Duck with rice and hot pepper

In order to prepare this dish, you will need the following products:

  • whole domestic duck;
  • long grain rice – 200 g;
  • one head of onion;
  • hot chili pepper - one piece;
  • bell pepper - two pieces;
  • one large carrot;
  • fresh or frozen green peas – 200 g;
  • For the duck marinade, take the following ingredients:
  • two tablespoons of tomato paste;
  • three tablespoons of vegetable oil;
  • paprika - one tablespoon;
  • head of garlic;
  • coriander - one teaspoon.

The weight of the carcass is usually one and a half to two and a half kilograms, pay attention to the quality of the meat, the duck should be well tarred, and there should be no feathers on the skin.

To cook juicy duck, you need to marinate it in advance. It is best to prepare the marinade in the evening, then leave the duck in the refrigerator overnight, and prepare the dish during the day.

We'll tell you how to do this. Pour vegetable oil into a deep glass container, add tomato paste and seasonings.
