Ingredients
For a simple and tasty sauce you will need:
- tomato paste – 2 tbsp. l.;
- water – 30 ml;
- salt (preferably sea) - 0.5 tsp;
- sugar – 0.5 tbsp. l.;
- oregano – 0.5 tsp;
- a small pinch of ground black pepper;
- 20 ml of vegetable oil - preferably olive oil.
The sauce will be cooked in an enamel bowl , so it should also be prepared in advance.
Recipe 4. Based on cilantro, parsley and oregano
Tomato sauce with the addition of herbs is an almost classic option for preparing a fragrant and appetizing dressing for Margherita or Neapolitano pizza. Thanks to the presence of a specific note in cilantro, the tomato sauce turns out to be more unusual and appetizing. About how to do it further.
Ingredients:
- tomatoes - 2 pieces;
- sunflower oil - 2 large spoons;
- onion - 1 piece;
- garlic - 3 cloves;
- cilantro, parsley and dill - 50 grams each;
- Italian seasonings, oregano and salt - to taste.
So, first you need to peel the tomatoes. The easiest way to remove it is with boiling water. To do this, place the vegetables in a plate and pour boiling water into it. Keep the tomatoes there for 2-3 minutes and the peel will peel off on its own.
Then you need to fry finely chopped tomatoes, onions and garlic in a crush with a mixture of finely chopped herbs and add seasoning at the end. You need to simmer the mass for about 3 minutes. Then cover with a lid and simmer well for about 5-10 minutes. Ready-made pizza dressing can be ground in a blender or used as is.
The main thing is that the sauce cools down. Otherwise, the pizza dough will be spoiled and the Italian appetizer will not work.
How to cook?
Cooking will take very little time.
- Water and tomato paste are poured into an enamel pan.
- Oregano, vegetable oil, sugar and salt are also added here.
- Mix thoroughly until a homogeneous mass is formed.
- Bring the future sauce to a boil and cook for another three minutes over low heat.
That's it, the simplest and most delicious classic sauce for homemade pizza is ready. You should definitely try it hot. If it turns out too sour, add sugar; if it turns out too bland, add salt . Afterwards, you need to move everything again and heat it on fire for two minutes.
Note: after cooling, the sauce will be thicker than when boiled. Therefore, you should not cook it for too long.
Recipe 3. Based on tomatoes, broccoli and eggplants
Anyone can make a classic version of pizza sauce, but not everyone dares to get creative with the ingredients. Below is an unusual sauce that will go perfectly with vegetarian or meat pizza, the ingredients of which are presented for 2-3 pieces.
Ingredients:
- tomatoes - 4 pieces;
- olive oil - 3 large spoons;
- onions - 2 pieces;
- garlic - 1 clove;
- broccoli in the mixture - 50 grams;
- bell pepper - 1 piece;
- eggplants - 1 piece;
- Italian seasonings, oregano and salt - to taste.
Making an unusual sauce is not difficult. First you need to wash and peel the tomatoes. It is best to leave them in boiling water for 5 minutes, then the skin will come away from the vegetables on its own. Then you need to defrost the broccoli and cut it into small pieces. Next, cut the bell pepper into slices and peel the eggplants. It is advisable to pre-coat them with salt so that they do not taste bitter. Then you should chop the onion.
After all the vegetables are cut and peeled, you need to place them in a frying pan greased with olive oil. Fry the vegetables for 3 minutes, then add the garlic cloves, passed through the garlic and seasonings. Mix everything well and start simmering. You still need to cook for 5-7 minutes. Then turn off the oven and let the sauce cool.
At the end, to get a real sauce, you need to pass the mixture through a blender. After this, you can use the sauce to make aromatic and tasty pizza.
How to do it in Italian?
In addition to the classic version, there is also the so-called Italian sauce. Its preparation will require more ingredients and time, but the taste of the resulting dressing will definitely justify all the effort. Let's get started.
