Just recently I came across an interesting version of kharcho soup. I can’t say that I like the classic version, but a free look at this dish seemed more interesting to me. I'm sharing the recipe!

How to cook “Kharcho soup with meatballs”

Prepare the necessary ingredients.

Prepare the minced meat. Season with salt and pepper. Stir in a bowl and tap the bottom of the bowl several times.

Form into meatballs slightly smaller than a walnut. Place it on the board.

Place the meatballs in boiling water and cook until tender.

Remove the meatballs from the broth. Strain the broth.

Finely chop the onion and saute it until transparent. Add finely grated carrots and sauté over low heat until the carrots are tender.

Cut the tomatoes into small cubes and add to the vegetables. Keep on fire for 2-3 minutes, stirring.

In a separate bowl, mix 1/2 bunch of chopped cilantro, nuts, chopped garlic. Grind thoroughly using a spoon or pestle.

Bring the broth to a boil. Add rice and cook until cereal is cooked.

Once the rice is cooked, add the sautéed vegetables and meatballs and bring to a boil.

Add prepared cilantro, nuts and garlic. Stir and bring to a boil.

Remove from heat, cover and let steep for 20 minutes. Afterwards you can serve the dish to the table.

Serve the soup with herbs and adjika. Bon appetit!

Preparation

I passed the meat through a large meat grinder so that the pieces of minced meat could be felt more clearly in the soup. To prepare soup a la kharcho, I used mixed minced pork and beef. Before grinding, the meat must be washed, de-veined and lightly dried with a towel.

Boil water (2 liters) in a saucepan and slowly add the ground meat into it so that everything does not stick together in one lump, do this gradually.

Skim off the foam when the water returns to a boil.

Cook for 5 minutes, add washed rice or, like me, steamed rice. Steamed rice does not need to be washed, which is very convenient. Stir the soup to prevent the cereal from sticking.

Kharcho soup for diabetics

Diabetes is a fairly common disease and requires a strict diet. What should people with high sugar do in this case? For this purpose, a special recipe for kharcho was created, which does not indicate the effect or course of the disease.

Ingredients:

  • Lean beef (preferably chicken) - 500 gr.
  • Pearl barley - 1/2 cup
  • Onion - 2 pcs.
  • Olive oil - 15 ml.
  • Tomatoes - 3 pcs.
  • Khmeli-suneli - 1 tsp
  • Ground black pepper - to taste
  • Salt - to taste
  • Lemon - 1 pc.

Preparation:

Cut the meat into small pieces, rinse, add water, put on the stove, cook for about 1.5 hours.

Without wasting time, fry the onion rings in olive oil.

Rinse the pearl barley and cook for 15-20 minutes.

Scald the tomatoes with boiling water, remove the peel, and fry until smooth.

To prevent the tomatoes from burning, add a small amount of water

At the end add suneli hops.

Pour the resulting paste into the broth along with the fried onions.

At the end of cooking, add garlic and a few slices of lemon, this will give it a characteristic sour taste.

Leave to cook for another 7 minutes. Salt and pepper to taste.

Step 1: prepare the minced meat.

Tips for the recipe:

– Instead of fresh tomatoes, you can add tomato paste and a little adjika to the vegetable dressing.

Step-by-step recipe: Soup with meatballs and dumplings

This recipe is rich and incredibly tasty, as it combines almost two soups in one. With such a dish, no one in your family will go hungry, and your friends will envy your culinary skills.

Ingredients:

  • Minced meat - 400 gr
  • Bay leaf - 2-3 pcs.
  • Egg - 1 pc.
  • Salt - To taste
  • Medium bulbs - 2 pcs.
  • Carrots - 1 piece
  • Potatoes - 2-3 pieces
  • Flour - 3 tbsp. l
  • Black peppercorns

Recipe:

1. First of all, fill the pan with water and place it on the stove, turn on the gas. Let's cut the potatoes into cubes ourselves. When the water in the pan boils, put the chopped root vegetable into it.

2. Let's start making meatballs, or rather preparing minced meat for them. Grate or finely chop the onion. It will give juice, which will increase the taste of the minced meat. Add the onion to the minced meat, add salt and pepper to taste, then mix thoroughly.

