  • 1 egg;
  • 4 slices of white bread;
  • 1 small onion;
  • 100 ml water;
  • a little butter;
  • 2 tbsp. l. flour;
  • a pack of breadcrumbs;
  • sour cream.

Cooking fish meatballs in sour cream sauce is as follows:

  1. Grind the fish in a meat grinder or blender and at the same time soak the bread in milk.
  2. Mix the chopped onion with the ingredients described above, after squeezing the milk out of the bread.
  3. Beat in the egg and add salt.
  4. Form ball-shaped meatballs, roll in breading, and fry in a frying pan.
  5. Preparation of the sauce: mix melted butter with water, adding flour. Stir until a homogeneous consistency is obtained, add salt. Pour in sour cream. Leave to boil.
  6. After the meatballs are placed in the pan, pour in the sauce so that it covers most of the minced fish.
  7. Simmer for 15 minutes.

You can also bake very tasty fish meatballs in the oven. To do this, heat it to 180 degrees and place a baking sheet with “balls” in it for half an hour.

How to cook fish meatballs in the oven

  1. Peel the onion and cut into small cubes. You can, of course, immediately add it to the fish, but it’s better to fry it a little in vegetable oil.

  2. We will fry it until golden brown. Then let it cool a little.

  3. Pour cottage cheese into the chopper bowl. He will replace our bread in meatballs. You won’t feel the taste of cottage cheese at all, but it will definitely add juiciness. My cottage cheese is not in a pack, but crumbly, in grains. It is drier and I think is better suited for these purposes. Transfer the fried onions from the frying pan to it. Break one egg. It is needed for binding so that the meatballs do not fall apart, despite the fact that we will bake them and not fry them. Turn on the blender and beat.

  4. As a result, we obtain a relatively homogeneous mixture, which we set aside for now.

  5. The fish needs to be turned into minced meat. This can be done either using a meat grinder, or with the same blender or chopper. As for the type of fish... I have two types here - pollock and pink salmon. Both, of course, were completely defrosted in advance. I drained the liquid, cleaned them of skin and bones, and then squeezed them out a little, since the fish itself contains a lot of water, plus this notorious ice glaze... The proportion of fish is as follows: 2/3 pollock and 1/3 pink salmon. By the way, if you still have the bellies of any red fish from the salmon family, save them. They are great for meatballs like this. Well, or you can buy them specially, not salted, of course.

  6. After we have turned the fish into minced meat, we transfer it to a bowl.

  7. Add here a mixture of cottage cheese with onions and eggs. Combine both mixtures. In the process, add salt and knead very well so that the minced fish is completely combined with the curd mass.

  8. When the mixture becomes homogeneous, begin to form the meatballs. Scoop out some minced meat with a tablespoon. Using our hands we give it the shape of a ball. If you want to make them more, make more, you will get cutlets. Place in a baking dish with low sides. Can be laid almost side by side. They will shrink a little in size in the oven.

  9. To make the meatballs more appetizing, add butter to the pan. We divide it into several pieces, which we place between the meatballs. Bake in an oven preheated to 180 degrees for 40-45 minutes. During this process, turn over once and pour in melted butter.

  1. In a large container, mix everything you need: minced meat, rice, chopped onion, as well as other ingredients as desired (pepper, salt, mayonnaise, herbs).
  2. Form the meatballs and roll in flour, while simultaneously greasing a baking tray with oil to place the fish and rice balls on it.
  3. Fry grated carrots and chopped onions in a frying pan. Cover the meatballs with vegetables.
  4. Place the dish in the oven for 20 minutes at a temperature of about 200 degrees.

In tomato sauce

Delicious meatballs in tomato sauce can be a wonderful dish for dinner.

To prepare them you need to buy the following products:

  • cod or hake fish fillet (0.5 kg);
  • White bread;
  • eggs;
  • salt and ground pepper;
  • a bunch of greens (parsley or dill).

We prepare according to this scheme:

  1. Cut the fillet to make it easier to grind in a meat grinder.
  2. Pour water over 70 g of bread (approximately 6th part of a whole loaf). As soon as it swells, pour out the water and squeeze out the pieces.
  3. Chop the onion, herbs and add to the minced fish along with the egg and bread.
  4. Mix all ingredients, form ball-shaped meatballs and place in the refrigerator.
  5. Prepare the sauce. 100 g of onion is fried in sunflower oil. Add 3 tbsp here. l. tomato paste and 100 ml of boiled water, as well as salt and sugar as desired.
  6. The final stage. Chilled meatballs are transferred to the sauce and simmered for 5 minutes over low heat. To ensure they are completely cooked, turn the items over and simmer for a few more minutes.

