  6. Place the pan on the stove, bring the marinade to a boil, and simmer for 5 minutes.
  7. Transfer the salad into sterilized jars, roll up the lids, turn over, wrap the jars and leave to cool.

Marinate white onions with water and 9% vinegar - for salads and snacks

Required:

  • fresh onion – 250 g (2-3 onions);
  • vinegar 9% (any) – 7 tbsp. l.;
  • sugar – 3 tbsp. l.;
  • table or sea salt - 0.5 tbsp. l.;
  • cold drinking water – 250 ml.

How to do:

  1. Pour sugar and salt into one bowl, add vinegar and water. Stir with a whisk or spoon until smooth. You can also mix the marinade components in a jar, close it tightly with a lid and shake vigorously so that the dry ingredients dissolve faster.
  2. Chop the peeled and washed onion as you like. For puff salads, it is usually chopped into cubes; for other dishes or serving as an appetizer with meat, it can be chopped larger - into rings or half rings.
  3. All that remains is to immerse the slices in the resulting brine, seal it tightly and refrigerate for 30 minutes.

After half an hour, the snack is completely ready to eat. You can store it in the marinade or drain the liquid.

With mustard

This onion loses its bitterness and acquires a delicate taste and aroma. It is suitable for adding to salads, decorating dishes, or as an independent snack.

Recipe with wine vinegar and soy sauce

How to pickle onions for salad not only quickly and tasty, but also beautifully? Fill it with reddish, aromatic vinegar! Firstly, the appetizer will not be as spicy as with the table one (9%), and secondly, it will have an interesting “smoked” color. For 3 onions you need to take 4 tablespoons of wine vinegar, 3 tablespoons of soy sauce, 0.5 teaspoon of salt (the latter is not necessary, because the sauce is already salty). NB! What salad goes best with quick pickled onions in vinegar? Personally, I think it should be something like Greek. That is: lettuce, fresh cucumbers, tomatoes, bell peppers, a couple of olives, olive oil + balsamic (but very little of the latter, because the onion will also give a lot of its “vinegarity” to the vegetables).

Is it possible to pickle red onions?

And how! You can use any of the recipes described above, except add a little less sugar, because this vegetable itself has a slightly sweet taste. By the way, there are recipes that will make your onions turn red, even if they turned out completely white in the garden.

False red onion (with beets), quick recipe

You will need boiled beets. Place the onions in a wide glass bowl, alternating balls of onion rings with balls of thinly sliced ​​beets (you can also add garlic). Pour boiling marinade: 50 ml of 6% vinegar (say, apple cider vinegar), 250 ml of water, 2 teaspoons of sugar, a spoonful of salt, spices - say, thyme, allspice, chili pepper, dill. Press down with a press. It is advisable to marinate this appetizer longer (even for a day), but what a beauty it will turn out!

Korean method (kimchi)

An option for those who are not lazy and are ready to bother for the sake of an interesting culinary experiment. So! Make a “paste” from 200 ml of water and 1 spoon of rice flour (this is not difficult - the water is heated over low heat, without reaching a boil). Grate a couple of cloves of garlic, a small piece of fresh ginger, sprinkle in a little pepper (Koreans use kochukaru), sugar, and sesame seeds. The final touch is 100 ml of soy sauce.
