If you have thin Armenian lavash, try making a light and satisfying snack from it. The filling consists of tender chicken fillet, Korean carrots, eggs and herbs. It's very easy to prepare.
How to cook lavash roll with chicken and Korean carrots.
You can buy lavash in any store. The main thing is that it is thin.
Boil chicken eggs until hard. Cool, peel and grate on a medium grater.
Chop the boiled chicken fillet into small pieces.
Hard cheese should be grated, like eggs, on a medium grater.
After you have completed all the necessary preparations, we begin to form our roll.
Place an unfolded sheet of lavash on the table and grease it with mayonnaise. The main thing is not to overdo it, so that in the future your roll does not turn out too wet and begins to tear.
Then distribute ½ of the ingredients over the entire area of the pita bread: eggs, chicken, cheese, carrots. If desired, you can add greens. Place a second sheet of pita bread on top and do the same procedure with the remaining ingredients.

Ingredients:
- Thin lavash – 2 pcs.

- Prepare the necessary ingredients. Boil part of the chicken in advance for 40 minutes if it is a broiler bird, or for 1.5 hours if it is a domestic chicken. Be sure to let the chicken cool.
- Break the chicken meat into fibers, preferably small in size. (If desired, they can be ground in the bowl of a food processor into a pate, adding a little broth or water.)
- Add mayonnaise and melted cheese to the boiled chicken, add salt and pepper. Mix everything carefully.
- Grease an elongated sheet of lavash (rectangular) with the prepared filling very thinly. Do not spread a thick layer of filling, otherwise you will not be able to cut the lavash with filling later.
- Roll the pita bread with chicken, tucking the edges inward.
- Heat vegetable oil in a frying pan and cut the roll into portions. Bread each part in wheat flour or breadcrumbs. This is a must do!!!

- The garlic needs to be peeled, passed through a special press and mixed with mayonnaise. Transfer the meat to a convenient bowl and add mayonnaise with garlic.
- Stir until the mixture becomes homogeneous. Grate hard cheese on a coarse or fine grater. It is better to take the variety that is saltier. Take 1m long pita bread or two small sheets, maybe they will be round or oval.
- In any case, there should be two of them. If the oval or round sheets are large, feel free to cut them into two parts. Using a pastry brush, spread some of the chicken filling over the sheet.
- Cover with a second sheet, trying to match the edges. Make a mayonnaise grid on the second sheet of pita bread. Go over with a brush to create an even, thin layer. Sprinkle the second sheet thickly with grated cheese. The more cheese, the tastier the snack will be.
- Wash and dry fresh herbs, chop finely. Sprinkle chopped herbs on top of the cheese. Start wrapping the stuffed pita bread into a tight roll. Grease the edge of the sheet with mayonnaise so that the roll is solid and holds its shape.
- Now wrap the roll in cling film, wrap it tightly and put it in the refrigerator for at least 15 minutes, but better for an hour or two or even overnight. Before serving, unroll the film and cut the roll with chicken and cheese into pieces 4-5 cm thick. Place on a plate and serve.

To prepare a snack, you must first choose the right and high-quality pita bread. A properly prepared product must be packaged in a plastic bag and can be stored in the refrigerator for up to several days. If the pita bread turns out to be too thin, then when rolled into a roll it may tear, and when dry it may break. Therefore, when purchasing, make sure that it does not become weathered or dry out. Also observe the correct storage conditions at home. Another danger is that unscrupulous producers often prepare Armenian dishes using yeast, which manifests itself in the form of mold after a couple of days.
Ingredients:
- Lavash - 1 pc. (rectangular shape)
- Chicken thigh - 1 pc.
- Champignons – 300 g
- Onions - bunch
- Hard cheese - 100 g
- Tomatoes - 1 pc.
- Mayonnaise - 50 ml
- Vegetable oil - for frying
- Salt - 1/3 tsp. or to taste
- Table vinegar 9% - 1 tbsp.
- Garlic - 1 clove
- Sugar - 0.5 tsp.
- Ground black pepper - a pinch
Cooking method:
- Wash the champignons, peel the caps and cut into strips or cubes. Heat a frying pan with vegetable oil and add mushrooms to fry.
- A lot of liquid will be released from them at first, so turn on high heat so that all the moisture evaporates. Season the mushrooms with salt and pepper and continue cooking, stirring occasionally. Bring the product until cooked and golden brown.
- Wash the chicken, remove the skin and separate the meat from the bone. Cut the pulp into small pieces about 2 cm and fry in a frying pan in vegetable oil.
- Over medium heat, fry the chicken pieces for about 7-10 minutes until golden brown. Do not fry them too much to avoid drying them out.
- Peel the onions, chop them into half rings, put them in a deep bowl and add vinegar, sugar and hot water. Stir and leave to marinate for 10 minutes.
- In a deep bowl, combine fried mushrooms and medium-sized tomato pieces. Do not cut the tomatoes too finely, otherwise they will release juice, which will make the filling watery.
- Add pickled onions to them, squeeze them well to remove excess moisture.
- Wash the green onions, chop finely and add to all foods.
- Cut the cheese into cubes and add to all products. Instead of hard cheese, you can use processed varieties
- Chop the garlic and add to all foods.
- Place the fried meat.
- Pour mayonnaise over all ingredients and season everything with salt.
- Mix the ingredients. You will get a pretty tasty salad, so prepare a lot of it so that you can roll some of it and eat some on its own.
- Spread the pita bread on the table and apply the filling in a thin layer, distributing it evenly.

- Combine chicken and mushrooms in one container, add soft cream cheese. To stir thoroughly.
