How to make baked rolls

How to cook “Rolls in the oven”

Boil sushi rice.

Prepare a rice dressing using rice vinegar, sugar, salt and water.

Place the finished rice in a larger bowl, loosen it slightly with light movements using a wooden spatula, pour in the dressing and gently stir the rice.

Prepare the remaining ingredients for the baked rolls.

Cut the boiled squid into small cubes.

Separately, in a small bowl, mix chopped squid, capelin caviar, and grated cheese. You should get a thick mass. 8 tsp. set aside the fillings.

There is a simple way to make baked rolls so that they cannot be distinguished from restaurant ones. The quality and taste of this dish directly depends on the quality of the ingredients. In some cases, traditional components can be replaced with analogues, but it is better not to deviate from the recipe. You will need:

  • nori;
  • rice for making rolls - it differs from regular rice and is sold in specialized stores;
  • boiled shrimp;
  • red fish (salmon or salmon);
  • flying fish caviar;
  • crab meat;
  • cucumber;
  • soft cheese (Philadelphia, bucco or almette);

The technique for preparing gunkan rolls is different from the usual one. For this dish, the ingredients are not placed on the rice before wrapping the filling in nori. Each roll is prepared separately: first, a small amount of rice is wrapped in nori, and an assortment of other ingredients is placed on top. After a little practice, these baked rolls will turn out no less smooth and tasty:

  1. First, prepare the sauce for baking the rolls. In a separate container, place a couple of spoons of mayonnaise, two cloves of chopped garlic, a few drops of sauces (soy and chili), and a spoonful of flying fish caviar (tobiko). To make it melt at a high temperature, add a spoonful of soft cheese.
  2. Chop the crab sticks or crabmeat and mix them evenly with the baking sauce. This mass will be the filling for the rolls.
  3. Boil the rice until it holds its shape well. Form it into small portioned balls.
  4. Take a sheet of nori and cut it into strips 3 cm wide. The purchase sheets already have marks. Next, wrap each rice ball tightly in a strip of nori. There should be some space left in each roll for the filling.
  5. Place the rolls in a baking dish and place the sauce and crab sticks filling on top of the rice. These layers should be in approximately equal proportions.
  6. All that remains is to put the gunkan rolls in the oven or microwave for 7-10 minutes. Serve them hot with soy sauce, wasabi and ginger.

The ginger is a separate dish, so don't put it on top of the roll. Just dip its edge in soy sauce and eat it separately, alternating with rolls or sushi.

Baked rolls with chicken

  • 2 tbsp. short grain rice;
  • 4 tbsp. water;

  • 5 layers of nori;
  • hard cheese of any kind, finely grated;
  • boiled or fried chicken fillet;
  • lightly sweetened mayonnaise.

Step-by-step cooking process

To make baked rolls filled with chicken fillet, you will need to follow these steps:

  1. It is necessary to rinse the rice with cold water, place it in a saucepan with a thick bottom, add clean water in a ratio of 1:2 and bring to a boil over high heat.
  2. Then you need to reduce the heat to low, cover the container with a lid and cook for 15-20 minutes until the grains become soft.
  3. The finished rice should be removed from the heat and allowed to cool slightly, then add rice vinegar and mix very carefully (literally with a few sharp movements).
  4. Next, you need to place a sheet of nori on a bamboo mat and distribute the rice evenly over its rough surface.
  5. In the middle you need to put the filling - chicken cut into thin slices, then tightly roll into a roll, pressing it tightly, and cut into standard pieces (7-8 pieces) with a sharp knife.
  6. Next, you need to repeat the same thing, using all the sheets of nori.
  7. Then you need to very finely chop a little more chicken fillet and mix with sweetened mayonnaise and grated cheese.
  8. The consistency of the sauce should be very thick. You need to put it on each piece, forming “caps”.

  9. Bake the products in the oven at 180-200ºС for approximately 10 minutes. When they are ready, it is recommended to set them aside for 5 minutes to cool slightly.

What can I add?

This recipe is basic, so it can be supplemented with any components. If you fry chicken fillet in teriyaki sauce, the rolls will acquire an interesting sweetish taste. Hard cheese can be replaced with cream cheese, and cucumbers can be added as an additional filling component.

If you want to achieve a spicy taste, it is recommended to add a few chopped olives or drops of chili sauce to the sauce.

