Step-by-step instruction:
- Soak the bread crumb in water for 10 minutes. Squeeze to remove excess moisture and mash into a paste with a fork.

Step-by-step preparation
- Remove the bones from the veal and turkey, wash well and cut into cubes. Place the meat in a food processor and grind.
- Pour cool water over the bread and let it stand for 3-4 minutes. Then squeeze and combine with minced meat.
- Salt the cutlet base, season with spices, add starch. Then stir vigorously with a tablespoon. To make the minced meat more flexible, it is recommended to add 50 g of boiling water.
- Make small cakes from the meat mass, at least 2.5 cm thick. Then press them down a little in the center and raise the edges of the product so that you get a shallow basket.
- Remove the skin from the onion, rinse it under the tap with water and chop it very finely. Remove the skin from the carrots, wash them, and grate them on a medium grater.
- Place the onions and carrots in a frying pan and fry in oil for five minutes.
- Wash the oyster mushrooms, cut into small slices, and add to the sautéed vegetables. Simmer the products together for 6-7 minutes until the moisture has completely evaporated.
- Cut the suluguni into thin strips 5 cm long. Open the jar of olives and drain all the liquid from it.
- Pour vegetable fat into a saucepan, set on fire and heat well.
- Fill the meat products with mushroom filling, add 3-4 olives and cover with a net of sliced cheese. Carefully place the meatballs on the grill surface and cook in a sealed container over moderate heat for thirty-five minutes.
Tip: frozen forest mushrooms (boletus, chanterelles, aspen boletuses, honey mushrooms) are good for filling. They need to be allowed to thaw, then finely chopped and fried with vegetables in a small amount of fat.

First you need to prepare the minced meat. To do this, mix the minced meat, one onion twisted through a meat grinder, an egg, salt and pepper. Mix well, then form large cutlets from the resulting minced meat.
Heat the oil in a frying pan. Fry the cutlets on one side for 1-2 minutes over high heat. We want one side of the cutlets to be covered with a crust, but the cutlets themselves remain raw inside.
No need to turn over. Fry on one side only.
Place the cutlets, fried on one side, on a greased baking sheet. Crust side down. Using your hands, make indentations in the center of the cutlets, forming “nests.”
From the specified amount of ingredients you get a whole baking sheet of beautiful nests. At the same time, fry finely chopped mushrooms and the second onion until soft.
