However, the current version of the dish with boiled sausage has nothing in common with Lucien's original recipe. The modern treat simply inherited the name, but it was invented during the Soviet era.

So, every experienced housewife should have several signature dishes in her arsenal, so let's replenish our stock of holiday recipes. First, you would like to present the classic, most often used version of Olivier salad with boiled chicken breast. It is also possible to prepare it with fried fillet - it will also turn out tasty and unusual. We are looking for new tastes and trying to surprise everyone, so we are not afraid to experiment.

Ingredients:

  • Potatoes - 3 pcs.
  • Carrots - 2 pcs.
  • Onion - 1 pc.
  • Chicken fillet – 300 g
  • Eggs - 3 pcs.
  • Pickled cucumbers – 5 pcs.
  • Green peas - 1 can
  • Mayonnaise - 2 tbsp. l.
  • Sour cream - 1 tbsp. l.
  • Salt, pepper - to taste

Cooking method:

1. Before you start cooking, you need to boil the potatoes and carrots in their skins. They need to be thoroughly washed from dirt, filled with water and put on fire. If the fruits are medium in size, they will cook for about 30 minutes. If large ones are caught, the time increases to 40 minutes or more. Check for doneness with a fork - the vegetables should be soft.

2. Boil the eggs at the same time as the vegetables. They must be hard boiled. To do this, immerse the eggs in salted water and cook them for 7-8 minutes from the moment they boil. Then turn off the heat, drain the boiling water, pour in cold water and let the eggs stand until they cool completely.

If you boil eggs in salted water, the likelihood that they will crack is minimal. Add salt at the rate of 2 tbsp. l. for 1 liter of water.

3. While the potatoes, carrots and eggs are cooling, let's prepare the other ingredients. Cut one onion into cubes. Then pour boiling water over it and let it stand for 5 minutes. Then drain the water and rinse under cold running water.

Onions are poured with boiling water in order to get rid of excess bitterness, which can ruin the dish.

4. When the vegetables and eggs have cooled completely, let's start cutting them. Grind all the ingredients into small cubes and pour into a common mixing container.

5. Boil the chicken breast until cooked. Most often it takes 25-30 minutes. Then it needs to be cooled and cut into cubes. Then we add it to the rest of the ingredients.

While cooking the chicken fillet, do not forget to add salt, a little black pepper and a couple of bay leaves for spice.

6. Take our pickled cucumbers and cut them according to the same principle as the other ingredients. They must be crispy and moderately salty.

If you decide to buy cucumbers in a jar, first of all pay attention to the brine - it should be transparent. If it is cloudy, this indicates that bacteria have entered the jar and mold has begun to form.

7. It's time to dress our salad. Don’t forget to pour out a can of green peas, then add sour cream, mayonnaise and mix well. At the end, taste it and bring it to readiness, adding the missing salt and pepper.

  • Chicken fillet – 300 g
  • Potatoes - 4 pcs.

  • Green onions - to taste

Cooking method:

1. So, let's start with vegetables, or rather, prepare them for cooking. We choose the most beautiful carrots and potatoes (without rot), wash them well under running water to remove dirt with a soft sponge and put them in a pan. On average they cook for 25-30 minutes. Then take everything out and leave until completely cool.

You can cook vegetables for salad in a slow cooker. To do this, wash them (do not peel them) and place them on a grid.   • a bunch of green onions;