To prepare the Italian sauce you will need:
- medium-sized tomatoes - 10 pieces;
- dry wine – 1 tsp. (can be replaced with lemon juice);
- 1 tbsp. l. tomato paste;
- salt - to taste;
- marjoram – 1/4 tsp;
- oregano – 1/2 tsp.
Cooking instructions:
- The first step is to prepare the tomatoes and remove their skins. To do this, you need to put them in boiling water for 40 seconds, then take them out and make a cross-shaped cut, after which the skin can be easily removed.
- Chop the tomatoes and place them in a suitable sized saucepan or deep frying pan.
- You need to simmer over low heat until all the liquid has evaporated.
- After 10 minutes from the start of stewing, add the prepared spices and salt.
- The resulting sauce must be passed through a sieve or crushed using a blender. This will allow you to obtain a homogeneous mass and get rid of possible remnants of skin and seeds.
- Finally, tomato paste and dry white wine (or lemon juice) are added. This will give a more piquant taste and aroma.
Insanely delicious pizza sauce is ready !
Recipe 1. Classic
To make an appetizing dressing for an Italian dish, you don’t have to buy a ready-made commercial sauce. You can make it yourself using the classic recipe below, based on one pizza.
Ingredients:
- tomatoes - 4 pieces;
- olive oil - 3 tablespoons. spoons;
- onion - 1 piece;
- garlic - 3 cloves;
- basil, Italian seasonings, salt and pepper - to taste.
To prepare a delicious sauce, you need to wash the tomatoes and pour boiling water over them to peel them. Next, peel the skins and cut the vegetables into pieces. Then, if desired, you can grind everything in a blender to obtain a homogeneous mass. Then chop the onion and garlic and fry them in a frying pan with olive oil and seasonings. At the end, add the tomato mixture and simmer the sauce for 5-8 minutes.
You cannot put hot sauce on pizza, so before you start cooking it, you need to wait until the mixture has cooled.
With tomato paste
Instead of fresh and canned tomatoes, you can use ready-made tomato paste. Neither taste nor consistency will be affected by this.
Tomato paste pizza sauce comes together in just a couple of minutes. We will need two spoons of thick base.
Dilute the paste with cold water, pour in a little at a time and stir thoroughly. The sauce will not be too thin and not too thick; it should spread well on the dough.
If we have achieved the desired consistency, it’s time to add seasonings. Add salt and ground red pepper to taste. Two tablespoons of oregano and the same amount of refined, cold-pressed olive oil.
Mix the ingredients until smooth. Please, the sauce is ready!
Making pink pizza sauce
All over the world, pizza is no longer the traditional dish that is prepared in sunny Italy. Therefore, fantasizing is not prohibited. Instead of the classic traditional sauce, you can make a not quite familiar pink sauce, which is perfect for shrimp and other seafood.
Pink sauce is prepared on the basis of mayonnaise. Measure out half a glass of Provencal and add two teaspoons of tomato paste to it.
To prevent the sauce from being too thick, dilute it with 2-3 tablespoons of heavy (20%) cream. Squeeze a clove of garlic into it, pour a teaspoon of lemon juice, add salt to taste and literally add half a teaspoon of sugar.
This sauce does not need to be cooked. After combining all the components, it is ready for use.
Ingredients and method of preparation
Tomatoes are something that is loved and valued in Italy, and therefore used in huge quantities. The genuine sourness of a ripe red vegetable can add color to the taste of any culinary creation.
Tomatoes have long been one of the main components of Italian cuisine. They are blanched, stewed, baked, dried, canned and used in sauces in almost any form.
The classic dressing is prepared from the ripest fruits, fleshy, aromatic, and absorbing all the juices. Preference is given to plum-shaped varieties. They contain the least amount of moisture and seeds.
Be sure to remove the skin from tomatoes.
