Preparation for creating a crispy crust
This extraordinary treat is referred to as “gratens”. The main feature of such homemade dishes is the crispy crust.
For it to have the correct structure, it is necessary:
- melt 50 g butter in a deep frying pan;
- fry finely chopped onion (1-2 pieces) and young garlic (1 stalk);
- add 2 tbsp. l Dijon mustard;
- add fresh white bread crumbs (300-400 g);
- Bring the resulting mass to a golden color, which will take up to 8-10 minutes.
When the prepared product has cooled, grate Parmesan cheese into it. Of course, you can use other hard cheese. However, this particular variety of fermented milk product will successfully complement the inflorescences of tender cabbage.

Easy Frozen Broccoli Casserole with Egg, Ham and Cheese
We all love this casserole very much. It is juicy, tender, very tasty))) Yesterday at dinner we enjoyed this wonderful dish. Join us too!!!
Ingredients:
- Cauliflower (frozen) - 1 package.
- Broccoli (frozen) - 1 package.
- Ham (boiled) - 150 g
- Chicken egg - 3 pcs
- Cottage cheese (fat) - 125 g
- Milk - 300 g
- Hard cheese (emmental type) - 80 g
- Greens (spicy)
- Salt
- Black pepper
How to cook:
Place the cabbage individually in boiling salted water, bring to a boil, boil for 2-3 minutes, drain and immediately cool the cabbage under running cold water. Let the water drain.
Chop the ham very finely. Grate the cheese on a coarse grater. I had leeks in the refrigerator. The recipe does not include onions, but this time I decided to experiment and add onions to the casserole. I cut it into thin half rings.
Divide the cooled cabbage into small florets and mix.
Add ham.
Place the vegetable mixture in a greased pan.
Beat the eggs.
Add cottage cheese, stir. Then dilute the mixture with milk.
Add finely chopped herbs of your choice. Season the mixture and add salt.
Pour the omelette mixture evenly over our casserole.
Sprinkle with grated cheese. I didn’t find Emmental, so I took Parmesan.
Place the casserole in the oven. And here, I must confess to you, an incident occurred. I’ve been making this casserole for many years, already automatically... I put it in the oven, turned around and... I saw on the table a bowl with chopped leeks ( ( ( That’s what automaticity means! I forgot ( ( ( I had to urgently figure out a salad so that the onions wouldn’t disappeared. You need to bake our yummy food at 200*C for about 40 minutes. And then take it out, cool it slightly, put it on plates and enjoy, enjoy, enjoy)

And I just pour the omelette mixture over the cauliflower (in the proportion of 1 egg to 50 ml of milk). It turns out very soft and airy. For the crust, you can sprinkle crumbs on top, and you can also add pumpkin, and it turns out very tasty. Answer:
Tatyana, thanks for the advice!

Please tell me, is it possible to replace cauliflower with something else? It is no longer sold here... alas, can cream be replaced with milk? Answer:
Valeria, you can take frozen cabbage, it will turn out no worse than fresh. Cream can be replaced with low-fat sour cream.

Oh, our family recipe is somewhat similar. Just make the zucchini, don’t boil it first, place it in layers in circles in a mold, grate each layer with cheese, maybe garlic, and then fill it with a mash of a couple of eggs, sour cream, salt and pepper. True, now I’m the only one who eats this. I'll try the cabbage too.
Answer
: I bake almost all my vegetables this way. And pasta too. Yesterday's pasta is not very appetizing. But if you put them in a mold, fill them with sauce and bake them, then this is a completely different story.

I love this casserole very much) the recipe is excellent! But I never boil cabbage for more than 2-3 minutes before baking, especially broccoli - and 10(!) minutes is barbaric, because the casserole still needs to bake for 30 minutes. It is very easy to turn something useful into filler.
Answer
: I used frozen. If you throw it into boiling water, then it takes about 7-8 minutes until it starts boiling again. As a result, the cabbage is cooked for the same 2-3 minutes. And with a fresh one, you’re right, a few minutes are enough.

Oh, this is mine! Winter white cabbage is simply impossible, no matter how much you want, but I can easily even gnaw on cauliflower and broccoli, as well as Brussels sprouts frozen))) I write less often now because I’ve gone into Montignac recipes, but this casserole fits in perfectly, only flour should be replaced with barley or chickpea flour. I’m especially glad that my man doesn’t recognize these types of cabbage even in pureed soup)))
Answer
: Masha, good luck with your diet! Although you are so beautiful :)
Elena: | April 27th, 2012 | 5:51 pm
Amazing. I'll try it in the coming days. Mine all love broccoli and cauliflower. So it should go off with a bang.
Olli: | April 27th, 2012 | 11:41 am
Ay, thanks! Side dishes are my problem too. No, theoretically there seem to be a lot of them, but in practice... Alas! In my cookbook, the side dishes section is depressingly small, now I’ll add more.
Answer
: Here, too, theory and practice diverge. I myself know that I need more vegetables in my diet, but preparing them so that everyone likes it is a very difficult task.

A wonderful combination of cauliflower and cream. I can imagine the juiciness and tenderness of the dish. Thank you.
Answer
: exactly like that, tender and juicy. I'm not a big fan of cauliflower and broccoli. But in this form it’s very tasty.
Broccoli casserole with cheese and eggs in the oven is not only very tasty and tender, but also quite nutritious and, of course, healthy. This recipe will be an excellent solution not only for breakfast, but also for a light lunch or dinner. Even small children enjoy eating this dish, so I don’t use anything else except salt, but you can add any favorite spices to your taste. Of course, not everyone likes cabbage, but perhaps even those who don’t particularly respect it will like my recipe. The broccoli turns out very tender, and in combination with cheese it tastes simply great in my opinion. If desired, milk can be replaced with cream to achieve a creamier taste that will come to the fore. This amount of ingredients yields 2-3 servings; if desired, increase or decrease the amount of ingredients in proportion to the number of eaters in your family. Preparing the dish is not at all difficult, I would even say that the recipe is as simple as possible, so even a beginner in the kitchen can handle it! I advise you to try cooking and add variety to your daily diet!
