Cabbage salad with carrots is a classic of the genre. This snack is called a “broom” because raw cabbage and carrots sweep out waste and toxins from the intestines, free it from debris and give a powerful boost of energy. You can season this salad with fragrant vegetable oil or homemade mayonnaise without a gram of chemicals.
This salad is easy and simple to prepare. Finely chop 400 g of cabbage, add a pinch of salt and sugar and remember well with your hands. The cabbage will become softer and produce juice. Grate 1 carrot on a medium grater and mix with cabbage.
There are many different recipes for homemade mayonnaise, but this one is one of the most delicious! Mix 150 ml of medium-fat milk and 300 ml of odorless vegetable oil. Beat the mixture with a blender, add 2 tsp. prepared mustard, 2 tbsp. l. lemon juice and a pinch of salt. Whisk the sauce again to a pleasant thickness and season the salad with it.
If you eat a delicious “broom” every day, your skin will become soft and velvety, and your performance will noticeably increase.
Carrot salad with pork meat
An interesting and spicy salad to diversify your diet.
Ingredients:
- Pork pulp – 200 gr.
- Onions - 2 pcs.
- Garlic – 2 cloves.
- Carrots – 1 kg.
- Soy sauce – 20 ml.
- Vegetable oil – 4 tbsp.
- Sesame seeds – 10 gr.
- Hot pepper - a pinch
- Salt, black pepper - to taste.
Preparation:
Peel, wash and grate or cut the carrots into long strips. Season with soy sauce and hot pepper. Lightly knead with your hands and set aside for a few minutes. Cut the meat into thin slices and fry in a frying pan with vegetable oil, then add the onion to the meat and cook until golden. Mix carrots with meat and onions, add salt, add squeezed garlic. Mix all ingredients. Sprinkle sesame seeds on top.
Korean snack
Korean carrots are no less healthy than fresh ones, especially if you cook them yourself. At least you will know for sure that the dish does not contain monosodium glutamate or other flavoring additives. Homemade is always healthier and tastier!
You will need a special grater for Korean carrots so that you can grate them into long, beautiful shavings. Grind 250 g of carrots in this way, sprinkle it with 1 tbsp. l. sugar and 0.5 tsp. salt, and then leave for 5 minutes to lightly marinate. Add 1 tbsp. l. 9% vinegar, 2 cloves of finely chopped garlic and 1 tsp. spices for Korean carrots. Don't stir, just let the seasonings sit on top. Heat 2.5 tbsp. l. oil to high temperature and pour over garlic and spices. They will sizzle and acquire a special aroma.
Pour boiling water over 100 g of funchose for 5 minutes and chop 1 bell pepper into strips. Drain the funchose into a colander and lightly chop so that it is not too long. Mix funchose, pepper and Korean carrots, sprinkle with 1 tsp. black sesame seeds, season with your favorite spices, finely chopped parsley and vegetable oil to your taste.

Ever since my own childhood, carrots, grated on a fine grater and sprinkled with sugar, have often appeared on the table as a healthy dessert. And I’ll tell you the truth - I loved it very much, especially if it was also smeared with sour cream on top. It was simply delicious, and in addition to everything else - my mother knew how to beautifully decorate the dish, decorating it with sour cream or sweet cream on top.
But for what exact reason I adored this dish so much, I can’t say either then or now, if only because I didn’t think about this question. And when I became a mother myself and my children started growing up, I prepared grated carrots for them and sprinkled them with sugar. True, like my grandmother, I didn’t add sour cream, although it’s always in the refrigerator and not the runny store-bought stuff in a bag, but natural and rich one from the market.
The children ate such an improvised and simple, but very healthy dessert with pleasure and from that moment on - it never leaves my table as a homemade delicacy. But what is the secret of this dish? No, here we are not talking about its gastronomic characteristics, but rather about what is the benefit as a dietary dish, a source of vitamins for the whole body? Let’s try together to sort out the popularity of this dish one by one.
First of all, everyone knows very well that raw carrots contain a large number of vitamins A and C, and many other elements and compounds that benefit the entire body. It is about the benefits of the latter that we will talk further.
Due to the high content of vitamin A in raw carrots, it can significantly improve vision, restore damaged neural connections and the lens, which most often suffer not only from injuries or age-related changes, but also from working at the computer or watching TV for a long time, which are everywhere and often work 24 hours a day and 7 days a week.
Why is it worth grating carrots? After all, you can chew raw, peeled ones, dipping it, for example, in sugar or jam - it’s tastier and more fun. And for the most part, doctors themselves say that by gnawing carrots like this, the enamel of the teeth is cleaned mechanically. And this is what little children who really don’t like brushing their teeth with a brush and toothpaste need.
But there is a peculiarity here - even in grated form it does not lose its properties, but in the stomach it is digested better and faster by the body, and all nutritional components are absorbed faster without being lost. But why sprinkle it with sugar - they say that it is harmful to the body. It is the presence of sugar in grated carrots that provokes the release of juice, which is absorbed into the body much faster through the walls of the stomach and quickly fills the body with useful vitamins and nutritional components. It is for this very reason that it is worth grating the carrots, not so coarsely as finely, and serve them to the table, sprinkled with sugar.

If you want something more satisfying, prepare a warm salad with chicken and carrots, which can be served as a main course. Chicken “rhymes” perfectly with carrots, and to make it softer and juicier, it can be pre-marinated.
So, cut 400 g of chicken fillet into thin strips and marinate the meat for 15 minutes in 2 tbsp. l. olive oil mixed with any spices.
Fry the chicken until golden brown in a frying pan in vegetable oil and at the very end add a medium-sized onion chopped into cubes. While the chicken and onions are fried, cut the peeled bell pepper, 1 carrot and 1 large cucumber into strips.
Place lettuce leaves on plates, place all the other products in a beautiful mound on top, drizzle this splendor with olive oil and garnish with 2 cherry tomato halves.
Salad of fresh carrots and pickled mushrooms
Salads made from fresh carrots can be varied with sour ingredients, which gives new shades of taste and adds satiety to the dish.

Beetroot mix
Carrots, beets, walnuts, cheese - this is one of the best carrot salad recipes. In addition, do not forget that it contains beta-carotene, which can stop the development of cancer, especially if you eat fresh carrots.
Grate 200 g of raw carrots and 200 g of boiled beets on a coarse grater. You can, of course, take raw beets, but this will be too serious a test for the gastrointestinal tract. Boiled beets have a softer and more pleasant taste.

Pour boiling water over 200 g of couscous - 400–500 ml of water will be enough. Cut 2 sweet peppers and half a red onion into rings, chop 1 carrot on a medium grater, wash a handful of spinach and a bunch of parsley well and separate the leaves from the stems.
Place some swollen couscous in a deep bowl and arrange vegetables and herbs beautifully next to it. Drizzle the dish with olive oil and sprinkle with black sesame seeds.
