Ingredients
- minced chicken - 400 g;
- white cabbage (fresh) - 250 g;
- potatoes – 3 pcs. (350 g);
- sauerkraut – 150 g;
- onion – 1 pc. (110 g);
- carrots – 1 pc. (60 g);
- garlic – 1-2 cloves (3 g);
- bay leaf – 1 pc.;
- tomatoes - 2 pcs. (130 g);
- tomato paste – 25 g;
- dry bread – 20 g;
- chicken egg – 1 pc. (55 g);
- vegetable oil – 2 tbsp. l. (32 g);
- ground black pepper - a pinch;
- dill – 2-3 sprigs;
- salt – ½ tbsp. l. (15 g);
- water – 1.5 l.
Preparation
- 1 Place the necessary ingredients on the table according to the list. To prepare cabbage soup you will need the following products: minced chicken, a slice of dry bread, 1 small chicken egg, sauerkraut, fresh cabbage, carrots, onions, refined vegetable oil, tomatoes or tomato, tomato paste, bay leaf, ground black pepper, potatoes, garlic , salt, dill and water. You may need 1 more tbsp. l. semolina.
- 2Pour 1 tbsp into the pan. l. vegetable oil, then put it on fire. Next, after squeezing the sauerkraut from the brine, place it in a frying pan heated with oil. Now fry the sauerkraut, stirring, for 5-7 minutes. Then, adding a little water, cover with a lid and simmer until the cabbage is soft for another 7-10 minutes.
- 3While the cabbage is stewing, put a saucepan with 1.5 liters of water on the fire. Peel the potato tubers, rinse them with cool water, and cut them into arbitrary small pieces.
- 4 Place the potatoes in a pan of boiling water.
- 5 Salt the water that has boiled again with the potatoes according to the recipe or to your taste, cook until half cooked for 10 minutes.
- 6Now we are preparing the frying for the cabbage soup. We clean the onion. Cut off 1/3 of it and put it aside for now (this part will go into minced meat). Now cut the rest of the onion into small pieces. We peel the carrot root, wash it, and chop it using a large-mesh grater.
- 7Heat 1 tbsp in a frying pan. l. refined sunflower oil, fry the onion and carrots over medium heat for 3 minutes. Stir the vegetables until they fry evenly.
- 8 Carefully remove the skin from the tomatoes and then grate them. In winter, you can use tomato juice instead of fresh tomatoes.
- 9Pour the tomato mixture into the roasting pan and stir. Simmer the roast with tomatoes over low heat for 2-3 minutes.
- 10Add tomato paste. After stirring, simmer for another 1-2 minutes and turn off the heat.
- 11When the potatoes are almost cooked, add stewed sauerkraut to the broth with potatoes and cook for 8 minutes.
- 12While the cabbage soup is boiling, we make meatballs. Soak a slice of dry white bread in warm water or milk. Then, after squeezing the bread, add it to the minced chicken. We also add a small raw egg and grated onion.
- 13Mix the minced meat and beat it several times in a bowl. To make the meatballs tender and juicy, the minced meat must be soft. If the minced meat is too liquid, you can add 1 tbsp. l. a spoonful of semolina.
- 14Form the minced meat into meatballs the size of a small walnut. To prevent the minced meat from sticking to your hands when forming meatballs, wet your hands with water.
- 15Place the meatballs into boiling cabbage soup.
- 16Place all the meatballs into the pan and stir.
- 17Finely chop the fresh cabbage and place it in the pan with the cabbage soup.
- 18Add frying. Wait for it to boil and cook until the meatballs and vegetables are ready for 7 minutes.
- 19Add ground black pepper and chopped garlic cloves to the cabbage soup and mix.
- 20Add chopped dill, let it boil and turn off the heat.
- 21We serve hot, aromatic, hearty and tasty cabbage soup for lunch. Help yourself!