How to serve these rolls

The dish is served only warm, and the standard Japanese garnish of wasabi paste and pink ginger is optional. Baked rolls turn out quite juicy and salty, and usually do not need any additions, including soy sauce.

  • 2 halves of nori sheet;
  • 1 tbsp. cooked sushi rice;
  • 1 tsp. toasted white sesame seeds;
  • 1 avocado, cut into 12 slices.

Step-by-step cooking process:

  1. You should preheat the oven to 180ºC.
  2. In a small bowl, mix chopped mussels, crab sticks, green onions and spicy mayonnaise.
  3. Next, you need to place the nori on a bamboo mat covered with plastic film and moistened with water.
  4. After wetting your hands with ice water, apply half a glass of rice evenly to the seaweed sheet, then sprinkle with half a teaspoon. sesame seeds and press lightly.
  5. Next, you need to turn the noria over with the free side up and place 6 lengthwise slices of avocado in the center, then roll the roll by grasping both ends at the same time and pointing them towards each other. Use a bamboo mat to give the roll a square shape.

To roll the roll, you will need four things. These are disposable gloves, elastic bands, cling film and makisa. Now there are quite a few varieties of makisu, but we recommend the simplest bamboo one, which can be bought almost everywhere.

Preparing makisu

First of all, you need to wrap the makisa in film. The fact is that you cannot wash them, because the strips from which they are made can swell and this will cause them to “twist”. Baked rolls with chicken and hard cheese

You can be sure that even ardent opponents of Japanese cuisine will not refuse this dish, because there is no fish or seafood in it. As you can see from the photo, all the salt of this dish is in the mixture, which is laid out on top of the pieces laid on their sides. For it you will need the following products. Chicken fillet, teriyaki or soy sauce, hard cheese of your favorite variety, mayonnaise, masago or tobiko. If anyone doesn’t know, masago is colored capelin caviar, and tobiko is flying fish.

  • The fillet should be cut into pieces and fried in teriyaki or soy sauce. Then chop finely, but not in a meat grinder.
  • The cheese should be grated on a fine grater.
  • Mix chicken and cheese with mayonnaise and add masagi or tobiki. The mixture should not be too thick, but not too runny either.

We recommend making the filling of this roll with vegetables, this will refresh its taste. Philadelphia cheese, slices of tomato and bell pepper will go well with chicken. After rolling the roll, you can sprinkle it with black or white sesame seeds if desired. After this it must be cut. Usually the rolls are cut into eight pieces, and this is the easiest. Cut in half, put the halves together, cut in half again. You get four quarters of the roll, which you again cut in half. By the way, if you don’t have a special Japanese knife, you can use any knife, but only a sharp one. To prevent it from getting stuck, we recommend slightly moistening the blade before cutting. Cut in one quick and sharp movement, do not saw the roll, this may cause it to fall apart or lose its shape.

After cutting the roll, place the pieces on their side, spread the prepared mixture on them and bake. After this, the roll can be sprinkled with dill, sesame seeds or unagi sauce.

Baked rolls with mussels and bacon

The filling of this roll contains seafood - mussels. But if you or your guests don’t like them, it doesn’t matter. Mussels can be replaced, for example, with shrimp. Or the same tomatoes and bell peppers as in the previous recipe.

So, first roll the roll. The filling here will be Philadelphia cheese, mussels and slices of avocado or cucumber. You can also add some masaga or tobiki if you like it.

Cover this roll with thinly sliced ​​pieces of bacon or ham. To help it stick, you can lightly grease the top and sides of the finished roll with Philadelphia cheese. This will help the bacon stick when you press the roll.

Now you should cut the roll and send it to bake. After this, you can pour unagi sauce over it and sprinkle with sesame seeds.

Homemade baked rolls with salmon

To prepare this roll you will need to cut up the salmon. It can be done in two ways, and we invite you to watch a video about each of them. As you can see, in the first one, the skin is not removed from the steak. In our opinion, this method is preferable. You place the steak on a paper towel or rag and, with some skill, cut pieces, the length of which is limited only by the size of the steak.

In the second case, the pieces turn out narrow. Again, with some skill, you can cut exactly four pieces by eye, which will cover the entire length of the roll and help you cut it evenly.

By the way, no matter what option you choose, do not rush to throw away the remaining or cut skin and trimmings with “blackness”; you will need them for the next roll.

This roll will taste better if you make it spicy. To do this, instead of Philadelphia cheese, add spicy sauce to it, but not too much, otherwise it will come out when you press.
