. If desired, you can flavor the minced meat with dried herbs or add finely chopped fresh herbs.

Knead the minced meat, combining all the components into a dense, viscous mass. We put it in the refrigerator to brew.

For the filling, chop the leek into thin rings or cut the onion into small cubes. Finely chop the mushrooms.

First fry the onion in oil until soft, then add the mushrooms, salt and pepper. Simmer for a few minutes until the juice has evaporated from the mushrooms.

We form a round or oval piece from the minced meat. We press it in the middle, make a depression in which we place a spoonful of mushrooms fried with onions and pieces of hard cheese.

We wrap the edges free from the filling so as to completely cover the mushrooms and cheese. If there are open areas left, add some minced meat and immediately form it into a round or oblong shape.

Grease the bottom of a baking sheet or baking dish with oil. We lay out the zrazy, leaving a little space between the blanks. Pour in two or three tablespoons of water and place in a hot oven at 200 degrees. Bake for 30-35 minutes until done.

We serve meat zrazy with fresh vegetables as an independent dish or complement it with any side dish at our discretion.

Zrazy beef chops stuffed with plums

I advise you to try making this recipe for cutlets. Meat zrazy stuffed with plums is a rare method and you should know it.

Required:

  • beef - 800 g
  • fat for frying - 40 g
  • vegetable oil
  • salt, spices - to taste

For filling:

  • dried plums - 200 g
  • onion - 3-4 pcs.
  • spices: nutmeg, cinnamon, pepper, cloves
  • vegetable oil

Cooking method:

  1. First, prepare the minced meat (filling). To do this, fill the plums with water to swell them. Then cut the plums into slices. Chop the onion finely and sauté in vegetable oil. Place everything in a cup, add ground spices and stir. The filling is ready.
  2. Cut the beef meat into slices across the grain, then pound it and sprinkle with seasoned salt.

Recipe 6: how to deliciously cook zrazy in the oven

This chicken fillet dish will appeal to children and adults.

  • chicken fillet 400 g
  • onion 1 piece
  • starch 1 tsp.
  • mayonnaise 1 tbsp.
  • hard cheese 200 g
  • breadcrumbs to taste

The breast can be ground in a food processor, passed through a meat grinder or finely chopped, add onion, starch and mayonnaise to the resulting minced meat. Salt and pepper to taste.

Form zrazy, put a piece of cheese inside each. Roll the finished zrazy in breadcrumbs.

The resulting zrazy can be fried in vegetable oil or baked in the oven.

Required Products:

  • minced meat - 700 g
  • milk - 200 ml
  • white loaf - 150 g
  • raw egg - 1 pc.
  • garlic - 3 cloves
  • salt - 1 tsp.
  • ground black pepper - 0.5 tsp.

For filling:

  • onions - 2 pcs.
  • hard-boiled eggs - 5 pcs.
  • frying oil, salt, pepper

Preparation:

  1. Start by finely chopping the onion and frying it in a frying pan until light golden brown.
  2. Finely chop the hard-boiled eggs and mix with the fried onions. Add salt and pepper, so the filling is ready for zraz.
  3. Tear pieces of white loaf into pieces with your hands and pour milk to make it soft. Let it sit in this state for a while.
  4. Break one egg into the prepared minced meat, add salt and pepper and add slightly squeezed pieces of the soaked loaf. Mix all ingredients with your hands. Thus, the base for meat zraza is ready.
  5. Start forming cutlets with filling. To do this, take some of the minced meat in your palm. Roll it into a ball and press it with your fingers and crush it into a flat cake. Place the prepared egg and onion filling on the flatbread.
  6. Using your fingers, secure the edges of the meat patty. In this way, form all the meat zrazy stuffed with eggs and onions.
  7. Coat the bottom of the baking sheet with vegetable oil and place all the meat pieces.
  8. Place the baking sheet with the preparations in the oven for 30-40 minutes and bake at 180 degrees C.

Meat zrazy with mushrooms

Zrazy with mushrooms is already a delicacy, so why not prepare it for the holiday? It is quite possible, you just have to want it and the festive dish will delight all guests. As for the mushroom filling, it can be prepared in the evening, and the next day it will be faster to complete the culinary process.