They are then pureed in various ways:
- crushed with a blender, or ground through a sieve in its raw form;
- simmer until it turns into a homogeneous mass;
- bake in the oven and then chop with a blender or using a fork.
Instead of fresh tomatoes, use canned, skinless tomatoes in their own juice.
Italian cuisine is never complete without spices. Pizza sauce traditionally contains basil and oregano. Sometimes they are used separately. Tomatoes are flavored with both dried and fresh herbs.
Garlic is one of the favorite seasonings on the Apennine Peninsula. It is almost always added to tomato sauce. It goes well with the taste of ripe fruits and enhances the aromas of all components of the filling.
Garlic is placed fresh, dried, or pre-fried. It is crushed with a knife, crushed, and pushed through a press. Some recipes do not require the physical presence of seasoning. The flavor is extracted from it by frying the whole cloves in olive oil. The garlic is then removed, and the main ingredient - tomato paste or chopped tomatoes - is added to the fragrant essence.
At home, in addition to olive oil, you can use other edible vegetable oils, always refined and odorless.
The dressing is seasoned with salt, ideally sea salt. You can add a little sugar to enhance the taste. Recipes do not always indicate its exact amount. Here everyone decides for themselves, focusing on personal preferences. As with salt, some people like it saltier, while others like it almost bland.
There are many variations on the theme of tomato sauce for pizza. Even in Italy itself, it is prepared differently in different regions. What can we say about the remote corners of the planet.
Many countries around the world have their own culture of making pizza or a dish similar to it. The taste of these snacks matches the preferences of the people who live there. Local pizzaiolos can prepare a sauce completely different from the Italian one, with the addition of wine, other vegetables (carrots or bell peppers), vinegar, sour cream, etc.
We suggest looking at several recipes and taking some of them into account.

Pizza with sausage, pickles and cheese in the oven - step-by-step recipe from yeast dough
My son just loves pizza. Often we don’t cook it because it’s not the healthiest dish to offer to children. But we indulge ourselves periodically, of course. Today there was an occasion for this - our boy and his football team won an important match. At the family council, it was customary to celebrate this event with his favorite snack.
Ingredients:
Dough:
- Warm water – 500 ml.
- Granulated sugar – 1 tsp. no slide
- Flour - approximately 800 g.
- Dry yeast – ½ small packet
- Salt – ½ tsp.
- Unscented vegetable oil – 3 tbsp.
Filling:
- Boiled sausage – 500 g.
- Smoked sausage – 250 g.
- Tomatoes – 1-2 pcs. (300-400 g.)
- Hard cheese – 300-400 g.
- Ketchup, mayonnaise to taste
- Pickled cucumbers – 3-4 pcs.
- Greens to taste
The list of products for filling is unlimited. For example, instead of sausage, you can easily take boiled or smoked meat. You can include fried or salted mushrooms. I'll show you what I did today.
Preparation:
1. Pour 4 tbsp into a bowl. warm water from the total amount. Add yeast, granulated sugar and 4 tbsp here. flour, also from the total mass. Mix it all into a single mixture.
2. Cover with a towel. Place in a warm place for half an hour. I usually put the bowl on a high chair, closer to the radiator. The mass increases significantly in size.
3. Sift flour into a large bowl. We make a depression in the center. We transfer the dough here.
4. Add salt and water. Mix everything together until smooth. If you need a little more flour, you can add it. The main thing is not to overwhelm the mass with it. It is acceptable that the dough will stick a little to your palms. When the mass comes together and absorbs all the flour, add vegetable oil. Knead for another 5 minutes.
Place the dough in a bowl, cover with a towel and put in a warm place for 1-1.5 hours until risen.
5. By the time the dough has risen, prepare the filling. I use two types of sausage - that's all that was in the refrigerator. You can take only one or even more than two types. I cut the boiled one into cubes, and the smoked one into thin slices.
