As soon as new potatoes appear on the market, I immediately rush to buy them and boil them. Here I’ll tell you about another tasty option, how to cook new potatoes in the oven. Delicious, simple and appetizing!
New potatoes baked in the oven with their skins on:
Pre-soak small new potatoes in a container of cold water for 1 hour. This is done so that all the dirt from the ground gets wet. Then rinse the potatoes without peeling them in several waters. Fill the potatoes with water in a clean saucepan and place on the stove. Add a sprig of dill and bay leaf to the potatoes. Bring the vegetables to a boil and cook until half cooked. This will take approximately 5-7 minutes. The potatoes should remain whole, watch the process carefully.
Meanwhile, rinse all the prepared aromatic herbs. This time I used young and mature garlic, chopped finely. I also took parsley, cilantro and green onions, dill, but you can use any others.
In a bowl, prepare the mixture for the potatoes, which you will then use to coat them. To do this, combine vegetable oil, mustard and soy sauce. Add honey, salt and spices to taste. Add half the chopped greens and mix everything thoroughly.
Drain the boiling water from the potatoes and immediately pour them into the mixture, stir gently with a slotted spoon or silicone spatula. Remember, the root vegetable must retain its shape.
Using a slotted spoon, place the potatoes in a single layer on a wide baking sheet. Let the oily liquid that remains in the bowl stand aside for a while. Place the new potatoes in a hot oven to bake at 180 degrees.
Periodically brush the potatoes with the mixture from the bowl using a brush. Cook the potatoes until golden brown.
Sprinkle the baked potatoes with chopped herbs and place on a serving platter. Be sure to place the sauce of your choice next to the new potatoes. In my case, it's a sauce made from mayonnaise and ketchup.

A wonderful recipe that the whole family will love. Fragrant, satisfying, delicious! Since not all children like cheese, it should be added to this dish just before serving, only on plates for those who wish. It will instantly melt on hot potatoes and give the dish an incredible taste!
Ingredients:
- New potatoes - 1.5 kg;
- Chicken fillet - 2 pcs.;
- Green onions, parsley;
- Hard cheese - 100 gr.;
- Garlic - 2 cloves;
- Salt, pepper (to taste);
- Soy sauce;
- Vegetable oil.
Step-by-step preparation:
1. Rinse young potatoes thoroughly with water, peel off the skins in places if necessary. Cut the chicken fillet into medium-sized pieces, chop the garlic with a knife and add everything to the tubers.
2. Add salt and pepper to the same container to the existing ingredients. If desired, you can add a little dried garlic. Mix everything well.
2. Add a couple of tablespoons of vegetable oil and a tablespoon of soy sauce to the potatoes and chicken, mix thoroughly and place in a baking dish. Cover tightly with foil and place in the oven for 50-60 minutes at 180 degrees.
3. While dinner is in the oven, finely chop the green onions and parsley.

How to make sure that young potatoes baked in the oven turn out soft, juicy, with a golden crispy crust? I’ll tell you my secret - before baking, the tubers need to be boiled in water or steamed until half cooked. This will save you time and get delicious new potatoes in their skins, baked in the oven with aromatic spices. There is no need to peel or cut it; just rub the tubers thoroughly with a rough sponge. Young potatoes baked in the oven whole as a side dish for meat or with sour cream and garlic are especially good. I recommend serving this dish hot as soon as you prepare it.
As for the choice of spices, for my taste, paprika and a little pepper must be added to the recipe for new potatoes in the oven. Paprika will give a bright color, and pepper will give a slight spiciness. The rest is optional.
New potatoes baked with young garlic in the oven
Soak young potatoes for 5-10 minutes in warm water so that all dirt and soil can easily come away from the tubers. We wash the potatoes without peeling the skin.
Cut clean potatoes into large slices (if the potatoes are small, you can cut them into two halves).

