The loaf, pre-soaked in water and squeezed out, is combined in one bowl with minced meat. Chopped onions and garlic passed through a press are also sent there. Mix everything thoroughly until smooth. Beat an egg into the resulting mass, add cottage cheese and half the chopped herbs. All this is salted and seasoned with spices. For these purposes, pepper, cilantro and rosemary are most often used.
Small round balls are formed from the resulting minced meat, breaded in flour and fried until golden brown. After this, start preparing the gravy. To do this, place chopped onions and carrots in a frying pan greased with good vegetable oil. A little later, chopped bell peppers and tomatoes are sent there. After a couple of minutes, add a pinch of salt, tomato paste and granulated sugar to the pan.
Broth and starch dissolved in a small amount of water are poured into the almost finished gravy. After this, cover the dish with a lid and keep it on low heat for another ten minutes. After this time, carefully lower the meat balls into the frying pan and simmer for about a quarter of an hour. Ready-made meatballs with gravy without rice, the recipe of which is so simple that even a novice cook can master it, sprinkle with the remains of chopped herbs and serve.

- Large onion.
- A couple of pieces of loaf.
- A glass of milk.
- One hundred milliliters of sour cream.

Meatballs with gravy and vegetables in the oven
Meatballs in the oven turn out to be especially tender, because the gravy, while baking, soaks them gradually.

Hello! Today we will look at a recipe for meatballs without rice . To be precise, there are no meatballs without rice - this dish is called meatballs in tomato sauce. Meatballs are quite common in Europe. These are balls of minced meat or fish fried in a frying pan. We are accustomed to understand by this name the same balls, only boiled in water.
Today we will cook an Italian dish. It is not difficult to prepare; the longest process is chopping all the vegetables. It tastes full of Italy - there is a deep hint of red wine and tomatoes and cheese! Mmmm, finger lickin' good! Let's start!
First of all, we will prepare the sauce. How do you want it to look? Smooth puree? Or with small pieces of vegetables? Or coarsely chopped ingredients? You decide. I chopped all the ingredients as finely as possible, except for the hot pepper. So, first chop the onion.
Throw it into a frying pan, where it will be fried in vegetable oil (it’s better to use olive oil, because we’re having an Italian dish!). Then, carrots.
We send it to “oh, onion” :))) Then, wash, peel and chop the celery.
Let’s send the chili to “friends” in a frying pan, it’s more fun to fry together! Now let's move on to the peppers. He's going to give us a hard time. You definitely need to remove the seeds from this hot guy because they are VERY spicy. Let's cut the pepper. If you are careful with your hands, it is better to wear rubber gloves before working with this vegetable so as not to burn your hands. And this is undignified for us men
Let's see how everything looks at this stage.
It's okay, it's cute. Let's uncork a bottle of red... try (naturally) a sip and add it to the pan.
This dish really needs wine, and not only this one. It gives a unique taste and aroma, elusive notes of Italy. Now add grated tomatoes and about the same amount of water. Cook for at least half an hour. Don't forget to add salt and pepper and add sugar if necessary to even out the flavor. I added half a tablespoon of sugar so it wouldn't taste too sour.
I would like to dwell in more detail on tomatoes. When you choose, look at the composition. It is better if there is nothing in it except the tomatoes and salt. It is better, after all, to choose an Italian manufacturer. After opening the package, taste the contents. This way you will understand how much water, salt, and maybe even sugar to add to the sauce.
Let's start preparing the minced meat. For our purpose, it is better to take it by squirrel cutting. Let's take bread crumbs (I took a stale loaf) and soak them in milk. Add everything to the minced meat. Then add finely chopped garlic, finely grated Parmesan, and one raw chicken egg. Chop the parsley very finely and add it to it too.
There is no onion in the minced meat in the original recipe, but I would advise you to add it to make the meatballs more juicy. Salt and pepper everything, knead and form meatballs.
Now sprinkle them with flour and roll each one a little.
Now fry them in a frying pan and add them to the sauce. Simmer with the lid open for 30 minutes. Look how it turned out! And the side dish? Well, of course, spaghetti or any other pasta will do and you’ll get a real Italian dish! By the way, the next day and two days later it will only taste better and better! Bon appetit!
Cooking algorithm
In a frying pan greased with vegetable oil, lightly fry all the pre-chopped vegetables. When they change color, red wine is poured in, and after another three minutes tomatoes and half a liter of water are added. Cover the pan with a lid and leave on low heat for half an hour.
Chopped garlic, onion, raw egg, ground pepper, salt, Parmesan and a loaf pre-soaked in milk are added to a bowl with minced meat. Mix everything thoroughly until smooth. Not too large balls are formed from the resulting mass, rolled in wheat flour and fried until golden brown in a hot frying pan, generously greased with high-quality sunflower oil. After that, they are laid out on a baking sheet, poured with sauce and placed in the oven. Bake the meatballs without rice in an oven preheated to one hundred and fifty degrees for half an hour. The side dish is usually served with pasta or boiled potatoes.
Meatballs with sour cream sauce under a cheese crust
Vegetables, cheese and sour cream make the meatballs especially tender and tasty. Spicy lovers can add a little garlic to them, and vegetable fans can't go wrong by adding zucchini or a little eggplant.
Ingredients:
- Onions – 1 pc.
- Egg – 1 pc.
- Carrots – 1 pc.
- Bulgarian sweet pepper – 0.5 pcs.
- Sour cream – 200 ml.
- Hard cheese – 150 g.
- Flour – 2 tbsp.
- Vegetable oil - for frying
- Salt - to taste
- Ground black pepper - to taste
Cooking method:
Rinse the rice cereal, place it in a pan of boiling water and cook for about 10 minutes. The rice should not be completely cooked, otherwise the meatballs may spread during cooking.
Mix half-cooked rice with minced meat (you can use any). Beat the egg there, add salt, ground pepper and, if desired, other spices. Mix well. The mass should not be liquid. If this happens, stir in a little flour. Roll the resulting minced meat into balls and place them tightly next to each other in a baking tray or frying pan that is suitable for baking.
Prepare the gravy. To do this, peel the onion and chop it finely. Peel the bell pepper from seeds and films, cut into small pieces. Peel the carrots and grate them on a coarse grater. Place all the vegetables in a separate frying pan, pour in vegetable oil and put on fire. Fry for about 10 minutes, stirring constantly. Season with salt and pepper. Then pour sour cream and water with flour diluted in it into the vegetables. Bring to a boil, simmer for just 2 minutes, then pour the gravy over the meatballs.
Place them in an oven preheated to 170 degrees and bake there for 40 minutes. Then take out the baking sheet, grate the cheese on the meatballs and put it back in the oven for 10 minutes.
