Today you can find different recipes for zucchini rolls with minced meat. They differ not only in different types of minced meat and fillings, but also in the method of preparation. So, zucchini rolls with meat can be cooked in a slow cooker, fried in a pan or baked in the oven. Each type of roll will be delicious in its own way.
In my opinion, the most delicious are zucchini rolls with minced meat in the oven . For the filling you can use not only chicken meat, but also minced pork or beef. To prevent them from becoming dry during baking, they are mainly cooked in a sauce. It can be either tomato sauce, creamy or sour cream. Zucchini rolls with minced meat in the oven can be prepared using different varieties of zucchini. The main condition is that they must be young and not contain seeds. These zucchini rolls are especially good, the flesh of which is juicier than other varieties. Wash the zucchini. There is no need to peel them. The green border will look quite beautiful against the background of the orange sauce.
Trim the ends off both sides of the squash. Zucchini should be cut into thin slices. The most convenient way to do this is with a vegetable peeler. If it is not there, prepare a sharp and thin knife. When cutting zucchini, you will definitely end up with substandard quality. Such pieces can be grated and added to the minced meat.
Lightly sprinkle the zucchini slices with salt. The salt will make them juicier and softer, making them easier to roll. Leave the zucchini for 10 minutes. In the meantime, you can start preparing the filling for the rolls. To fill the rolls, you can use either ready-made minced chicken or chicken breast chopped in a blender.
Place the finished minced chicken into a bowl. Add a small onion grated on a fine grater or chopped in a blender. Onion puree is better distributed in the minced meat than even finely chopped pieces.
Salt the minced meat, add ground black pepper, Provençal herbs and turmeric.
Mix all components of the meat filling thoroughly.
Apply minced chicken onto the zucchini strip.
Roll up the zucchini.

In a separate bowl, mix sour cream with ketchup and a pinch of salt.

Ingredients:
- 2 pcs. medium young zucchini;
- 200 g Gouda cheese;
- 2-3 tbsp. l. odorless oils for frying;
- 2 (or less or more) cloves of garlic;
- 2 pcs. large eggs;
- 4-5 branches of dill.
Preparation:
- Wash the eggs and boil in salted water for 12 minutes until the yolk is hard.
- Wash the zucchini, wipe with napkins and remove the stalk. If the vegetable has a rough skin, it is better to cut it thinly.
- Divide the zucchini into thin longitudinal slices no more than 5 mm thick.
- Fry the slices in hot oil until golden brown, 2-3 minutes.
- Blot the fried plates from excess oil with paper towels.
- Grate the hard-boiled eggs and gouda on a standard medium grater.
- Chop the dill into smaller pieces and mix with the garlic pressed through a press.
- Mix the filling ingredients and season with freshly ground pepper as desired.
- Place the filling on one edge of the rosy zucchini plate and wrap the slice with a roll.
It is better to serve a dish with a soft and moderately spicy filling with chopped herbs, sour cream or homemade mayonnaise.
Important! It is necessary to fry the zucchini after the oil is very hot, as the crust will immediately “seize” on the vegetable and it will not be saturated with oil.

- 1 zucchini;
- 250 gr. chicken breast;
- 1 clove of garlic; 75 gr. hard cheese;
- salt, herbs, mayonnaise to taste.
Cut the zucchini into thin slices 0.5 cm thick. Season with salt and pepper. Place the plates on a baking sheet, lightly greased with oil, and bake at 190 degrees for about 20 minutes. Let cool.
Cut the chicken breast into thin long slices, beat with a hammer, salt and pepper to taste. Place a piece of chicken on the prepared zucchini plate and add a small amount of chopped garlic on top. Then add mayonnaise and sprinkle with grated cheese.
We roll the zucchini into rolls and secure with skewers. You can use toothpicks or long wooden skewers; in the latter case, you can put 2-3 rolls on one skewer. Bake at 180 degrees for about 40 minutes. Serve cold or hot.

- Buy zucchini of medium length, no more than 15-20 cm. The weight of a good zucchini does not exceed 250-350 g. If the fruit is too large, it means that it is overripe and should not be consumed. In addition, old zucchini contains many large seeds, which are usually removed. They also have a hard skin that is cut off.
- The skin of a good fruit should be smooth and quite thin to the touch. They should not have dents, depressions, or irregularities. Another quality criterion is the even color of the zucchini, which ranges from yellowish-green to green-brown. The presence of dark yellow and brown spots indicates that the vegetable inside has begun to rot.
- Store the purchased zucchini at a temperature of 0 to +5°C and a humidity of 85%. Then the young fruits will remain fresh for 2 weeks. To extend the shelf life, zucchini does not need to be washed. Although they can be stored longer, all the beneficial substances will not be preserved.
- To prepare zucchini rolls, the vegetable is most often cut into slices. They should be thin so that they can be rolled easily. If the zucchini is cut into thick sheets, the roll may unravel when rolled. Then you will have to fix it with a toothpick.
- Zucchini slices are subjected to different heat treatments: fried in a dry frying pan with a non-stick coating, baked in the oven on a baking sheet with greased oil, or simply poured boiling water for 3-5 minutes to make the slices softer.