Next, prepare the aromatic garlic sauce. I prepared this sauce with young garlic, but you can also use 4-5 cloves of old garlic. Place the greens and garlic in a bowl and add 2 tablespoons of vegetable oil.
Add ground black pepper, spices, salt to the oil with herbs and garlic and mix.
Next, using a pestle, grind all the ingredients of the sauce into a paste. The sauce should be quite salty, since we will rub the potato wedges with it and the potatoes will absorb the salt.
Cover the potato wedges evenly with garlic sauce and rub the sauce well into each wedge with your hands.
Next, place the baking sheet with potatoes in the preheated oven. The temperature for baking potato wedges with garlic should be at least 200 degrees. If you have a grill, you can immediately enable this function. Bake new potatoes with young garlic sauce for 35 minutes.
After time has passed, we take out a baking sheet, taste the new potatoes for salt, and add some salt if necessary. Mix the potato wedges well, brushing them with the sauce that remained on the baking sheet during baking.
Place the baking sheet with potatoes in the oven for another 25-30 minutes. The cooking time will, of course, vary, since the size of the potato wedges and the type of new potatoes are different for everyone. My slices were baked for 1 hour and only after this time they became soft inside, and by this time the crust had become golden brown and very appetizing.
Take the finished young potatoes with garlic out of the oven, sprinkle with finely chopped dill and transfer to a serving dish.

Ingredients:
- Potatoes – 900-1000 g
- Salt - about 1 tsp.
- Ground black pepper – 0.5 tsp.
- Paprika – 0.5 tsp.
- Dried herbs (dill, oregano, parsley, thyme, basil) - 0.5 tsp each.
- Olive oil – 60 ml
- Green onions for decoration
Sauce:
- Sour cream 20% – 150 ml
- Garlic – 2-3 cloves
- Fresh dill, ground black pepper, salt to taste.
Preparation:
1. Wash the tubers thoroughly without peeling them, cut them in half and then into slices.
2. Add spices, herbs, mix with your hands, distributing them evenly over the surface.
3. Add salt, add vegetable oil, mix again.
4. Place on a baking sheet covered with parchment, spread in a thin layer so that the slices are well baked and covered with a crispy crust.
5. Bake at 190 degrees for 40 minutes.
6. Meanwhile, prepare the sauce. For it, finely chop the dill, add it to the sour cream, season with garlic and spices passed through a press.
7. When serving, garnish with chopped green onions.
Advice! To ensure that new potatoes baked in the oven bake evenly, try to select tubers of the same small size. If the potatoes are large, they will take much longer to cook.

For baking, I select medium-sized tubers, no more than 5 cm in diameter. They bake quickly and look more appetizing when cooked. In addition, it’s more convenient to eat - you don’t need to break it apart; you just hook the whole potato on a fork and chew it with pleasure. Preparation for baking is standard - fill the tubers with cold water and leave for a few minutes. Then rub each thoroughly with a rough sponge or scrape with a knife. Pay special attention to the “eyes” - soil particles may remain there; all contaminants must be cleaned out.
I first boil the potatoes until half cooked. I have been using this method for a very long time, not only for young potatoes. There are a lot of advantages: the baking time is significantly reduced; the top layer softens and absorbs spices and oil better; The crust turns out crispy and nothing burns due to quick baking. Try it, I’m sure you will use my method more than once. You can boil it by steaming or in water. I put a wire rack in the cauldron and pour in some water. Pour in the potatoes and cook for a couple of minutes, 7-8.
I'm preparing a spice mixture. I take hot chili pepper (you can use black one), more paprika for a golden color, and a little turmeric for a bright color. The remaining spices are needed for flavor, choose any.
Pour in lemon juice and mix with spices. The juice will give a piquant sourness, although to my taste it is not particularly noticeable. But many people like this particular combination. I don’t add garlic to the recipe for new potatoes in the oven; it seems to me that it’s better to season the finished dish with it.
I add oil. You can use any refined one, I took olive oil.
I mix everything until a thin, oily paste forms. You need enough oil so that the new potatoes baked in the oven have a golden brown crust.
