I like it because the usual ordinary vegetable turns into an incredibly amazing treat that delights with its taste and delicate appearance. Zucchini cake always looks festive and is easy to prepare.
Ingredients:
- 700 gr. zucchini;
- 2-3 eggs;
- 100 gr. milk;
- 200 gr. flour;
- any greens;
- 200 gr. sour cream;
- 100 gr. mayonnaise;
- 150 gr. hard cheese;
- 3-4 cloves of garlic;
- salt, pepper to taste.
Cooking steps:
1. I cut off the tops of the zucchini, but do not peel the skin, since they are young. If the vegetable is mature, it is better to remove the skin. In a deep bowl, I grate the vegetable on a coarse grater. It is best to grate the zucchini at a right angle so that the strips do not end up too long. Then they will not interfere with working with the dough and forming pancakes. I beat eggs into the vegetable mass, mix well, add salt and pepper, pour in milk, add flour. I knead the zucchini dough.
2. I chop the greens very finely, take the ones you like, add them to the dough, and mix again. The result is a bright, colorful, summer dough.
3. Pour vegetable oil into the frying pan and wait until it gets hot. Then I pour the dough and distribute it throughout the pan. You should get a round pancake, fry on one side, then on the other. The pancakes turn out to be plastic and do not break when turned over.
4. I got 6 beautiful pancakes from the entire amount of dough. Be sure to leave it to cool so that the filling doesn’t “float” later.

- The first step is to prepare the dough for the cakes. To do this, you need to wash the zucchini along with 10 g of dill. Zucchini should be rubbed through a medium grater, and dill should be chopped very finely.
- Next, both components can be placed in a bowl, pour in 125 g of sour cream, break all the eggs, add half the table salt and soda. The ingredients must be thoroughly mixed until smooth.
- Now you need to sift the flour through a sieve and add it to the bowl in small parts, stirring after adding each portion. If necessary, you can add salt. At the end of kneading the dough, you should also add ground pepper.
- Then the finished dough should be divided into 6 parts and thin cakes should be baked. To do this, you can use a detachable round baking dish or a frying pan with a detachable handle. The mold needs to be greased with sunflower oil, pour some of the dough into it, smooth it out and put it in the oven, heated to 180 °C. The cake needs to be baked until it acquires a golden hue. - Now the cakes should be cooled thoroughly. In the meantime, you will need to finely chop the remaining dill, peel the garlic and press through a press. - Afterwards, you can grate the cheese on a coarse grater, rinse the tomatoes and cut into thin slices.

Gradually introduce flour, by 1 kg. I used 8 tablespoons of flour for the zucchini. The dough should be a little thicker than for pancakes. I mix everything well.
3. Now I start frying pancakes. I grease the frying pan well with vegetable oil, spread and distribute the dough evenly. I fry on both sides. With this amount of dough I got 4 pancakes. For convenience, I placed them separately.
4. I'm putting together a cake. I generously coat the top of the pancake with sauce, lay out the tomatoes, and cover with the second pancake.

2. Pour a small amount of oil into the frying pan. For convenience, I divide the dough into 3 parts, approximately 250 grams each. I transfer one part of the dough to the frying pan and level it over the pan with a spoon. The diameter of my frying pan is 22 cm. I fry the pancakes on both sides until golden brown. I do the same with the two remaining pancakes. I got 3 pancakes; while they are cooling, I prepare the filling.
3. I cut the crab sticks and boiled eggs into cubes, finely chop the mayonnaise, and mix everything. The first filling is ready.
4. I freeze the processed cheese in the freezer in advance, grate it on a fine grater, add 2 chopped garlic cloves, finely chopped dill, season with mayonnaise, and mix. The second filling is ready.
5. I start assembling the cake. I place the zucchini pancake on a plate and spread the crab stick filling on top.
6. Lay out the second pancake, spread the second cheese and garlic filling. I cover with the third pancake and grease the top with mayonnaise.
7. I decorate the top of the cake as desired. I use cucumbers for these purposes. Using a vegetable peeler, cut the cucumber into strips and decorate the dish. Sprinkle with herbs and let soak for 1-2 hours.

- Afterwards, grease a round mold with sunflower oil, divide the dough into 5 parts, pour 1 part into the mold, place in a preheated oven at 180°C and bake until golden brown.
- Then you will need to remove the baked cake from the oven and make the remaining cakes in the same way. Afterwards you need to arrange the cakes on plates, peel the garlic, chop them with a kitchen knife or press them through a press.
- Then you need to pour mayonnaise into a deep bowl, add chopped garlic to it and mix well. Tomatoes need to be poured with boiling water, carefully remove the skin, cut out the stems, cut into small cubes and place on a plate.

4. I cut the ham, bell pepper, and tomato into small cubes. I'm starting to assemble the cake. I put the cake on a plate and coat it with curd mixture. Place half of the sliced ham on top.
5. Cover with 2 layers of cake, coat with curd mixture, and place chopped peppers on top.
6. I coat the third cake layer and lay out the tomatoes.
7. I also coat the fourth cake layer and spread the remaining ham.
8. I cover the cake with the fifth cake layer and coat it with the remaining curd mass.
