Ingredients:
- 425 g of any minced meat;
- baby zucchini;
- one onion and one carrot each;
- large tomato;
- 125 g cheese;
- seasonings, herbs.
Cooking method:
- If your vegetable is overripe, then peel it; if it is young, then leave it.
- We cut the zucchini lengthwise, remove the pulp from each half with a spoon, that is, we make boats. We will tell you how to bake zucchini rings a little later. You don’t have to throw away the pulp, but use it to make delicious pancakes.
- Now let's get to the filling. To do this, pour a little oil into the frying pan and add onion cubes, sauté the vegetable until golden. Then add grated carrots and fry the vegetables for another 5-7 minutes.
- Now lay out the minced meat, add salt, pepper, and simmer until the juice has evaporated.

- a cup of rice grains;
- 115 g cheese (hard);
- zucchini;
- onions and carrots;
- spices to taste.
Cooking method:
- We will start preparing our appetizer with the filling. To do this, first of all, boil the rice grains until tender. Then we wash them so that the grains do not stick to each other and pour them into a bowl.
- Chop the onion into cubes, chop the carrots on a grater and sauté the vegetables until soft.
- Add the minced meat and cooled fried vegetables to the rice, season with spices and mix everything well.
- We make boats from zucchini (see above); if the halves are unstable on the baking sheet, then cut a thin strip of the vegetable from the back side.
- Now we fill our boats with filling, pour cheese on top and put them in the oven for 35-40 minutes (temperature 190C).
Recipe with minced mushrooms
Zucchini can be stuffed with any minced meat, it all depends on your taste preferences. You can even make minced mushrooms, however, the dish will turn out to be more vegetarian, and if you want to cook a hearty dinner, then you can’t do without meat.
Ingredients:
- zucchini;
- 420 g minced meat;
- 155 g mushrooms;
- bulb;
- two cloves of garlic;
- two tbsp. spoons of soy seasoning;
- five tbsp. spoons of sour cream;
- spices, oil;
- 145 g cheese.
Cooking method:
- Place finely chopped onion in a frying pan with oil, sauté, then add slices of mushrooms. You can take regular champignons and fry until golden brown.
- Then lay out the minced meat, add spices, add soy and add chopped garlic. As soon as the liquid has evaporated, add sour cream (you can use heavy cream) and simmer the ingredients for a couple of minutes.
- For the recipe, we take young, not too large zucchini, cut it in half, take out the seeds and get boats, which we stuff, sprinkle with cheese and bake for 45 minutes (temperature 180C).
“Boats” with cheese
This recipe is very similar to the previous one. The difference is that we will give the vegetables a different shape. They will be cut lengthwise into boat shapes.
This change also changes the cooking order slightly. This time you need to fry the filling before putting it in the oven. This is due to the fact that the meat mass will be larger and the zucchini may be baked until done earlier than the minced meat.
Ingredients:
- 3-4 small zucchini
- Minced meat (pork, beef or chicken) - 300g
- One medium onion
- One medium sized tomato
- 3 cloves garlic
- 100 grams of hard cheese
- 300g sour cream
- Salt, pepper - to taste
Preparation:
Wash and cut the vegetables lengthwise.
Cut out the middle with a knife.
And remove the core with a spoon, forming a depression.
We achieve this form.
Now take the cores of the zucchini (I hope you didn’t throw them away) and cut them into small pieces.
Fry finely chopped onion and minced meat for 5 - 7 minutes.
Then add the zucchini cores to them and simmer for another 15 minutes.
Finally add salt and pepper.
In the meantime, this whole thing is stewing, cut the tomato.
Grate garlic and cheese.
After the minced meat has cooled a little, add tomatoes and garlic to it.
Stir and add sour cream and stir again.
Fill the resulting filling into pre-salted boats.
And sprinkle cheese on top.
Place on a greased baking sheet and place in the oven preheated to 200 degrees.
After 30 minutes, we take out the boats and decorate them with greenery.

How to cook zucchini slices with minced meat in the oven
But in this recipe we will tell you how to bake zucchini rings. For the filling we will also take vegetables and any minced meat.

- young zucchini fruit;
- 480 g minced meat;
- onion, carrot, tomato;
- 110 g cheese;
- spices, oil.
Cooking method:
- First of all, we saute the chopped onion until golden, then add the grated carrots and after a couple of minutes, lay out the twisted meat. Add spices to taste, mix everything well and simmer for a couple of minutes.
- Now take the zucchini and cut it into rings 3 cm thick. Using a spoon, remove the core and you will get rings.
- Cover the baking sheet with parchment and lay out the vegetable circles, fill them with the filling, and put the tomato circles on top, sprinkle everything with grated cheese, and bake for 45 minutes (temperature 180C).
You can also cook zucchini with minced meat in batter. To do this, we also prepare the meat filling, cut the zucchini into rings, fill them with the filling, and dip them in a batter of milk, eggs and salt. First, fry in oil, and then finish the dish in the oven.
Secrets and subtleties of preparing delicious stuffed zucchini
There are no special secrets to preparing this hot snack. Only the details may differ. For example, the type of meat - some people prefer pork, but it is very tasty with lamb, beef or half and half pork.
More dietary varieties such as chicken, rabbit, turkey, and veal can also be used as meat filling for zucchini.
Another point is the shape of the zucchini for stuffing: boats, cylinders or, like mine, rings in the form of a small cup. The height of the cylinders, rings and cups can be small, almost flat, or, like me, tall. But the most important thing is the choice of zucchini.
Since not everyone has their own vegetables, it is advisable to buy young, small-sized zucchini with thin and tender skin in a store or market. If you come across ripe fruits with thick and rough skin, then you will first need to peel it.
Although zucchini stuffed with meat is not included in the list of recognized delicacies, this dish is no less bright and refined. In addition, you will never gain weight from such a snack, since this vegetable, in addition to being low-calorie, also contains fiber, which improves digestion.
