From ordinary thin pita bread you can create many absolutely incredible dishes, not only quick, but also delicious. In addition, lavash snacks look very impressive, so they would be appropriate not only on the daily menu, but also at any celebration. That's why I buy this pita bread quite often, using it as a basis for a variety of recipes - appetizers, pies, lasagna.
You can bake and fry with pita bread, or you can use it without processing. I would like to offer several options for preparing excellent lavash snacks, in which the filling is based on ordinary cottage cheese with various additives, in a frying pan and in the oven.

Lavash roll with cottage cheese in the oven
How many delicious things can be prepared from thin lavash! Experienced housewives know that thin Armenian lavash makes many wonderful snacks. The most popular of them are lavash rolls. But you can choose the filling for these rolls to suit your taste; I really like the combination of thin pita bread and cottage cheese with herbs and garlic.
I also bake this lavash roll in the oven - the heat treatment gives both the filling and the lavash a completely different, more interesting taste. Lavash baked in the oven with cottage cheese and herbs can be considered a complete hot dish. Baked lavash is not at all like cold snacks made from thin lavash, but is more reminiscent of pastries made from dough. I recommend that you prepare a lavash roll with cottage cheese and herbs in the oven as a hearty breakfast, or as a hearty addition to soups and broths.
Ingredients:
- 1 sheet of thin pita bread;
- 2 tbsp. creamy processed cheese;
- 150-200 g of cottage cheese;
- salt;
- 1/3 part of a bunch of dill;
- 1 clove of garlic;
- 1/2 small bell pepper;
- 1 yolk;
- 1 tsp sesame;
- 1/3 tsp. butter.
Preparation:
Grease a sheet of lavash with melted cheese. I used creamy cheese - it suits this recipe best.
Combine cottage cheese with finely chopped dill. Add garlic. passed through a press and mix.
Be sure to try the curd mass and add salt to taste. I had fatty homemade cottage cheese - quite moist. But if yours turns out to be a little dry, then I advise you to add 1 tbsp to it. sour cream - then the curd mass will be tastier, and it will be more convenient to apply it to a sheet of lavash.
Place the curd mixture on the pita bread with melted cheese and distribute it evenly over the entire surface using a table knife.
Cut the bell pepper into small cubes and place on the pita bread on top of the curd mass.
Roll the pita bread with filling into a tight roll.
Grease a baking dish with butter and place the lavash roll in it, seam side down. Grease the pita bread on top and sides with yolk (this is convenient to do with a pastry brush) and sprinkle with sesame seeds.
Place the lavash roll in the oven, preheated to 180-200 degrees. When the top of the roll is browned, you can remove it. My pita bread spent 15 minutes in the oven. At the same time, the roll changed its shape a little - it became oval instead of round. But still the filling did not flow out of it, it remained in the middle.
Cool the pita bread a little and cut into portions. This snack is good both hot and cold. Bon appetit!
Tips and tricks:
For this lavash roll, choose red or orange bell peppers - bright colors will look best. But green pepper should not be used in this case. If you don’t really like bell peppers, you can either exclude them from the list of ingredients altogether, or replace them with tomatoes - it will also be tasty and beautiful.

Useful tips
In such recipes, you can completely do without baking and frying by filling a pita roll or envelope, for example, with salted curd mass with herbs, cheese, finely chopped boiled eggs with mayonnaise or some other filling that does not require cooking. All cottage cheese-based fillings proposed in the recipes can be safely reformatted by changing or adding any other ingredients, because the fresh taste of lavash allows you to realize any gastronomic fantasies - the fillings can be snack or sweet.
In addition, it is worth taking advantage of a huge assortment of other fillings; for example, you can prepare a magnificent lavash roll with red fish. I also recommend trying to make lavash sandwiches and lavash pie. Another win-win option is lavash pizza. By the way, this kind of “Armenian lavash”, used in all these recipes, does not necessarily have to be purchased, you can successfully prepare it yourself - it’s not at all difficult, and it will turn out much tastier than store-bought.
