Oyster mushroom soup: how to prepare it correctly?
Do you want to please yourself and your loved ones with a tasty, aromatic and nutritious mushroom dish? You can cook oyster mushrooms in sour cream, or you can take a simple recipe for oyster mushroom soup.
First you need to prepare all the ingredients needed for the soup:
- chicken or meat broth - depending on your preferences;
- 1 kg of potatoes;
- 2 pcs. medium sized carrots;
- 1 large onion;
- 900 g fresh oyster mushrooms.
Even those who are not very familiar with culinary wisdom can prepare a tasty and appetizing dish using this recipe.
First, prepare meat or chicken broth, which will serve as the basis for the future soup. After this, they begin to prepare the vegetables. Wash the potatoes thoroughly in running water and peel them, cut into medium-sized pieces. After placing the chopped potatoes in water, begin preparing the mushrooms.
It is important to preserve all the inherent taste and aroma of mushrooms. To do this, they need to be placed in a dry, empty frying pan. This way the mushrooms will be able to completely get rid of excess moisture and dry out sufficiently. After this, you need to put the frying pan on low heat and carefully ensure that the mushrooms do not burn - while they are cooking, they should be carefully stirred with a wooden spatula.
Now you can start processing the carrots - rinse, peel and grate, preferably a coarse one. Then peel the onion and cut into medium-sized slices. During this time, the liquid that appeared when frying the mushrooms should completely evaporate. You need to add a little olive oil to the frying pan where the oyster mushrooms are. Fry them for some time so that the oil absorbs the aroma and taste. Without adding any pepper or salt, fry the mushrooms until cooked, that is, until they are covered with a golden crust. While the oyster mushrooms are fried, you need to bring the broth to a boil and add chopped potatoes to it, and then the mushrooms themselves.

- in the usual way, in a pan of salted boiling water, boil them for 15-20 minutes;
- when using a double boiler, they are cooked for no more than 20 minutes;
- if oyster mushrooms are cooked in a slow cooker, they need to be cooked for approximately 10-15 minutes;
- Least of all, these mushrooms are cooked in a pressure cooker - the process lasts no longer than ten minutes.
When the mushrooms and potatoes are completely cooked, you can add pre-cooked frying to them.

- Boil the potatoes, noting 10 minutes after adding the potato pieces.
- Prepare sauteed carrots and onions.
- Chop the clean mushrooms randomly and place them in the broth. You can immediately add sauteing. Add spices immediately. Boil for another 7-10 minutes.
- Meanwhile, cut the ham into cubes and add to the broth. Only then add a little salt, tasting the soup - sausages contain salt, and this must be taken into account.
- Finely grate the cheese directly into the saucepan and stir with a spoon. Boil for another 5 minutes and turn off.

