“Winter” salad is a close “relative” of the famous “Olivier”. In fact, today they differ only in names. The snack is valuable thanks to:

  • the content of vitamins and plant fibers - you will find them in boiled vegetables and herbs;
  • protein content - if you use lean meat and eggs;
  • salt balance - pickled cucumbers restore the water-salt balance (especially after a feast).

But mayonnaise and sausage are added to the dish, so it contributes to obesity and increased blood sugar levels. To prevent this, you need to replace the sausage with boiled chicken, and mayonnaise with yogurt.

Also keep in mind that “Winter” salad is a source of cholesterol, a large amount of which in the body can lead to atherosclerosis and blockage of blood channels. Therefore, instead of potatoes in the salad, it is better to use apples, and instead of pickled cucumbers, fresh ones.

The calorie content of one serving (200 g) of the classic “Winter” salad is approximately 380-400 kcal. But if you replace mayonnaise and sausage with lighter ingredients, the energy value of the snack can be reduced to 190 kcal.

Classic “Winter” salad with meat

This type of salad is also called meat salad. Its taste is not very different from the classic version, but it is delicious in its own way. We will use beef as meat, but you can also use chicken or other product if desired.

Onions will not be used in this variation of the recipe, but you can add them if necessary. And any - both onion and green will do.

Ingredients:

  • Beef – 0.5 kg
  • Potatoes – 4 pcs.
  • Carrots – 2 pcs.
  • Canned peas – 1 can
  • Pickled cucumbers – 4-5 pcs.
  • Eggs – 5 pcs.
  • Greens (dill or parsley) – a bunch
  • Mayonnaise
  • Salt

Cooking method:

1. Place a pan of water on the stove and immerse a piece of meat in it. Cook it until soft for 1 hour under a closed lid. 15 minutes before readiness, add salt and, if desired, bay leaf with black peppercorns.

2. Vegetables and eggs also cook until tender in salted water.

Since potatoes cook faster than carrots, remove them from the water earlier, otherwise you will overcook them and then it will be awkward to cut.

3. Meanwhile, cut the cucumber into medium cubes and transfer it to a common bowl. We also pour peas into it, but first drain the liquid from it.

It is also advisable to strain the cucumbers from the brine, especially if they are too watery. To do this, simply cut them and place them in a colander.

4. Finely chop the greens and put them in a bowl with other products.

We used dill for our recipe, but any green except cilantro would work great here.

5. When all the vegetables and meat are cooked, we start cutting them. Cut potatoes, carrots and eggs into small cubes. We do the same with meat. We transfer everything into a common container.

6. At the end, all that remains is to season the salad with mayonnaise, as well as add salt and pepper to taste. Adjust the amount of sauce based on your own preferences.

After cooking, Winter can be served immediately. It turns out juicy, despite the fact that beef was used in the recipe. Be sure to try this combination, especially if you have never cooked it with meat.

With pickled cucumber and salami

To prepare we will need:

  • 300 grams boiled beef
  • 2-3 boiled potatoes
  • 3-4 pickles
  • 200 grams of boiled sausage
  • 1-2 sour apples

  • 300 grams of green peas

  • small onion

1. Let's start with meat. Take a piece of veal or beef tenderloin. It needs to be washed. Boil clean water in a saucepan. We send meat here. After boiling, cook for at least an hour, or even more. 5. Pre-boil the eggs. They should only be immersed in cold water. Add salt and then place on the stove. After the water boils, cook for about 10 minutes. Then we place them from boiling water into cold water and thus cool. Peel and cut into cubes.

  4. Carrots must be cut into small cubes and mixed with potatoes and peas.
  5. Next, you need to peel and chop the hard-boiled and cooled eggs. This can be done using a special mesh.
  6. Then you need to finely chop the pickles. If you use small vegetables, you will need about 6 pieces.

  7. After this, cut the sausage into small cubes, add to the rest of the ingredients and stir.
