Cake in a frying pan with custard – recipe for the dessert “Curd ice cream”

Today we will bake a delicious cake with delicate cake layers and custard without using an oven. Each cake is baked in a dry frying pan for 1.5 - 2 minutes, which significantly reduces the preparation time for the delicacy. And if you prepare the custard in the evening and cool it in the refrigerator overnight, you can please your family with a delicious cake for breakfast! Cake in a frying pan with condensed milk is an ideal dessert for those who currently live without an oven, for everyone who likes to try new recipes and new flavor combinations.

Cake in a frying pan with custard - recipe

Ours differs from the classic recipe by adding cottage cheese to the dough and adding sour cream to the cream. Thanks to this, the taste of the cake actually resembles an ice cream sundae.

Use for dough:

  • Flour – 250 gr.
  • Cottage cheese – 180 gr.
  • Egg.
  • Granulated sugar – 100 gr.
  • Soda - a small spoon.

For the custard:

  • Eggs – 2 pcs.
  • Sugar – 160 gr.
  • Vanilla sugar – 8 gr. (bag).
  • Cornstarch - 2 large spoons (slightly topped).
  • Butter – 70 gr.
  • Sour cream 20% – 300 gr.
  • Milk – 200 ml.
  • Dark chocolate - a few pieces for decoration.

Step by step recipe:

Let's start cooking with custard. Break both eggs into a small saucepan, add vanilla and starch. Add the required amount of granulated sugar. Swirl the mixture with a spoon.

Pour in half the milk, work conscientiously with a whisk, breaking up all the lumps.

Add the remaining milk, add sour cream. Continue whisking the mixture until smooth.

Place the saucepan on the stove. Heat over high heat until you reach boiling point. As soon as bubbles appear on the surface, reduce the heat to the lowest setting.

Boil the cream at a gentle simmer until it reaches the desired consistency. It will become thick and hold its shape well. Do not leave the stove, the process requires constant attention - stir the contents almost continuously.

Add the butter cut into pieces. Stir well until it melts. Do not put the finished cream in the refrigerator while we are baking the cakes in a frying pan; it will cool down enough and become warm. Then the cakes will be quickly and efficiently soaked.

To knead the dough, beat the egg into a deep container. Place a pack of cottage cheese. If you extract a grainy product, rub it through a sieve. Mash the mixture with a spoon.

Pour in the flour, first combining it with baking soda. Do not add everything at once; it is more convenient to mix it in small portions.

When it becomes difficult to work with a spoon, start using your hands.

Gradually, when the dough becomes stiff enough, gather it into a ball and move to the work surface of the table. Don't forget to dust it with flour.

Roll out the dough ball into a thick sausage, divide into pieces according to the number of intended cakes.

Measure the diameter of your frying pan (mine is 20 cm). Roll out the bun into a flat cake commensurate with the diameter of the frying pan. You can trim the cake blanks right away, or you can trim the finished ones later (I prefer the second option).

Bake the cakes in a completely dry frying pan. It will take a couple of minutes on each side for them to cook well. Do not overbake so that the cakes remain soft. Don’t throw away the scraps; they will be used to top the cake.

Cake in a frying pan with condensed milk

The first option involves using the following products (they will be easy to find in your nearest supermarket):

  • 380 g condensed milk;
  • 300 g sour cream (preferably full-fat);
  • 4 tbsp. sifted flour;
  • 4 tbsp. l. granulated sugar;
  • 1 chicken egg;
  • 1 tsp. baking powder.

Main stages of preparation:

  • To prepare a cake in a frying pan with condensed milk, at the first stage you need to put the jar with the main ingredient in the refrigerator for 15-30 minutes. This trick will help make homemade baked goods tastier.

  • After this, all the condensed milk is poured into a deep bowl or small saucepan. A raw egg is driven into it and everything is mixed thoroughly with a spoon or wooden spatula.

  • In a separate container, sift the flour and mix with baking powder (baking powder). The resulting mass is added to the condensed milk in small portions and the dough is kneaded. It is considered ready as soon as it stops sticking to your hands.
  • The dough is divided into 8 as even parts as possible. They are rolled out one by one on the table so that their diameter matches the size of the frying pan. It is not recommended to roll out too thinly so that the cakes do not tear even before they are in their future “shape”.

  • Before frying, the cakes are pierced with a fork in several places - this is necessary so that the dough does not rise and has as smooth a surface as possible.
  • Place a clean and, very important, dry frying pan over low heat. As soon as the bottom warms up slightly, the first cake is sent there. It should be turned over after a few minutes, as soon as a light golden crust appears. Afterwards, transfer to a dish of suitable size.

  • The steps are repeated until all the cakes are ready. The next step is to let them cool, at least to room temperature.

  • After time has passed, a plate of smaller diameter is taken into hand - with its help, all the cakes are “adjusted” to size. The resulting trimmings are dried in a frying pan and ground in a coffee grinder. In the future, they will play the role of an excellent element for decorating a dessert.
  • Condensed milk cake in a frying pan is almost ready. All that remains is to prepare a delicious homemade cream. To do this, fat sour cream is mixed with sugar, preferably using a blender.

  • The cakes are laid out one by one on a plate and thoroughly coated with cream. At the very end, the cake is coated with sour cream on the top and sides.

Advice! It is advisable that the last step is to sprinkle the homemade dessert with prepared crumbs, to which you can add grated or melted chocolate.

To form the dessert, take a wide flat dish. Place the first shortcake on the base of the cake.

Add 2-3 tablespoons of cream and smooth it out.

Cover with the next piece, pour over the cream, spread over the entire surface of the cake.

Continue until you run out of cakes. Make the top layer of cream. Use the remainder to go over the sides; it is also advisable to coat them. Place the cake on the refrigerator shelf to soak thoroughly. 1.5-2 hours is enough for this.

Making cream

Homemade cakes with custard are very tasty and high in calories. But this is only if the presented dessert was prepared strictly according to the recipe.

So, to make a delicious custard, in a metal container you need to beat the egg along with milk, medium-sized sugar and wheat flour. After this, the liquid homogeneous mass must be placed in a water bath. All ingredients should be heat treated until they thicken slightly.

Having made the main part of the cream, it needs to be removed from the stove and cooled slightly. At this time, you need to thoroughly beat high quality butter using a mixer. Finally, the cooking fat needs to be poured into the egg custard mixture. By beating both parts of the cream with a mixer, you should get a very tasty and airy filling for your homemade cake.

How to decorate a cake

Melt the chocolate chunks. To do this, just put them in a bag, then pour hot water.

Draw two hearts on a piece of parchment. Turn the sheet over. Remove the bag of melted chocolate from the hot water. Make sure there are no pieces inside. Cut off the long end to make it easier to work with. Cut off the tip.

Draw hearts using melted chocolate using the template. Then put it in the freezer so that the pieces harden quickly.

Fry the dough scraps in a frying pan without oil, then grind into crumbs. Sprinkle over the top and sides of the dessert. Sprinkle the sides generously, from the heart, sprinkle on top purely symbolically, as in the photo.

Carefully place the hearts. Place the finished cake back into the refrigerator to soak for 5-8 hours, ideally overnight.

Baking a cake

Place the cake in a dry frying pan with a non-stick coating and bake it over low heat.

When the cake is browned, use a spatula to turn the cake over to the other side. Hold for another 30-40 s.
