I love burgers and make them exclusively at home. I’m sharing my signature recipe for burger patties in a frying pan - everything is very simple, but the result is simply magnificent.
Classic grilled beef recipe
Burger patties (classic recipe) are made from mixed ground beef and grilled.
This allows you to get tasty and tender meat products, which make excellent burgers and cheesebergers.
What ingredients will you need?
To prepare classic burger patties, you need:
- 750 g minced beef (mixture of 80% lean 20% fat);
- 1 tbsp. l. Worcestershire sauce;
- 1.5 tsp. table salt;
- 1 tsp. garlic powder;
- 0.5 tsp. ground black pepper.
Step-by-step cooking process
To prepare classic burger patties, do the following:
- Preheat your gas, electric or charcoal grill to medium-high heat.
- Place the ground beef in a large bowl and season evenly with Worcestershire sauce, salt, garlic powder and pepper.
- Use your hands to mix the ingredients well until they are fully combined.
- Next, you need to divide the meat mixture into 4 parts.
- Then you need to form a cutlet out of each quarter using your fingers and palms, making sure to make a depression in the center of each. This is required in order to prevent the appearance of a bulge in the center of the product during cooking.
- Next, you need to place the cutlets on the grill and cook for 4-5 minutes. on the first side, then turn over and fry the same amount.
The cutlets are ready.
What can I add?
If desired, you can place a piece of cheese on each cutlet in about 1 minute. before removing them from the grill so it can thaw. Provolone cheese is best suited for this purpose.
Rules for serving and decoration
Ready-made cutlets are served in buns, accompanied by any fillings: lettuce, fresh vegetables, sauces, and so on. For spiciness, jalapeno peppers are a good choice.
Beef in a frying pan
Burger patties that use one beef recipe can be successfully cooked in a frying pan. For the best results, it is recommended to prepare the minced meat yourself, using different cuts of meat.

- 500-600 g minced beef, divided into 4 portions;
- kosher salt and black pepper;
- 0.5 tsp. any vegetable oil;
- spices and seasonings as desired.
Step-by-step cooking process
Cooking products in a frying pan is very simple:
- Add oil to a stainless steel or cast iron skillet and wipe it with a paper towel, then place over medium heat and let it heat for about 5 minutes.
- Meanwhile, carefully form each portion of ground beef into a cylindrical puck about 5 cm high, pressing it with your hands until the meat takes shape without falling apart.
- The preparations must be seasoned generously on all sides with salt and pepper.
- Next, you need to increase the heat to high and heat the frying pan, and add meat products to it.
- Using a strong, stiff metal spatula, press down on each piece and flatten it until it is approximately 10cm in diameter and 1-1.5cm thick. You can use a second spatula to apply pressure to the first if it is difficult to press the items down firmly enough.
- Next, you need to fry the cutlets, without moving them in the pan, until a golden brown crust appears, about 1.5 minutes. Using the edge of a spatula, carefully lift and flip the pieces one at a time, making sure to remove any browned bits from the pan.
- After this, you need to continue frying until the meat is cooked to the desired degree. It will take about another 30 seconds. on each side to obtain medium doneness, and 1.5 min. – for deep.
Preparing cheeseburger patties
Only laboratory specialists and those who produce them can say exactly about the composition of the famous McDonald's cutlets. Obviously, this is kept in the strictest confidence and most likely due to the quality of the components used. The advantage of homemade cheeseburgers is that we can cook the cutlets ourselves, although some people prefer to buy semi-finished products.
Many housewives have their own signature recipes for cutlets, but in this case you should prepare minced meat from ground beef, spices, salt and pepper. To achieve maximum similarity, it is very important to form the cutlet in the form of an ideal tablet, which should be slightly larger than the diameter of the bun, or equal to it. Savings are inappropriate here.
A more piquant taste will be obtained if you add breadcrumbs (5 teaspoons per 0.5 kg of meat), spices and salt to taste and, of course, one egg to the beef passed through a meat grinder. Thanks to the last component, the cutlet fried in oil will turn out very rosy and appetizing. Prepare plenty of minced meat, because cutlets can be prepared at any time to treat them or cheeseburgers to unexpected guests. Children will especially appreciate this delicacy.
Add cutlet spices 1 teaspoon per 0.5 kg of beef:
- Coriander
- Caraway
- Oregano (more commonly called oregano)
The taste of cutlets with this composition will differ from traditional fast food, but only for the better.
Remember that freezing must be done quickly so that the cutlets retain their shape.
And you shouldn’t experiment with a steamer to reduce the calorie content of cutlets if the real “McDonald’s” taste is more important to you than the calorie content. We send the cutlets for frying to a heated frying pan with vegetable oil only when frozen, otherwise they will lose their shape.