6. Wash the tomatoes and cut them into small cubes. If you want, you can cut into circles or half rings.
7. Cut the cucumbers into cubes. You can use straws if you want. If they are too watery inside, drain the brine.
8. Wash the greens, dry them from moisture and chop them finely. I used green onions and dill here. But cilantro and parsley would be good too. Three cheese graters.
9. We will use the famous “ketchunese” as a sauce. To be more specific, it is simply a mixture of ketchup and mayonnaise, approximately in equal parts.
10. Roll out the dough into a thin layer to fit the baking tray. Grease the mold with vegetable oil and place the workpiece here.
11. Cover it with a good layer of sauce. Evenly distribute all the ingredients for the filling on top, retreating slightly from the edges.
12. Sprinkle with half of the grated cheese. Then we cover it with herbs and make a mesh of mayonnaise or the same ketchunese. I let my daughter do this, so it didn’t turn out very neatly.
But it is not important. Top with cheese again
Place the edges over the filling so that the juice does not leak onto the baking sheet. Heat the oven to 200 degrees.
12.Bake until the cheese is melted and the dough is golden brown. Depending on your oven, this takes 20-30 minutes.
After the oven, I let it stand under a towel for about 15 minutes. This way it will calm down a little and cool down. It turned out very tasty! Help yourself!
Spicy egg sauce
Traditional egg sauce with mustard will brighten the taste of any vegetable or meat dish.
It will also especially highlight the notes of smoked meats or seafood in pizza.
What ingredients will be needed?
For this sauce you need to take:
- 50 ml of vegetable oil, it is better to take extra virgin olive oil;
- 60 ml milk;
- 10 ml wine or balsamic vinegar;
- 10 g powdered sugar;
- 2 raw chicken eggs;
- 1 pinch of salt with ground black pepper.
Step-by-step cooking process
Chilled eggs need to be beaten until thick white foam using an immersion blender or whisk with salt, ground pepper and powdered sugar. Then you need to add mustard and vinegar, and after that, without ceasing to beat, gradually pour in butter and milk in a thin stream.
Rules for use and storage
The prepared egg sauce must be cooled before use. And the excess can be stored in the refrigerator in an airtight glass container for a week.
Tips and Tricks
Pizza is a simple and multi-component dish, because the content of its filling is simply unlimited and varied. Depending on the composition of the pizza, we select the appropriate dressing for it. If we would like not to deviate from tradition and prepare a tomato mixture, then we use fresh and canned tomatoes, tomato paste or ketchup, adding seasonings and herbs to the base.
Be sure to use sugar to make the sauce not sour; add cumin, marjoram, pepper, garlic and onions. How exactly to make a delicious sauce is a matter of your taste.

What ingredients will be needed?
For a thick sauce with a delicate creamy taste, a minimum set of products is required:
Ingredient | Quantity _ |
Fat 20% cream | 300 ml |
Chicken egg yolks | 2 pcs. |
Butter 82% fat | 20 g |
Flour | 100 g |
Granulated sugar | 1 tsp. |

First, you need to get the required amount of butter out of the cold in advance so that it melts and warms up, and also carefully separate the chicken whites from the yolks:
- The cream should be heated in a deep bowl over low heat, but not boiled.
- Grind the flour with soft butter and, adding cream, mix everything thoroughly until smooth. You should get a mass of consistency of liquid sour cream.
- Now you need to place everything in a bowl in a water bath and let it heat up. After boiling, it is necessary to boil the mixture for about 10 minutes, stirring continuously to prevent the sauce from sticking and burning.

Canned Tomato Sauce for Pizza
Compound:
- tomatoes in their own juice – 0.3 kg;
- refined vegetable oil – 40 ml;
- garlic – 2 cloves;

Cooking method:
- Canned tomatoes, if not peeled, peel them. Place them in a blender container and grind to obtain a homogeneous tomato mass.
- Peel the garlic cloves and cut them in half.
- Heat the oil in a saucepan, fry the garlic in it, then remove the darkened garlic pieces.
