Thick, hearty and aromatic soup turns out so tasty that even a plate is eaten. Yes Yes Yes! After all, the plate for this soup is unusual - bread.

Miracle soup

Soups in the Czech Republic are mostly pureed and pureed. A thick, aromatic treat in every spoon! The broth is thickened with flour. Grated vegetables and cut into small pieces of meat, potatoes, and mushrooms are added to the soup. You can serve garlic soup (chesnechka), potato soup (bramborachka), onion soup (cibulachka), and spicy goulash soup (gulashova) in bread.

In the Czech Republic, soups are usually eaten without bread. The soup itself is quite thick and filling. As for soup in bread, after the soup is eaten, you can finish off the delicious “bowl” filled with broth.

Broths themselves are also popular in the Czech Republic, but they are served in ordinary plates: too liquid for a bread base.

Bread etiquette. How to eat bread correctly?

Do you know how to eat bread correctly? If you think so, I suggest you test your knowledge, and if not, then this article will help you learn this seemingly easy task.

Taking bread from a basket with a fork is by no means a sign of an aristocratic upbringing. Perhaps someone once did this, but modern etiquette dictates different rules to us. It is best to remove a piece of bread by hand from a special bread basket, after which it should be placed on a special pie plate, which is usually located on the left hand; if it is absent, it is permissible to leave the bread on your main plate.

Biting a slice of bread is bad manners. You should break off a small piece of bun or bread with your hand and put it in your mouth.

If you want to spread pate or butter on bread, first take a small amount of it with a knife and put it on your plate. Only after this you can start decorating the sandwich, but keep in mind that you cannot take the bread with your hand at this time. What to do? Lightly hold the slice of bread on the plate with your fingers and use a knife to spread the butter or pate with your other hand. When it's done, don't rush to put the bread in your mouth. It would be more decent to cut off a piece from it with a knife and fork, which will subsequently be eaten. Such a neat “maneuver” will allow you not to get dirty, and besides, you must admit, it’s more convenient and more aesthetically pleasing to absorb small pieces.

And once again about bread and butter. Please note that it is recommended to spread only the part of the slice that will be eaten immediately; then the procedure will need to be repeated. They do roughly the same thing when they want to spread jam or preserves on bread. Using a spoon from the jam bowl, place the required amount of delicacy onto your plate, and then carefully place it on the slices of bread.

But if you want to spread caviar on bread, then you don’t transfer it from the common caviar bowl to your own plate, but spread it directly onto the toast, which, by the way, you can hold in your hand. This needs to be done with a special device, which should lie near the caviar maker, and not with your own cutlery. This is done for hygienic reasons. Ham, cheese and sausage are also taken from the common dish with a special fork.

And under no circumstances should you try to collect the sauce remaining on the plate with bread; this is not only incorrect from the point of view of etiquette, but it looks very comical.

What is soup served with in bread?

Soup in bread bowls is delicious on its own. But Czech chefs often season the soup with sour cream and chopped herbs. Such soups are served with cheese croutons (in particular onion and garlic), with a boiled egg (mushroom). In general, what to serve the soup with depends on what kind of soup will be in the bread.

Almost any “bread” soup goes well with beer.

Classic aquacotta

To prepare the classic version of Italian aquacotta, you first need to cut the onion and celery into small cubes. Then take a deep pan with a thick bottom and fry the already chopped vegetables in olive oil. Add a little salt on top. Cook until the onion becomes soft.

Now cut the peeled tomatoes into cubes and add them to our pan. We do the same with potatoes. All vegetables need to be salted and hot pepper added. Fry everything together for about 5 minutes, and then add 1.3 liters of water.

After this, reduce the heat to low, cover the pan with a lid and let the soup simmer for about 25 minutes. 10 minutes before readiness, I add finely chopped greens. Add 4 eggs to the pan with the aquacotta and let them cook gently for about 4 minutes.

Now you need to salt the dish again to taste, add pepper and you can start serving. Before serving the dish, put our stale bread on a plate, after rubbing it with a clove of garlic. Ladle the soup into servings and top with grated Parmesan.

The secrets of delicious soup in bread

If you decide to prepare this wonderful soup at home, then take into account these useful little things:

  • The soup must be thick and pureed.
  • Only round loaves are suitable for this soup.
  • It is better to choose rye bread.
  • It’s a good idea to dry the bread in the oven (10 minutes) before pouring the soup.
  • The more meat, the tastier the soup! Unless, of course, we are talking about a vegetarian version of the soup.