Burger patties, the recipe of which consists of beef, can be baked in the oven.
Prepared in this way, they also turn out tender if all the necessary requirements are met. The special feature of this recipe is the addition of onions to the meat mixture.
What ingredients will you need?
To prepare these cutlets you will need:
- 500 g lean ground beef;
- 0.25 tbsp. finely chopped onion;
- 1 tsp. kosher salt and Worcestershire sauce;
- 0.25 tsp each garlic powder and black pepper.
Step-by-step cooking process
To prepare beef cutlets baked in the oven, you will need to follow these steps:
- It is necessary to preheat the oven to 220°C.
- Next, combine the ground beef, onion, salt, garlic powder, pepper and Worcestershire sauce in a large bowl and form into 4 patties.
- After this, you should take a baking sheet and place a wire rack on it, spray it with food-grade oil spray, and place the meat products on top of it.
- They need to be baked in a preheated oven for 4–6 minutes. on each side.

In this version of the recipe, practically no additional spices are used, since the taste and aroma of the dish is provided by natural smoke.
What ingredients will you need?
For the recipe for beef cutlets cooked on the grill, you need:
- 500 g minced beef;
- kosher salt;
- black pepper.
Step-by-step cooking process
Hamburger patties are prepared in the oven as follows:
- Form the minced meat into 4 equal-sized cutlets with a diameter of about 10-12 cm.

The main requirement of this recipe is the use of minced chicken made specifically from white meat. When purchasing a finished product, be sure to check its composition. Additionally, it is easy to grind chicken breast in a food processor at home. To do this, you will need to remove all excess fat and cartilage, as well as bones and skin, cut the meat into cubes and grind.
Having received high-quality minced meat, you should proceed to the main steps of the recipe:
- It is necessary to place the minced chicken in a bowl, using a rubber spatula, mix it with milk, 0.5 tbsp. breadcrumbs, chopped onion, black and cayenne pepper and salt. The mixture will be very wet, making it difficult to form into patties.

Making a hamburger couldn't be easier
Cooking cheeseburgers is not a troublesome task, but they will disappear from under your nose so quickly, so it is better to be patient and have a lot of initial ingredients. For this you will need a sesame bun, cut lengthwise, a delicious homemade cutlet, a tomato, pickled or pickled cucumbers, mustard, mayonnaise, lettuce ,
ketchup and, of course, the main component of a cheeseburger - cheese.
It makes no sense to talk about the number of grams for each component, because each person at home can use more of his favorite ingredients in each burger.
If you have a choice between pickled and pickled cucumbers, choose pickled cucumbers. The crunch of each piece and the luxurious bouquet of spices that permeate the cucumbers will give the sandwich a special, unique taste. - Make the meat mixture by combining the ground pork in a large bowl with the salt, onion, eggs, milk and pepper, then divide it into 8 portions.
- Next, you need to lightly grease a large non-stick frying pan with vegetable oil and heat it over medium heat.
- Working in batches, lower each portion of minced meat into the hot pan, forming round cakes with your hands. Immediately after placing in the oil, you need to press each product with a spatula to flatten it.
- It is necessary to fry the cutlets, turning once, for 4-5 minutes. on each side until golden brown.
It is recommended to serve pork burgers with Dijon mustard.
McDonald's cutlets at home
Everyone loves McDonald's, especially children. The food in the establishment is, of course, delicious, but it’s difficult to call it healthy, since we don’t know what ingredients our favorite fast foods are prepared from. Let's try to make a cutlet similar in taste to McDonald's, but without flavoring additives.
Recipe components:
- beef – 0.5 kg;
- ground black pepper and salt;
- breadcrumbs - 5 tbsp. l.;
- oregano, cumin, coriander - 1 tsp each;
- vegetable oil for frying;
- egg.
Cooking time: 30 minutes.
Number of calories: 205 kcal.
Cooking steps:
- Pass the beef, cut across the grain, through a large meat grinder several times;
- Add breadcrumbs to the minced meat and beat in the egg. Stir, then add salt and sprinkle with all the seasonings;
- Wet your hands in cold water and divide the minced meat into equal parts weighing 50-100 g;
- Form balls and pass each one through a cutlet press so that they acquire the same thickness and size;
- Fry the cutlets in a thick-bottomed frying pan in a small amount of vegetable oil for 8 to 10 minutes on each side.
Pork in sour cream sauce is an incredibly tasty dish that goes well with any side dish.