3. It's time to form the meatballs. Wet our hands with some water and take a teaspoon. Using it, we take part of the minced meat and roll it into a lump (See photo).

4. We will add meatballs to the future soup. Cover with a lid and leave to cook.

5. While the potatoes and meatballs are cooking, you need to prepare the dumplings. Take one egg and break it into a bowl, add salt, as well as 2 tbsp. l flour. Using a whisk or fork, stir. The dough should look like in the photo. Make sure there are no lumps.

6. Add dumplings to the soup. Take about half a teaspoon of dough and throw it into the pan, repeat the cycle with the remaining dough. After a couple of minutes, you can gently stir the soup. The dumplings should gain volume.

7. Meatball soup is not complete without frying, just like any other soup. Let's prepare the carrots and onions. Grate the carrots and cut the onion into small cubes. Place the vegetables in a preheated greased frying pan. Fry the onion until it softens, then add the carrots and fry for a few more minutes.

8. Place the roast into the soup. Leave to cook until the vegetables are fully cooked.

The meatball and dumpling soup is almost ready. All that remains is to season it with herbs and add the necessary spices, guided by your own taste. We hope that the step-by-step recipe with photos was useful for you!

Soup with meatballs and rice - step by step recipe

If you need to whip up a hearty soup, this recipe will come in handy. Of course, rice is not the only grain that can be used in such a soup. You can combine and experiment as much as you like; this won’t ruin a soup like this.

Note : You can use almost any minced meat to make soup with meatballs: chicken, beef, pork or even fish. You can combine it, for example, mix beef and pork, you get a completely different taste.

Ingredients:

  • Potatoes 500 gr
  • Tomato paste 1 tsp
  • Minced meat 500 gr
  • Dill bunch
  • Carrot 1 piece
  • Bay leaf 2 pieces
  • Onions 2 pcs
  • Rice 60 gr
  • Pepper To taste
  • Salt To taste

Step-by-step recipe with photos:

1. Let's start by putting a two-liter saucepan on the fire and filling it with water. Cut the potatoes into cubes and place them in the pan. Cover with a lid and wait for it to boil.

2. At the second stage, prepare the minced meat. Chop the onion and place it in a bowl, and add the minced meat here. Add pepper and salt, then stir.

3. Take a teaspoon, scoop up the minced meat and form meatballs by rolling the meat into a ball.

4. When the potatoes boil, remove the foam, if any has formed, and send the rice to cook with it. 5-8 minutes will be enough.

5. Salt the soup a little and start laying out the meatballs. If your minced meat is dense and you are sure that it will not fall apart. You can stir the soup immediately after sending the meatballs. Otherwise, you need to squeeze until the water boils.

6. Make frying from onions and carrots. In the standard way, chop a couple of onions and three carrots. Place the onion in a frying pan, after greasing it with oil and heating it to the required temperature. After a few minutes, add the carrots and tomato paste and fry until tender.

The soup with meatballs and rice is almost ready, add the fry and stir. Sprinkle with dry dill, add 2 bay leaves and cover with a lid (photo).

The soup should sit for 10-15 minutes, after which you can pour it into cups and start eating dinner or lunch. Bon appetit!

Kharcho with cheese

This version of kharcho soup has an exquisite taste. It goes well with white wine. Not so difficult to prepare, kharcho with cheese will suit any home kitchen.

Ingredients:

  • Chicken legs - 2 pcs.
  • Processed cheese - 1 pc.
  • Rice - 1/2 cup
  • Greens (cilantro, parsley, coriander)
  • Onion - 1 pc.
  • Carrots - 1 pc.
  • Potatoes - 2 pcs.
  • Salt to taste

Preparation:

We set the chicken to cook, after washing it. After half an hour of cooking, you need to remove the bone from it and cut into portions.

Rice should be placed in the prepared broth, and after a while, chopped carrots, onions, and potatoes.

Before the potatoes are ready, you should throw in the chicken, melted cheese, herbs and salt.

Soup with rice and minced meat

First courses should always be in every person’s diet. I offer you a recipe for a thick, very tasty and satisfying first course that will not leave anyone indifferent. Soup with rice and minced meat will always decorate your dinner table. It is very easy to prepare. In addition, this delicious first dish not only has an amazing taste, but also an indescribable aroma.
