Ingredients:
- boiled potatoes – 2 pieces;
- pickled cucumbers – 2 pieces;
- hard-boiled eggs – 4 pieces;
- shrimp – 150 grams;
- canned peas – 100 grams;
- red caviar – 50 grams.
- salt, pepper - to taste;
- mayonnaise for dressing.
Preparation:
Cut potatoes and cucumbers into medium cubes. Leave one egg for decoration, and chop three into the salad.
Boil the peeled shrimp in salted water for 5-7 minutes. Let cool and add to the rest of the ingredients. Let's also add green peas.
If necessary, add salt and pepper to taste. Mix everything carefully and evenly and season with mayonnaise.
Do not overdo it with salt, as it is found in mayonnaise, cucumbers and boiled shrimp.

Prepare all vegetables for use. Cut carrots, potatoes, onions, and chicken eggs into cubes. Divide the chicken into fibers and also chop finely. If you use chicken sausage or ham, simply cut into cubes with a knife.

Wash the fresh cucumber thoroughly in water and cut it into small pieces. Drain the juice from the peas and add it here with all other products.

To dress the salad, prepare fresh homemade mayonnaise from natural products, it will turn out much tastier.
It is also good to use a sauce made from mayonnaise and sour cream or yogurt without additives for dressing.
Adding a small amount of sour cream will make the dish more tender and tastier. A mayonnaise dressing with the addition of sour cream will give the salad a richer and more delicate taste.
If you don’t want to spend a lot of time preparing a dish on a holiday, boil the vegetables in advance. Then cooking will be faster.
If you are preparing a dish with chicken, you don’t have to boil the fillet. Cut raw meat into small cubes and fry it with onions in a frying pan. Chicken fried with onions will give the dish a unique and original taste to the finished dish.
It is not recommended to make Olivier with the addition of smoked sausage. This is because the overall structure of the salad is tender and soft, and dry smoked sausage will not stand out favorably in the dish.
Don't overdo it with salt. The composition contains pickled cucumbers and salted mayonnaise. Therefore, salt the dish with caution.
If you prepare the salad in advance, you don’t need to season it with mayonnaise right away. Place the dish in the refrigerator and season with mayonnaise or sour cream before serving.

Boil the eggs hard.
Cool the products. Cut into equal, neat cubes: potatoes, carrots, eggs, sausage.
Pour green peas out of the jar. Slice pickled cucumbers, fresh ones if desired.