Turkey
If you imagine a light hamburger for girls, the option with a ground turkey patty seems optimal. This is a light dietary meat that goes well with leafy greens and vegetables. In the summer, you can even fry these cutlets on the grill, but in this case you need to take into account that ground turkey is less sticky, and the products can fall apart right on the grill.
What ingredients will you need?
For the turkey hamburger patties you will need:
- 500 g freshly ground turkey (a mixture of dark and white meat);
- 2 tbsp. l. grated onion;
- finely grated peel and juice of 1 small lemon (about 2 tsp zest and 2-3 tbsp juice);
- 1 clove of garlic, chopped;
- 2 tbsp. l. finely chopped mint, plus more to taste;
- 0.5 tsp. freshly ground black pepper;
- 1 tsp. sea salt;
- 1 large egg, beaten;
- 1 tbsp. l. olive oil;
- 4 regular hamburger buns;
- 1 small lemon, sliced, for serving.
Step-by-step cooking process
These light and flavorful products are prepared as follows:
- You need to place all the ingredients, except the butter, buns and lemon slices, in a bowl and mix well with a fork.
- Next, you need to divide the mixture into 4 equal parts and form each of them into a cutlet, place them on a parchment-lined baking sheet or large plate, cover and cool in the refrigerator for at least 1 hour.
- Next, heat the oil in a large, heavy frying pan over low heat.
- Working in batches if necessary to avoid overcrowding the pan, add the cutlets and cook for 6 to 8 minutes on each side, until golden brown.
- After this, you should transfer the finished products to a warm plate and immediately serve them with buns and lemon wedges.
Where to get a cutlet press
Making cutlets is easy, but forming a beautiful and even cutlet, but only for a hamburger, is much more difficult. In this case, an interesting device called a press comes to the rescue.
The press is a round metal form into which the required amount of minced meat is placed and pressed down on top using a lid. The result is a flat and even cutlet with a grooved surface.
You can purchase a hamburger press in online stores or in shopping centers in the kitchen (bar) accessories department.

In most cases, premium ground beef is used as the meat filling for hamburgers. For example, rump or sirloin. However, minced meat made at home is the most delicious.
Cooking steps:
- Cut off the veins of washed meat and remove films. Dry with kitchen paper towels and cut into small pieces. Pass the meat ingredient through a meat grinder at least three times. As a result, the minced meat will acquire the desired consistency: homogeneous and soft. With this filling it will be easier to form beautiful cutlets;
- Next, you need to mix the minced meat with your hands, add salt and pepper to taste. Divide into 4 parts of equal weight and form cutlets from each using a press;
- Fry over moderate heat on each side for 3 minutes.
During the frying process, under no circumstances should you put pressure on the cutlets. Otherwise, the juice will leak out and they will become dry.

Lamb cutlets are a great alternative to beef and are very easy to prepare. Their burgers can be served with baked sweet potato wedges or delicious homemade hummus.

To prepare lamb cutlets for hamburgers you need:
- 1 pinch of black pepper;
- 1 fresh egg;
- 2 cloves garlic, crushed;
- 1 drop of olive oil;
- 1 pinch of salt;
- 2 shallots, finely chopped;
- 0.5 tsp. oregano;
- 500 g minced lamb without additives;
- 2 tbsp. l. tomato puree;
- 1 tbsp. l. whole grain mustard.

Lamb burger patties are made as follows:
- It is necessary to preheat the oven to 190°C and lightly grease a baking sheet with olive oil.
- Next, you need to beat the egg with chopped garlic, tomato puree, mustard, oregano, pepper and salt.
- Next, place the ground lamb and chopped shallots in a large bowl, pour in the beaten egg mixture, mix well with your hands, and then form four hamburger flaps.
- The prepared products should be placed on a greased baking sheet and cooked in the oven for 20-30 minutes, depending on how thick they are.
Rules for serving and decoration
It is recommended to prepare a yoghurt-mint sauce to add a delicious taste to burgers with lamb cutlets. To do this, you need to mix Greek yogurt, a squeeze of lemon juice, a little chopped garlic and chopped fresh mint leaves.

- homemade lard – 50 g;

