This vegetable casserole with chicken fillet and bechamel sauce is vaguely reminiscent of Italian lasagna. It is prepared from simple and easily available ingredients. And the process itself does not take too much time. In such a situation, you will need:
- 700 grams of young zucchini.
- 450 milliliters of 1% milk.
- 450 grams of chilled chicken fillet.
- Large onion.
- 45 grams of butter.
- Fresh egg.
- 45 grams of flour.
- 250 g of good hard cheese.
- 200 grams of feta cheese.
- Salt, garlic, pepper and nutmeg.
To prepare a delicious casserole of zucchini and meat, fry chopped onions and chopped garlic in a frying pan with melted butter. After five minutes, add flour, salt and seasonings. All this is poured with milk, sprinkled with cheese and brought to the required thickness. Now that the sauce is completely ready, you can move on to the main stage.
Place zucchini plates on the bottom of the greased pan. They are topped with sauce and covered with pre-boiled fillet pieces. Layers of vegetables and meat alternate several times, not forgetting to lubricate them with filling. The top of the future casserole is covered with a mixture of beaten egg and crumbled cheese. For cooking, you can take vegetables of any ripeness; slightly overripe fruits will also work. Minced meat is also at your discretion: pork, turkey, mixed.
Ingredients:
- Zucchini – 750 g;
- Minced chicken – 500 g;
- Chicken eggs – 2 pcs.;
- Onions – 1 pc.;
- Sweet pepper – 1 pc.;
- Hard cheese – 60 g;
- Dill - to taste;
- Sour cream – 2 tsp;
- Sunflower oil – 2 tsp;
- Dry garlic – 1 tsp;
- Mixture of peppers, salt - to taste.
Cooking method:
- We wash the zucchini and be sure to remove the skin and seeds from the old fruits. Three on a coarse grater. Add salt to taste and mix.
- We clean the sweet peppers from seeds and membranes, and then cut them into small cubes. Chop the onion into quarter rings.
- Chop the greens. Add salt, pepper, onion and dry garlic to the minced meat. Mix everything thoroughly.
- Squeeze the zucchini mass from the liquid. Combine with chopped pepper and minced meat. Pour the greens in there and beat in the eggs. Mix everything.
- Grease a heat-resistant dish with vegetable oil and place the vegetable mixture in it. Lubricate the surface generously with sour cream. Place the pan in the oven and bake at 180 degrees for 30-35 minutes. At the end, sprinkle with finely grated cheese and leave in the oven for another 10 minutes.

- Half a kilo of zucchini.
- 400 grams of minced pork.
- Egg.
- 50 grams of flour.
- Salt, vegetable oil and aromatic spices.
Washed zucchini is peeled and seeded, and then processed using a grater. The resulting mass is mixed with egg, flour, salt and spices. Place minced meat into a pre-greased multicooker container. A layer of zucchini mass is evenly distributed on top and the whole thing is covered with a lid. Ingredients:
- Young zucchini – 1 piece;
- Tomato – 2 pcs.;
- Sweet pepper – 1 pc.;
- Chicken fillet – 600 g;
- Hard cheese – 150 g;
- Mayonnaise – 3-4 tbsp. l.;
- Salt, black pepper - to taste.
How to prepare:
- Cut the chicken fillet into thin steaks and beat them with a hammer. Shred zucchini, tomatoes and bell peppers into rings.
- Grease a baking dish with a small amount of vegetable oil. Lay out the ingredients as in the photo, alternating: zucchini – chicken fillet – tomato – pepper.
- Salt and pepper to taste. We draw a mayonnaise mesh on top. Place in the oven preheated to 200 degrees for 30 minutes. Meanwhile, grate the cheese on a coarse grater and after half an hour generously sprinkle the dish with it. Bake for another 5-7 minutes.
- The original zucchini-chicken casserole is ready. Despite its simplicity, it can be served as an original snack for a holiday table in the summer.

