Freshly harvested crops are waiting for pickling, but are you already tired of the usual recipes? The dilemma of choosing an unusual preparation lies in the fact that over many years of experience, a large number of different recipes have accumulated.
Some of them disappoint housewives by not allowing them to enjoy delicious pickles. This material contains the answer to the question: how to prepare cucumbers for the winter with aspirin? Based on these recipes and recommendations, you can easily choose the appropriate option for your future preparation.
Why is aspirin needed when preparing cucumbers and what does it give?
Aspirin is used not only for preserving cucumbers. It is great for preparing all vegetables.
It is impossible not to note the benefits of aspirin:
- The safety of winter preparations is extended for 1-2 seasons.
- Acetylsalicylic acid disinfects products.
- The brine does not become cloudy over time.
- The use of unsuitable lids does not cause the fermentation process and their failure.
- Cucumbers will always have a crunch and retain their fresh aroma and taste.
- As the shelf life of the product increases, its taste improves.
But this method also has its drawbacks. The main disadvantage is that acetylsalicylic acid is a drug (helps thin the blood). According to popular belief, introducing chemicals into food is unacceptable.
It is for this reason that everyone must decide for himself whether this method is acceptable to him or not.
Is it possible to give vegetables tablets?
People on culinary forums are happy to share recipes for pickling cucumbers... with aspirin. After all, they add it to vases with water so that the flowers last longer! They say that acetylsalicylic acid prevents the brine from becoming cloudy, makes the cucumbers strong and prevents the jars from “exploding.” Pharmacologist Elena Novikova does not agree with this formulation of the question.
Housewives advise adding aspirin to twists. Doctors do not agree with them.
Of course, salicylic acid and its derivatives create an acidic environment in which microbes die. Yes, canning requires an acidic environment. But even the most wonderful medicines should not be added to food, says the doctor. — In canned food containing acetylsalicylic acid, phenolic compounds are formed that are dangerous to humans. After eating these cucumbers and tomatoes, you can also plant a liver and kidneys.
Reasons why drugs should not be used for preservation
- Medicines and their breakdown products, which are formed in the marinade, leave the body through the kidneys, thereby having a destructive effect on the organs.
- If you often use acetyl, pyelonephritis may develop.
- The toxic breakdown products of the drug and the acidic environment of the drug have a destructive effect on the intestines and stomach.
- Aspirin should not be used by people with peptic ulcers. It is better for healthy people to take acetylsalicylic acid after meals and wash it down with fresh milk.
- Frequent use of aspirin with food may cause allergic reactions to this drug.
All of the above negative reasons are a reason not to use medicines when preparing vegetables for the winter.
Especially losing their relevance in our time are such additives that have a very bad effect on the body and cause significant harm to health.
Crispy pickled cucumbers with aspirin
You can argue for a long time about the benefits or harms of aspirin, but every housewife will agree that aspirin is an excellent preservative for home preservation. A neighbor in the country gave me a recipe for canned cucumbers with aspirin. I like all her recipes, but these are the cucumbers that can be stored in an apartment without a cellar.
In addition, this recipe for cucumbers does not require long-term sterilization; you just need to sterilize and prepare the jars in advance. The end result is delicious, piquant, crispy cucumbers with the aroma of summer herbs, garlic, and spices. Not sour or cloying, exactly what you need!
Ingredients for a 3 liter jar:
- cucumbers 1.5-2 kg.
- aspirin tablets (acetylsalicylic acid) 3 pcs. (crush)
- citric acid 2 tsp. (no top!)
- coarse salt 3 tbsp.
- sugar 2 tbsp.
- peppercorns 6-10 pcs.
- bay leaf -3 leaves
- garlic -5-6 cloves (medium, chopped)
- dill, cherry leaves, currant leaves, horseradish leaves...
Wash the cucumbers thoroughly in cold water, trim off the “butts”. Pour cold water for 6-12 hours to make the cucumbers crispy. We put cucumbers, all the spices according to the recipe, salt, sugar, and of course crushed aspirin tablets into prepared sterilized jars.
Place a couple of dill umbrellas on the very top of the cucumbers. Fill the jars with boiling water (the water in the pan is boiling, and I fill it with a ladle), screw on the lid. Then take the jar by the neck with oven mitts and shake it back and forth several times to melt the sugar, salt and tablets.
Next, as standard, we send the jars of cucumbers under the fur coat until they cool completely. I store jars of cucumbers in the cellar at the dacha or at home on shelves in the closet where I store preserved food. You can eat such cucumbers no earlier than after 1.5-2 months. So that they have time to marinate properly.
Characteristics of aspirin
Aspirin is a non-steroidal anti-inflammatory drug that contains acetylsalicylic acid. In each tablet, the active component is located in a concentration of 100 mg. Each package contains a different number of tablets; they are selected depending on the required course of treatment. When using the medicine, the following pharmacodynamics occur:
- anesthesia;
- decrease in body temperature;
- relieving inflammation.
All this happens due to the suppression of enzymes that stimulate the production of prostaglandins. This is a substance involved in the inflammatory response. The more it is, the stronger it is. If it is released in smaller quantities or is completely absent, the patient’s well-being gradually improves. But to confirm complete recovery, sputum from the throat and nose is analyzed, and samples are sent to identify the virus using a PCR machine.
By reducing the inflammatory response, the risk of complications from viral pathologies, for example, bronchitis, pneumonia, and gastrointestinal disorders, is reduced.
Additionally, the drug reduces platelet production and suppresses their aggregation. This is accomplished by blocking the production of thromboxane A2 in platelets. The blood thins out, so it flows faster through the vessels, delivering nutrients and oxygen to various organs. The risk of ischemia, heart attack, and stroke is prevented.