Step-by-step preparation
- Wash the meat thoroughly in running water and dry with paper towels. Cut into large strips across the grain and then into cubes. Or we pass it through a meat grinder once or twice, that is, as much as is needed at our discretion.
- Chop the lard into small pieces.
- Place both ingredients in a deep container, add pepper and salt.
- Knead the finished minced meat with your hands for about 1 minute. Roll it into one ball, lift it over the bowl and throw it back with force. This makes the cutlets more juicy.
- Grease a flat plate with oil. We use it inside to process the serving ring, with which we will sculpt meat products.
- Place the mixture in a round pan, filling it to the middle. Level the surface with your fingers or a spoon.
- Wrap in cling film and place in the refrigerator for 30 minutes. Take it out and roll it in breadcrumbs.
- Heat the grill pan well. Remove the ring, lay out the semi-finished product, fry on both sides for 5 minutes. If desired, place in the oven preheated to 180°C for 5-7 minutes.
Tip : during cooking, we try not to press on the meat, otherwise all the juice will come out and the product will turn out dry.
Place the finished cutlet in a heated bun with sesame seeds, greased on the inside with ketchup and mustard (you can use Dijon or any other sauce). Add 2-3 slices of pickled cucumbers, thinly sliced onion rings, lettuce, tomatoes and a little cheese.
Vegan option
Vegan and vegetarian burgers are becoming more common these days. Strange as it may sound, cutlets without the use of meat products can be successfully prepared. For example, they can be made from minced soy and wheat gluten, seasoned with various spices.
What ingredients will you need?
To make vegan hamburger patties you will need:
- 125 g soy mince;
- 1 cooked beet (boiled or baked);
- 1 tbsp. l. soy sauce;
- 0.5 tbsp. l. brown miso paste;
- 1 tsp. Marmite (or any other vegan yeast extract);
- 0.5 tsp. agave syrup;
- 1 tbsp. l. granules for bisto sauce;
- 0.25 tsp ground cumin;
- 0.5 tsp. smoked paprika;
- 3 cloves garlic (heavily minced);
- 60 g wheat gluten;
- 2 tbsp. l. corn flour;
- 2 tbsp. l. water;
- 2 tbsp. l. any vegetable fat;
- 0.25 tsp fine sea salt;
- 3 tbsp. l. beet juice;
- 2 tbsp. l. dark soy sauce;
- 1 tbsp. l. Chinese black vinegar;
- 1 tbsp. l. liquid smoke;
- a pinch of black pepper.
Step-by-step cooking process
Vegetable cutlets with barbecue flavor are prepared as follows:
- It is necessary to bring water to a boil in a saucepan, boil the soy mince for 10 minutes. After cooking and softening, drain the liquid through a sieve and place it over the pan. Let the excess water continue to drain while you prepare the other components.
- Next, you need to place the beets, soy sauce, miso paste, agave syrup, sauce granules, cumin, paprika and garlic into the blender bowl, beat everything together, but grind until smooth.
- Pour the resulting mixture into a medium bowl and add the rehydrated soy mince into it, then use a mixer to mix everything until completely combined.
- Then add wheat gluten, followed by water and corn flour, and mix all ingredients well.
- When using a mixer, you need to install the dough hook and knead the resulting mass for about 5 minutes. at low speed. If mixing by hand, you will need to do it with your hands.
- When the minced meat is homogeneous, you need to add any vegetable solid fat (melted), salt and pepper, stir again and divide the mixture into 8 balls, roll them into cutlets with your hands.
- Next, you need to turn on the steamer or place a special stand on a pan of boiling water, wrap each product in greaseproof paper and place it in the steamer, seam side down.
- Vegan cutlets should be steamed for 1.5 hours, halfway through this time you will need to turn them over.
- Then you need to leave the products to cool for 10 minutes. At this time, you need to mix beet juice, dark soy sauce, Chinese black vinegar and liquid smoke in a small bowl.
- After this, you need to fry the cutlets in a hot frying pan (without oil) for about a minute on each side. Using a pastry brush, coat each piece with the sauce while it fries. After turning over, you need to cover the other side.
When frying cutlets from most types of minced meat, it is recommended to follow the following rules:
- When shaping products, it is important to stick to only light touches. The more the minced meat is processed and compressed when forming the cutlets, the denser and tougher they will be when finished. Instead, separate large, fist-sized pieces of ground meat and press them onto the work surface with the palm of your hand, then gently pat the edges into a uniform round shape.
- Don't worry if the edges of the uncooked patties look a little lumpy or have cracks - don't be tempted to make them nice and even. These aesthetic flaws will result in an exceptionally tender burger.
- By making a small “dimple” in the middle of the product, you can avoid the problem in which the cutlets are halved in diameter and “grow” in the middle. To make this dimple, you need to use your fingertips, pressing the middle of the workpiece a little harder than the outer edge.
- Cook the cutlets over medium heat in a flat frying pan (if it is not possible to use a grill). The pieces should sizzle when they hit the pan and should have a nice dark golden brown color on the underside when flipped.
- In addition, a wide and very thin spatula is best for frying - it allows you to quickly slide under the cutlet and flip it without ruining the beautiful crust that has just formed. This also prevents these softer pieces from starting to fall apart.
- Regardless of the burger patty recipe used, you need to very carefully monitor the frying or baking time; it’s even best to use a timer or stopwatch, since literally seconds count.
A simple recipe for hamburger cutlets at home with photos
