If you get your hands on a cod fillet, but you have no idea what to cook from it, then the easiest option is cod cutlets. Tasty and unpretentious.

How to cook minced cod cutlets

1. Break white bread into pieces and put in milk, knead with a fork. Leave for 10 minutes to allow the bread to soften.

2. Thoroughly wash the cod carcass, clean it and grind it in a blender.

3. We also grind the onion in a blender or finely chop it.

4. Chop the greens.

Many people think that chopped cod cutlets are quite dry and add lard to them, but I wanted to prepare the most dietary option, which, of course, is what I did.

Well, firstly, there is no fat in my cutlets, as you already understood, and secondly, in order to reduce the amount of fat, I did not fry them, but baked them in the oven. In the photo they look a little dry, but in reality this is not the case, and, as always, I did something weird: I cooked them at night, but I wanted to take a photo in daylight and for some reason I warmed them up in the microwave before, so much juice came out that the plate around the cutlets had to be wiped with two napkins.

- 1 kilogram of cod fillet (I buy these pressed frozen cubes) - 300 grams of peeled onions - 3 pieces of white loaf - 1 large chicken egg or 2 small ones, as I had - low-fat liquid yogurt - dill, if fresh, then 2 tablespoons, if dried, as I had, then one is enough - salt - SMP - vegetable oil

I defrost the cod in the refrigerator in the vegetable section. The minced meat for these cutlets is not passed through a meat grinder, but is chopped with a knife or a special hatchet. Add an egg to the prepared minced cod

And pieces of white bread soaked in yogurt, yes, this is the most criminal thing to eat in these cutlets, but I add it a little, so it will not greatly affect the dietary value of the dish. Yes, you only need white pulp, throw away the crusts

The onion also needs to be finely chopped with a knife; you should not turn it into a paste using a blender, otherwise too much juice will leak out of the cutlets during cooking.

Mix minced cod, eggs, bread, onion, chopped dill in a bowl, add salt and pepper and knead everything for at least 10 minutes, then beat the minced meat thoroughly. Form small cutlets with your hands dipped in cold water and place on a baking sheet lightly greased with vegetable oil.

I baked these chopped cod cutlets in an electric oven with a grill as follows: first, I turned the grill up to maximum and put the cutlets on, carefully watched as soon as the first faint blush appeared, then switched to the normal oven mode at 160 degrees and finished cooking for 15 minutes. Watch carefully, because the grill is a powerful thing and can easily burn these wonderful cutlets.

If you cook in a gas oven, then set it to maximum for literally 5 minutes so that they set into a crust and the juice stops flowing out, and then reduce to 150 degrees and also hold for 12-15 minutes

Serve with fresh vegetables, and tzatziki with low-fat yogurt is ideal as a sauce.

  3. Combine the fish mixture with the soaked bread, add salt, pepper and vigorously mix with hands moistened with water. Form the minced meat into round pieces, then place them in a mold with high sides.
  4. Peel the top layer of the onion, wash it, and chop it into half rings.
  5. Cut the peel off the carrot, wash it, pass through a coarse grater.

  6. Place the tomato in a cup of boiling water and let sit for 2 minutes. Then take it out and carefully peel off the skin. Cut the peeled vegetable into medium cubes.
  7. Rinse the basil and dill under running water, then chop into small pieces.
  8. Add the prepared vegetables to the form with the cutlets, lightly add salt, sprinkle with herbs, season with herbs and pour in the broth.
  9. Place the dish with the meatballs in a hot oven and bake for forty minutes at 175 degrees.

Tip: to prevent the cutlets from turning out dry, you need to periodically baste them with broth during cooking. You can replace the broth with plain water mixed with tomato paste (25 g).
