In addition to taste, fish has many beneficial properties. Frying smelt takes no more than 3 minutes on each side of the fish, so its beneficial properties are preserved. Fish is also low in calories, so it can be consumed in large quantities.

How to properly fry smelt in a frying pan in flour and salt so that it turns out with a crust

A very simple and effective way. In the description I indicated the spices that I like to add to the breading. You can put it to your liking or try it like I did.

To do this we only need:

  • Smelt - how much to eat
  • Salt - 1.5 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric – 1 teaspoon
  • Shambhala - 1 teaspoon
  • Ground black pepper - to taste
  • Flour - 1 cup
  • Vegetable oil

Shambhala seasoning is not always available. If you don’t have it in stock, you can replace it with utskho-suneli or khmeli-suneli.

Cooking steps:

1. Pour flour into a plastic bag. Add paprika, turmeric, chambhala (or its replacement), ground black pepper and salt. Shake the bag thoroughly so that all the spices are distributed evenly.

For convenience, I recommend making the flour coating in a plastic bag. But if you are more accustomed to the plate, then your right, there is not much difference.

2. Next, prepare the smelt. It is not at all necessary to clean it, but you need to remove the giblets inside so that the fish does not taste bitter. I cut off the head and take out these excesses. Some people leave the head and take out the byaku by making an incision on the belly. In general, whatever suits you.

3. Place a few fish in a bag with breading, give them a good turn and shake them in the bag. This way it is properly rolled in flour with salt and spices. If you have breading in a plate, then just coat each piece thoroughly.

4. Now you can start frying. Heat a frying pan and generously pour vegetable oil into it. Next, put the smelt there and fry until golden brown on both sides. It takes approximately 3-4 minutes on each side.