If you have the appropriate skills and, say, a bread machine, then an excellent option is to bake the bread for the soup yourself.

Ingredients for aquacotta

Historically, this soup used only water, olive oil (an ingredient that no Italian dish is complete without), stale bread, onions and other vegetables that were on hand.

Then the recipe changed somewhat, and a more specific list of products began to be added to the dish. Now I will tell you exactly what is needed to prepare aquacotta.

The most important thing is 4 slices of stale bread (in modern times it can be dried in the oven), 80 ml of olive oil, 4 eggs, 2 onions, 1 potato, 1 clove of garlic, 4 peeled tomatoes, Parmesan (small amount for serving), 4 celery stalk, a bunch of spinach, salt and pepper to taste.

Acquacotta with mushrooms

For aquacotta with mushrooms, we will need all the same products as when preparing the classic version. The only exception will be that instead of water we will use meat broth, refuse eggs, and also add 250 g of champignons.

Now we repeat all the same steps for preparing aquacotta. While all the vegetables are frying, thinly slice the mushrooms. Then fill the roast with meat broth and leave it to simmer for another 20 minutes over medium heat.

After this, add the mushrooms and leave the soup again for 10 minutes. As soon as the aquacotta is ready, you can pour it into plates in which the dried bread will be laid out in advance. We also sprinkle herbs on top, grated cheese and you can add a little thyme.

Subtleties of the process

How to eat soup with a spoon? What can and cannot be done?

  • You cannot pull a full spoon to your mouth. You need to scoop up as much as you can swallow at a time.
  • Do not make any sounds while swallowing. This is done silently.
  • If the soup is thick, you need to bring the spoon to your lips with the leading edge. If liquid, then on the side.
  • It is prohibited to place cutlery on the table. It must be left on the plate after the meal.
  • After eating, you should not move your plate away from you; this is bad form.

Useful tips

You need to remember a few more rules and subtleties.

  • The soup must be poured from the common ladle that comes with the tureen. The rules of etiquette require that the mistress of the house do this. In a restaurant, this responsibility is assigned to the waiter.
  • Plates with dressing soups should definitely be placed on small dining areas.
  • Etiquette dictates that the handle of a spoon should be held between the thumb and forefinger. The beginning of the pen should rest on the middle finger, and the end should rest on the base of the index finger. Only a small child can take a spoon in his fist and not be considered an ill-mannered person. The thumb serves to press the handle onto the middle finger from above. It should be held at the side with your index finger.
  • The spoon is carefully and slowly immersed in the liquid. It is not recommended to let go of the cutlery until the dish is finished. If you need to stir the soup with a spoon, just make one or two gentle turns.
  • How to tilt a bowl of soup correctly? If a person is in an informal setting, he is allowed to do this. The plate must be carefully tilted away from you. At special events this is prohibited by etiquette. It is better to leave some liquid at the bottom of the plate if it is no longer possible to scoop it up with a spoon.

Clear and seasoning soups

What kinds of soups are there and how to eat them? The dish can be transparent or dressing. The first category includes broth with or without additives. It should be served in a broth thicket, which has one or two handles. You should also offer your guests chopped greens. Etiquette rules dictate that clear soup with additives should always be eaten with a spoon. The broth without additives should be drunk like tea or juice from a cup.

Seasoning soups are borscht, rassolniki, solyanka. They are prepared with the addition of cereals and vegetables. A lot of solid ingredients mean that this soup should be eaten with a spoon.

Gross mistakes

What mistakes are considered the most egregious? Why should you never eat soup?

  • Do not blow on the dish to cool it down. Instead, you need to wait until it is no longer too hot.
  • Great importance is attached to good posture in the rules of etiquette. You cannot bend over the plate or reach for the spoon.
  • Cutlery should be placed on a plate and not on the table. And this can only be done when the soup runs out.
  • Taking a full spoon is bad manners. This amount cannot be swallowed at once. There is also the danger of spilling your soup on your neighbors.
  • It is not recommended to tilt the plate. It is not at all necessary to finish everything. In addition, there is a possibility of spilling the contents of the plate.