This dish contains low-calorie chicken and a large number of various vegetables. Therefore, it is certainly appreciated by those who adhere to proper nutrition. Since this recipe for zucchini with meat in the oven requires the use of a specific list of ingredients, double-check in advance whether you have on hand:
- Half a kilo of minced chicken.
- 700 grams of young zucchini.
- Medium onion.
- Sweet pepper (preferably red).
- A couple of eggs.
- 60 grams of hard cheese.
- A couple of large spoons full of 15% sour cream.
- A clove of garlic.
- Salt, vegetable oil, any spices and dill.
The washed zucchini is processed on a coarse grater, added some salt and kept for a short time at room temperature. After literally five minutes, the juice is squeezed out of them, and the vegetable mass itself is combined with minced chicken. Chopped onions, crushed garlic, diced peppers and eggs are also sent there. Mix everything vigorously and place it in a greased, heat-resistant container. The surface of the future casserole is greased with sour cream and removed for heat treatment. Cook the dish at medium temperature for half an hour. Then it is generously sprinkled with grated cheese and returned to the oven for another fifteen minutes.
Zucchini casserole with tomatoes
In the midst of summer, you can treat your loved ones to an original casserole, the basis of which is zucchini and tomatoes. The recipe suggests frying the ingredients before baking. but you can also use completely raw vegetables. Then the baking time will approximately double.
Ingredients:
- Young zucchini – 2 pcs.;
- Fresh tomatoes – 2-3 pcs.;
- Hard cheese – 150 g;
- Onion – ½ -1 pcs.;
- Chicken egg – 1 pc.;
- Cream (10%) – 100 ml;
- Sunflower oil – 50 ml;
- Salt - to taste.
What we do:
- First, wash all the vegetables well and wipe dry with a towel.
- Cut the zucchini into not very thick slices, put them in a plate and add salt. Mix.
- Place in a hot frying pan with sunflower oil and fry for 1-2 minutes on each side.
- Remove the peel from the tomato and cut the pulp into small cubes.
- Hard cheese, coarsely grated, into three pieces.
- Beat the chicken egg with a whisk with cream. Add some salt to the mixture.
- Chop the onion into thin half rings.
- Grease the heat-resistant form with any fat. Make a layer of zucchini, cheese and more zucchini.
- Then add half the tomato. Repeat the layers again and sprinkle onion half rings on top.
- Pour in the egg-cream mixture and sprinkle with cheese. Send to bake in the oven at 180 degrees for 20-25 minutes.

— chicken fillet 400-500 gr.; - 1 huge or 2 small zucchini; - 1 turnip onion; - 1 carrot; - eggs 2-3 pcs.; - sour cream 100-150 g 4 tbsp; - mustard 1 tbsp; - cheese 150 gr.
1. Remove the peel and seeds from the zucchini, cut the pulp into cubes with a side of about 1-2 cm. Rinse the chicken fillet and cut it in the same way as zucchini.
Sometimes it is “easier” to cut meat frozen if you are very concerned about the correct geometry of the chicken cubes.
2. Onion, peeled and damaged, cut into cubes or half rings.
We cut off the peel from the carrots with a paring knife or potato peeler, wash them to remove dirt and grate them on a coarse grater. Options for cutting into cubes or cubes are available.
3. Heat the frying pan over medium heat. Add sunflower oil and fry the onions and carrots until transparent and soft for 6-8 minutes.

Zucchini casserole with vegetables: potatoes, onions, carrots
Options for preparing zucchini casserole with other vegetables will appeal to vegetarians and PP supporters. An all-vegetable, meat-free casserole is not only tasty, but also healthy. It is better to prepare it in season, when fresh vegetables can be picked from the garden or bought at the market. The process is no different from the usual: either cut everything and lay it out in layers, or grate and mix.
With potatoes : Peel the potatoes, cut into thin slices, lightly fry and place in a mold, alternating with other ingredients.
With onions: Peel the onion and chop into fairly thick rings. You can sauté the onion or use it raw. Place it strictly in the middle of the casserole.
With carrots: Peel the carrots, cut into circles or slices. You can fry it or layer it directly raw like the rest of the ingredients.
Second version of carrot and zucchini casserole: Grate vegetables. Mix with one egg, flour and salt. Bake in the oven for about 25 minutes. At the end you can sprinkle with grated cheese. The dish will become much tastier. What to cook the casserole with is up to you!

- 250 grams of any minced meat.
- A couple of eggs.
- 100 grams of rice.
- Large onion.
- 650 grams of zucchini.
- A couple of large spoonfuls of flour.
- Hard cheese.
- Salt, spices, fresh herbs and vegetable oil.
The washed rice is poured with water and boiled until half cooked. After this, it is combined with eggs, fried minced meat, sautéed onions and grated zucchini. Flour, salt and spices are also added there. Mix everything thoroughly, put it in a greased form and send it for further heat treatment. This casserole of zucchini and meat is prepared at one hundred and ninety degrees for no more than thirty-five minutes. Just before serving, it is sprinkled with grated cheese and chopped herbs.
Process description
The minced meat is lightly fried in vegetable fat. As soon as it is browned, add salt and chopped onion. Mix everything well and cook for a couple more minutes. Then add a couple of chopped tomatoes to the frying pan and almost immediately remove it from the heat.
Washed and peeled vegetables (potatoes and zucchini) are grated on a medium grater, sprinkled with salt and left for a short time at room temperature. After a few minutes, the resulting juice is squeezed out. Place half of the squash and potato mixture into an oiled pan. Place all the fried minced meat on top, brush it with sour cream mixed with crushed garlic, and cover with the rest of the vegetables.
The future casserole of zucchini with meat is decorated with the remaining tomato, cut into thin slices, and removed for subsequent cooking. Cook it at medium temperature for no more than half an hour.