Components in zrazy with mushrooms

  • minced meat - 1,400 kilograms;
  • egg - two pieces;
  • white loaf - 2 pieces;
  • onions - three heads;
  • mushrooms - 350-400 grams;
  • cold water - 50 milliliters;
  • vegetable oil - as needed;
  • salt and pepper - optional.

According to the recipe for meat zraza with mushrooms, we prepare it like this:

For a festive dish, it is advisable to prepare the cutlet mass with less bread content. You will also need meat pulp that contains less connective tissue, then they will be softer and much more tender.

Add chopped raw onion into the prepared minced meat, beat in the eggs, add salt and pepper and pour in a little cold water from the refrigerator.

Mix everything effectively and set aside.

Now let's prepare the mushroom filling. Porcini mushrooms, boletuses, chanterelles, royal champignons - portobello are perfect for mushrooms. All mushrooms, except champignons, must be boiled, cooled, chopped, and then fried in vegetable oil. Add fried onions to this, season everything with spices and mix.

Then wet your hands in water and divide the minced meat into equal parts. Form a flat cake and place minced mushrooms on it as needed, join the edges, giving the appropriate shape.

Roll in flour or a mixture of flour and breadcrumbs.

Fry in a heated frying pan using vegetable oil and fry on both sides under a closed lid.

Serve the prepared zrazy hot and with a sophisticated side dish: fried potatoes and vegetable salad.

Meat zrazy with cheese turns out very juicy, because fresh tomatoes and herbs are added to the filling. This recipe suggests frying them in a frying pan, but if you want to make the dish healthier, bake it in the oven or use a double boiler for cooking. Cutlets stuffed with melted hot cheese and tomatoes will appeal not only to adults, but also to little gourmets.

Ingredients:

  • pork – 100 g;
  • flour;
  • beef – 150 g;
  • garlic – 1 clove;
  • egg yolk – 1 pc.;
  • dill - half a bunch;
  • ginger - half a teaspoon;
  • tomato – 1 medium;
  • cheese – 60 g;
  • salt.

Cooking method:

  1. Make minced meat from two types of meat and bread, previously filled with milk. Add the yolk, ground ginger, and salt.
  2. Mix chopped tomato with chopped herbs, crushed garlic and grated cheese.

Potato zrazy with meat, in my opinion, is the best combination of everyone’s favorite potatoes and delicious meat. Of course, you can serve just mashed potatoes with goulash, but you must admit that there is something different from standard food that is much more interesting.

  • Potatoes - 1 kg
  • Minced pork – 0.5 kg
  • Onions - 2 pcs.
  • Salt - to taste
  • Ground pepper - to taste
  • Flour - 250 grams
  • Butter - 50 grams
  • Vegetable oil for frying - 50 ml
  • Sour cream – 100 ml

Boil the peeled potatoes in salted water until tender. Drain the water and make a puree by adding butter to the potatoes.

Fry the minced pork in a frying pan until half cooked (about 10-15 minutes), add finely chopped onions and fry everything together for another 10 minutes.

Add 150 grams of flour to the cooled puree and knead the dough. Do not add eggs, sour cream or even more oil to potatoes. In this case, the puree can become very liquid and it will be very difficult to form zrazy out of it. Sprinkle the board with the remaining flour, grease your hands with vegetable oil and roll out round cakes. Place 1-2 teaspoons of minced meat in the center of the flatbread.

Form into a neat patty and pinch the edges.

Fry the potato zrazy in a frying pan for 2-3 minutes on each side until a beautiful golden crust appears. It is best to serve hot, adding a tablespoon of sour cream to each serving.

Zrazy with rice

It is recommended to serve them with tomato or cream sauce and vegetables. You can also add a boiled egg, cut into cubes, into the filling, but then you should add a little less cereal than indicated in the recipe.

Ingredients:

  • minced meat – 750 g;
  • eggs – 1 whole and 1 yolk;
  • vegetable oil – 120 ml;
  • salt – 1.5 tbsp. l.;
  • dried horseradish - two pinches;
  • breadcrumbs – 120 g;
  • black pepper – a couple of pinches;
  • long rice - 7.5 tbsp. l.;
  • milk – 150 ml;
  • white bread – 150 g;
  • onion – 150 g.

