  4. It is recommended to set the flatbreads aside while preparing the filling, covering them with cling film or a cloth napkin.
  5. In a deep frying pan you need to fry the onion, which must first be peeled and chopped into cubes. The onion needs to be fried until it turns a light yellow color.
  6. Add minced meat to the pan and fry over low heat for 15 minutes.
  7. At the end of cooking the minced meat, you need to add garlic, which needs to be chopped using a press. At this stage, dry chili seasoning is introduced into the meat.
  8. The flatbreads need to be baked in the oven for 10 minutes at 180°C.
  9. After preparing the flatbreads, add a circle of fresh tomato and 1 tsp. corn (you can add 1 tsp canned beans) and 4-5 tbsp. fried minced meat. Lemon juice and fresh herbs are added to the filling.

The flatbread, or tortilla, is made from corn flour. It is from corn, since corn historically forms the basis of the diet of South Americans. In culture, this cereal is associated with the ancient Aztecs and is perceived almost as sacred. The fillings for tacos can be different: meat, vegetables, fish and seafood - here, of course, everything depends on the region and grandmother’s recipe in each individual family. By the way, a cafe or bar where you can eat tacos is called a “taqueria” (taquería).

For the last two or three years, tacos have been a trend all over the world. True, not only national flavor is in fashion, but also a mixture of tastes, so that you can find both Mexican-Asian variations and original local types. Gastronomy historians cannot figure out exactly where and when this dish appeared. One of the researchers of Mexican cuisine, Jeffrey M. Pilcher, who dedicated the book Planet Taco: a Global History of Mexican Food to it, believes that tacos are not the food of the ancient inhabitants of the Yucatan Peninsula, but an invention of Mexican miners of the 18th century. In those days, segregation was still a reality; poor immigrants from Mexico lived separately from wealthy citizens. And people of a higher social level could not go to a cheap Mexican restaurant. Bell picked up recipes from his neighbors and opened his own cafes to make this dish available to all non-Mexicans.

Bell was able to turn tacos into a successful fast food chain thanks to the use of a hard tortilla. Flatbread chips were prepared in advance, and it became possible to put the entire production on stream. The filling varied depending on what ingredients were sold in each area. Tacos became part of the US fast food culture and then migrated to many countries around the world. In parallel with this, the tradition of making tacos was developing in Mexico. The most common type of taco is made on a soft tortilla. The second option is a hard and crispy flatbread: it lasts longer, which is why fast food establishments love it so much.   • 5-7 corn tortillas;
  • half a kilo of fish fillet (better if it is cod);
  • 3 chipotle peppers;
  • 6 cherry tomatoes;
  • 2 small limes;
  • 2 large spoons of mayonnaise;
  • a glass of yogurt;
  • 50 ml. vegetable oil for marinade;
  • spices, salt (to taste).

  1. Prepare the marinade for the fish fillet. To do this, mix the oil with spices and squeeze lime juice into it.
  2. Cut the fish fillet into medium-thick pieces. Pour the marinade over them and leave them like this in the refrigerator for half an hour.
  3. Place the tomatoes on a baking sheet and bake in the oven for 10 minutes at 180 degrees.

Step-by-step cooking process

  1. In a deep frying pan you need to fry the onion rings and bell pepper.

  2. At the end of frying, garlic and sugar are added to the filling.
  3. Remove the pan from the heat and pour the canned corn onto it, after draining the water.
  4. You need to take another frying pan and fry the chicken hearts in it. Fry for 25 minutes, then add herbs, cream and soy sauce. Sprinkle 1 tbsp on top. flour and fry for 6 - 7 minutes to remove excess moisture. Instead of flour, you can use starch to thicken the sauce. At the end of cooking, squeeze the juice of half a lemon onto the pan.

There are several recipes for making authentic bread, which are slightly different from each other. In one case, boiling water is used, in another - a raw egg, and in the third - a generous spoon of vegetable oil.

Prepare the ingredients for making tacos (tacos).

How to make tacos:

  • spaghetti – 400 g
  • Spicy herbs – 2 teaspoons
  • greens – 1 bunch
  • canned tomatoes – 100 g

Preparation:

  1. Flatbread. Pour flour into a bowl, beat in an egg, add a little salt. While adding water, mix the dough slowly with a spoon.
  2. Pour a little of the resulting mixture into a frying pan and bake a flatbread. Do the same with the remaining dough.
  3. While one flatbread is being prepared, stir the dough. Cornmeal quickly settles to the bottom.
  4. Fold the finished cakes in half and secure the edges with a skewer.
  5. The taco is golden in color, which means the tortillas should be fried.
  6. Heat the oil in a deep frying pan and, after boiling, fry all the flatbreads on both sides. Hold with a fork and fry one flatbread for no more than 30 seconds.
  7. Place the fried flatbreads on a napkin.
  8. Preparation for the sauce. Finely chop the onion, grate the celery and carrots. Peel the garlic and crush it with a knife.
  9. Cut the bacon into small pieces, about 0.5 cm wide.
  10. Pour half the oil into a deep container, add butter, put on the stove to heat.
  11. Add vegetables, bacon, garlic. Fry for 10 minutes. During this time, the vegetables will soften.
  12. Add minced meat and fry, stirring with a spoon.
  13. Seasoning the sauce. Pour milk into the frying pan with the prepared minced meat and boil over high heat for 15 minutes.
  14. Pour in the wine and simmer for about a quarter of an hour.
  15. Place tomato paste with canned tomatoes in a frying pan. Bring the resulting mass to a boil, crush the tomatoes with a spoon, add herbs, pepper, and salt. Put it out.
  16. Simmering the sauce. Bolognese sauce simmers for about 4 hours. For our dish, it is enough to simmer for about 2 hours.
  17. Cover the container with the sauce with a lid, leaving a small gap, and place on low heat. It is recommended to stir the sauce once every 20 minutes.
  18. Remove the finished sauce from the stove, close the lid completely, and let it steep. 40 minutes is enough.
  19. Cooking spaghetti. Pour about one and a half liters of water into a large saucepan and place on the stove. After the water boils, add a little salt and olive oil to the pan.
  20. Dip the spaghetti into boiling water, holding it with a fan. The pasta is cooked for about 10 minutes. Stir at the beginning of cooking.
  21. Place the finished spaghetti in a colander. Do not rinse. When the water has drained, mix the spaghetti with the prepared sauce.
  22. Taco filling. Fill the flatbreads with the previously prepared filling. Two spoons of filling is enough for one flatbread.
  23. Place the finished tacos on a baking sheet and place in the oven for 5 minutes. Temperature – 120 degrees. The dish is ready.
