Light banana cream with condensed milk

  • Condensed milk – 150 ml
  • Natural yogurt without additives - 200 ml
  • Gelatin – 10 g

Making Banana Cream

  1. Fill the gelatin with water in an amount 2 times less than indicated in the instructions.
  2. We bake both bananas in the oven - this way we get a sweeter and airier cream without additional sweeteners.
  3. As soon as the fruits have cooled, beat them with condensed milk into a homogeneous mass. Gradually pour in 150 g of yogurt and mix with it.
  4. Dissolve the gelatin in a water bath and, without bringing it to a boil, remove from the heat.
  5. Pour in a thin stream into the remaining 50 ml of yogurt, mix with a spoon and also carefully add to the banana mixture. We won't use a mixer anymore - we mix the gelatin into the cream with a spoon or fork.

It is advisable to use the topping immediately on the cake or pastries. Its liquid consistency will allow the cakes to be instantly soaked, and the gelatin in the composition will harden after a while and the cake will not become soggy, but will hold its shape perfectly.

With added cottage cheese

Cottage cheese - banana cream is an ideal option for those who care about their figure, but at the same time cannot deny themselves the pleasure of eating something sweet.

Required Products:

  • 150 milliliters of kefir;
  • 0.2 kg cottage cheese;
  • spoon of lemon juice;
  • 70 grams of powdered sugar;
  • 200 grams of bananas;
  • 10 grams of lemon zest.

Cooking process:

  1. Mash the cottage cheese a little with a fork, pour in kefir, and add the rest of the ingredients listed in the list. Please note that bananas need to be cut into small pieces.

Sour cream and banana cream turns out to be very satisfying, but at the same time light. It requires only the simplest ingredients, but the taste comes out very rich, although it will take a lot of time.

Required Products:

  • 300 grams of ripe bananas;
  • about 400 grams of sour cream, always full-fat;
  • two spoons of lemon juice;
  • 150 grams of powdered sugar.

Cooking process:

  1. Place the sour cream in cheesecloth, tie the top so that something like a bag is formed, hang it up and place a bowl under it to allow the liquid to drain. Leave overnight or approximately 8-10 hours.
  2. Peel the fruits, mash them with your hands or a fork, pour the puree with lemon juice and sprinkle with powder, mix.
  3. When the allotted time for sour cream has passed, combine it with bananas and beat well with a mixer.
  4. Leave for at least an hour to cool, it is advisable to put it in the refrigerator so that the sour cream does not spoil and the cream is ready for use. But before that you need to beat it again.

Cream made from condensed milk, butter and bananas

  • Let a 200 g stick of butter sit at room temperature for at least half an hour until it softens.
  • Meanwhile, use an immersion blender to beat 2 ripe bananas into a homogeneous mass, then pour in 200 g of liquid condensed milk. Mix everything either with a blender or with a mixer at high speed.
  • In a separate bowl, beat the butter at low speed until fluffy.

There is no need to be overzealous, as we can break it into fractions - the liquid will separate, the oil will form lumps, and will no longer be suitable for cream.

  • Now pour the mixture of bananas and condensed milk into the oil, still continuing to whisk it slowly. When the consistency becomes completely homogeneous, the cream can be considered ready.

To make it more convenient to use for decorating cakes and pastries, we put it in the refrigerator and only after half an hour, when it has cooled properly, put it in a syringe. Cold buttercream patterns come out clear and hold their shape well.

How to replace oil

If such a cream seems greasy, use the same amount of sour cream instead of butter. You don’t have to be afraid of breaking it, so feel free to whisk everything together - 200 g of condensed milk, 2 bananas and 200 ml of sour cream.

Fat content in this case can be adjusted at your discretion. Add vanillin to the mixture at the tip of a knife, beat again and you’re done! Any cake with such a layer will be delicious.