Prepare a delicious puree soup
Oyster mushroom puree soup is rightfully considered one of the most delicious, aromatic and nutritious mushroom dishes. If you want to cook it and treat your loved ones, prepare the following products:
- 500 g oyster mushrooms;
- 4-5 medium sized potatoes;
- 3 medium onions;
- 100 ml medium fat cream;
- 3 garlic cloves;
- chicken bouillon;
- a little salt, ground black pepper and other spices you prefer.
This recipe, like the previous one, is not particularly complicated. The cooking process consists of several successive steps:
- Rinse the potatoes thoroughly under running water and then peel them;
- Peel the garlic bulbs and cloves;
- cut all components as finely as possible;
- A few mushrooms should be left and cut into neat pieces - they will later be used as a decoration for the soup.
It is recommended to prepare this creamy oyster mushroom soup in a saucepan with a fairly thick bottom:
- Pour a couple of tablespoons of olive oil into the pan.
- Once the oil is hot, add the chopped onions and cook them until they become translucent. Add cream.
- Add the oyster mushrooms and boil together with the onion for about five to six minutes.
- Add garlic and mix all ingredients - the future soup will acquire a special aroma.
- Add finely chopped potatoes, which can be replaced with cream mixed with starch.
- After about three minutes, salt and pepper the contents of the pan, add any spices.
- At the next stage, pour the broth over the mushrooms along with the vegetables.
- Bring the mixture to a boil and continue cooking for another 10 minutes.
- After this, the soup should steep for the same amount of time.
- Using a blender, prepare puree from the prepared mixture.
- The resulting puree should be diluted with cream, mixed thoroughly and brought to a boil.
In a slow cooker
Oyster mushrooms make a wonderful soup cooked in a slow cooker.
It turns out to be very aromatic and rich in mushroom flavor:
- 2.5 liters of water;
- 3 medium potatoes;
- ½ cup round grain rice;
- some carrots and onions;
- 1 tsp. l. salt and 1 tsp. l. “Universal” spice mixture.
Cooking in a slow cooker is much easier than using a stove and pan. To begin, peel all the vegetables and mushrooms, cut them: larger potatoes and mushrooms, smaller onions and carrots.
Pour water into a bowl, add vegetables and mushrooms. Rinse the rice several times and transfer to a multi-cooker bowl. Salt and add spices.
On the multicooker panel, select the “Soup” mode and set for 45 minutes. Close the lid and leave to cook. When the timer signals to open the lid, stir the contents and test for doneness - if the potatoes and cereal are cooked through, there is no need to continue cooking. If the products are a little hard, extend the time by 10 minutes.
Cheese soup
Let's look at how you can easily and quickly prepare cheese soup with oyster mushrooms. The process will take you no more than 25 minutes.
- Cut the potatoes into medium cubes and place them in a saucepan along with a mixture of dry spices, pour boiling water over them and boil for about 15 minutes.
- Cut and chop the onions, then saute them in oil for 5 minutes.
- Chop the mushrooms, add them to the other ingredients and continue to saute, covered, for at least 10 minutes.
- Now it’s the turn of processed cheese. It is recommended to freeze them a little before grating them.
- Add the grated cheese to the potatoes and boil, mixing the mixture thoroughly.
- When the cheese curds are completely melted, add chopped herbs and sautéed mushrooms and onions to the soup.
- After three minutes, remove the finished soup with oyster mushrooms and melted cheese from the heat and let it brew thoroughly for 15 minutes.
Making chicken soup
Soup with oyster mushrooms and chicken has special taste properties. It is prepared in this way:
- Chop the ginger and mince the garlic.
- Wash the chicken fillet thoroughly, pat dry and cut into neat slices.
- Clean the oyster mushrooms from dirt and rinse under running water, then dry and cut into desired shapes.
- Place the frying pan on the stove and pour a small amount of vegetable oil into it.
- Add ginger, meat, garlic and mushrooms.
- Mix everything and fry until almost done.
- Add soy sauce, star anise, sweet bell pepper cut into miniature cubes, and chili pepper.
- Mix all the ingredients and, after 1 minute, pour in the chicken broth.
- After another 5 minutes, add pepper and salt.
Serve this treat to the table, garnished with aromatic herbs.
Option 3: Spicy mushroom soup with oyster mushrooms and chicken
This soup is both light and satisfying. Thanks to the spices, it warms and leaves a feeling of comfort and warmth inside for a long time.
Ingredients
:
- Mushrooms - 300 g;
- Chicken fillet - 400 g;
- Bulgarian pepper - 200 g;
- A bunch of green onions;
- Oil for frying;
- Soy sauce - 20 ml;
- Lemon;
- A mixture of peppers, star anise, ginger and garlic.
Step by step recipe
You can use ground or fresh spices. In the second case, you will need to first chop the ginger and garlic.
Wash the meat, cut it into thin slices.
Heat a saucepan or frying pan with oil. Put ginger and garlic in it, add chicken.
Chop the oyster mushrooms. You shouldn't chop them too large, but you don't need to chop them either. Add mushrooms to meat, fry everything together.
Place a few star anise and a mixture of peppers in the frying pan, pour in the soy sauce. Stir the meat so that it cooks evenly.
Cut the bell pepper into strips and remove the seeds. Add it to the frying pan as well.
Boil water in a saucepan. Dip pieces of chicken and mushrooms into it, pour out the juice released during frying. Add salt and cook the soup for another 10 minutes.
Before serving, squeeze a little lemon juice into each bowl of soup. Chop the green onion and sprinkle it over all portions.
To make the soup more satisfying, you can add noodles to it. Its preparation time is usually indicated on the packaging. As a rule, thin noodles are cooked for no more than five minutes. It will take 7-8 minutes to cook the spaghetti. Keep this in mind to add the pasta to the pan in time.

As in previous cases, the base of the soup will be chicken broth. Carrots, onions and parsley root must be peeled, washed and cut into thin rings. Place the vegetables in a saucepan with boiling water and boil until fully cooked.
Peel the oyster mushrooms and remove their caps, and then rinse thoroughly, changing the water several times. After that, chop them finely and add to the vegetables. Cook all ingredients for about 15 minutes.
Boil the noodles in a separate pan, after adding spices, salt and a small amount of vegetable oil to the boiling water. When it is ready, drain the water and combine with the rest of the ingredients. Before serving, be sure to sprinkle the finished soup with aromatic herbs.