Cooking method:

  1. Grind bread without crusts, pour milk.
  2. Chop the onion and fry in a little oil. Mix with boiled rice, salt and pepper.
  3. Add egg, yolk, bread to minced meat. Salt, pepper, add horseradish.
  4. Make cakes from minced meat. Place a little rice in the center and form into cutlets. Bread in breadcrumbs and fry in vegetable oil on both sides.

Chicken liver filling

We need:

  • 200 g chicken liver (beef liver is possible)
  • 1 piece onion, large size
  • 2 tbsp. vegetable oil
  • salt, pepper to taste

Preparation:

  1. Chop the onion very finely and fry in a frying pan with vegetable oil.
  2. Grind the chicken liver through a meat grinder, add to the onion and simmer until the liquid evaporates. Let cool.
  3. We form zrazy and bread them first in flour, then in egg and breadcrumbs. Place the formed products in the refrigerator for 20 minutes and then fry in a frying pan.

Recipe 2, step by step: meat zrazy in the oven

  • Minced pork and beef 800 g
  • Onion 1 pc.
  • Raw chicken egg 1 pc.
  • Salt, pepper to taste
  • Boiled eggs 2-3 pcs.
  • Greens (dill, parsley, green onion) bunch
  • Vegetable oil for greasing the mold

In principle, any minced meat is suitable for preparing zraz. I prefer pork and beef for this dish. You can buy it in the store, or prepare it yourself. Take 500 g of pork and 300 g of beef and grind in a meat grinder. Add the onion to the minced meat, also passed through a meat grinder. Salt and pepper to taste, mix the minced meat thoroughly.

Beat the egg into the minced meat. Mix the minced meat well.

Chop the eggs and herbs.

Salt, pepper and mix the filling.

We take some minced meat and form it into a small flat cake. Place some filling on the flatbread.

We carefully pinch the edges of the cake so that the filling does not fall out.

Line a baking tray with baking foil, grease it with vegetable oil and place zrazy on it.

Budget-friendly liver filling with mushrooms

We need:

  • 300 g boiled lungs
  • 50 g boiled heart
  • 50 g fresh lard
  • 100 g boiled mushrooms
  • salt, pepper to taste

Preparation:

  1. Grind the lungs, heart and lard in a meat grinder. Salt and pepper.
  2. Place the chopped mushrooms in a frying pan and cook until the liquid evaporates.
  3. Mix the liver with mushrooms and stir. Taste for salt and add more salt if necessary. The filling is ready.

Secrets of preparing and processing minced meat

  1. Ground meat. It is the minced meat that you should pay special attention to if it is bought in a store. In this case, you need to carefully read the composition and choose the most natural product presented in the store. If each of the minced meats presented contains multiple additives and, especially, dyes, then you should refuse such a product and visit another store. You should not save on this product, since the taste of the prepared meat dish will directly depend on it. If minced meat is prepared at home, then it is better to choose beef or fatty pork, this is the best meat for preparing such a dish. You should not choose durum meat, as such a dish will not be juicy and appetizing. When processing, it is recommended to grind the meat twice so that all remaining pieces are crushed and the mass is homogeneous.
  2. Eggs. For some reason, many recipes lack this ingredient, although the softness of the final dish depends on it. Eggs will also help give the zrazas a permanent shape; they will not crumble right in the pan and, therefore, there will be no pieces left in the oil that burn and spoil the taste of the dish.
  3. Onion. Onions should also be given attention, since the softness of the minced meat and its juiciness will depend on its condition. In order for the finished dish to be softer and tastier, it is necessary to fry the onion a little, since during frying the onion itself does not have time to fully cook and turns out to be very tough and spoils the consistency of the minced meat. You can also grind the onion along with the minced meat in a meat grinder, thereby reducing its size and roughly matching it with the overall consistency of the minced meat.
  4. Bread. Bread is also an important component that should be part of this dish; it also affects the taste of the product. Many people think that bread is added to save on meat, but this is far from true. Without adding this ingredient, the zrazy will turn out more like lula kebab than juicy and soft meat zrazy. It is best to soak the bread with milk, but you can also use water if you don’t really like the taste of milk.

The most important thing is to maintain the correct proportions when preparing, otherwise the taste and overall consistency will greatly deteriorate. Next, you need to properly fry the zrazy so as not to deteriorate the taste at this stage of preparing dishes using minced meat.