Serve meatballs with sauce.

Fish meatballs - useful tips for preparing fish dishes

  • If you are preparing meatballs from frozen fish fillets or minced meat, do not defrost the semi-finished product completely. Remembers that fish is a perishable product, and at room temperature it is very quickly “attacked” by harmful microorganisms. In order for a fish dish to always be fresh and healthy, the semi-finished product should have a temperature no higher than 3-4°C. Do not leave raw processed fish on the table. They must be cooked immediately or stored in the refrigerator. Do not re-freeze defrosted minced fish.
  • To keep the meatballs juicy, fry them in a very hot frying pan. The resulting crust will prevent the juice from leaking out from the inside.
  • Fish has varying degrees of fat content. For minced meat, try to choose fattier varieties, but if you have to cook from what you have, then add heavy cream or butter to lean fish. Dairy products generally give fish dishes a very pleasant taste and smell, making them juicy and tender.
  • To bind the minced meat, beat it before forming the meatballs. No more than 25% flour, white bread, and crackers are added to minced fish so that it is viscous and the meatballs do not crumble. Eggs or dry egg powder are used for the same purpose.
  • Onions in minced fish not only add flavor to semi-finished products, but also increase their juiciness. Determine the amount of onion depending on the fat content and moisture content of the minced meat.

Appetizing fish balls, just like in kindergarten, can be easily prepared at home. To make the dish incredibly tasty, the meatballs need to be baked in gravy.

You will need the following ingredients:

  • fish (hake or pollock) – 500 g;
  • egg – 1 pc.;
  • bread - 2 pieces;
  • onion – 1 pc.;
  • vegetable oil – 2 tsp;
  • salt.

For the gravy:

  • fish broth – 500 ml;
  • onion – 1 pc.;
  • carrots – 1 pc.;
  • sunflower oil – 50 ml;
  • sour cream – 6 tbsp. l.;
  • salt.

The cooking method is as follows:

  1. Rinse the fish thoroughly. Separate the meat from the bone, cut off the fins and tail. Place the trimmings and bones in water and place on the stove. Bring to a boil and leave the fish broth to simmer for 30 minutes.
  2. Grind the fillet in a meat grinder.
  3. Cut the onion into large pieces and sauté in sunflower oil. Grind it together with the soaked bread in a meat grinder.
  4. Add egg, salt to the resulting minced meat and mix with your hands.
  5. Strain the finished broth and prepare the vegetables for gravy.
  6. Preheat the oven.
  7. Place the finished meatballs in a pre-greased form. Baking time is 20 minutes.
  8. For the gravy: brown the onion, add grated carrots and fry until soft. Add sour cream and salt.
  9. Mix all ingredients with fish broth and bring to a boil.
  10. Take the pan out of the oven and pour in the gravy so that the meatballs are completely covered. Place back in the oven for 30 minutes.

Fish meatballs in tomato sauce - recipe

Having prepared all the ingredients, you can start preparing fish meatballs in tomato sauce. The first step is to prepare the minced fish. It is best to prepare minced fish meatballs yourself at home from fish fillets or from a whole fish carcass.

This way you will be confident in its freshness and quality. While you are working on the fish, let the rice cook. It is advisable to use long-grain rice for fish meatballs. It must be washed in two or three waters. Then add cold water and boil until half cooked. The rice should be slightly firm and not overcooked. Drain it in a colander. After this, rinse under running water.

I used frozen pollock carcasses as the basis for the meatballs. The process of obtaining fillets is exactly the same as when processing any other fish. The first step is to cut off the fins. After this, cut the belly and remove the entrails. Next, the fish must be thoroughly washed inside, and the internal black films covering the belly of the fish must be removed. Next, you need to remove the skin by making a cut on the back. It remains to cut off the fillet on each side of the ridge with a sharp knife.

The fish fillet obtained in this way must be passed through a meat grinder or crushed into minced meat in a blender. Place the minced fish in a small and deep bowl, in which it will be convenient to knead the mixture for fish meatballs. Add boiled rice to it.

Beat in the egg so that the meatballs with rice and fish will keep their shape well.

Cut the onion into cubes. If you are preparing meatballs for children, then to disguise it, it is best to grate it. You can pass it together with the fish through a meat grinder.

Add a small amount of salt and spices. Mix all ingredients.

Now you need to prepare tomato sauce for meatballs with rice. To prepare it you will need onions, carrots and tomato sauce or ketchup. Diced onions and finely grated carrots must be fried in vegetable oil.
