At the beginning, it seemed to me that this was a very labor-intensive process. But this is not at all true; preparing cheese bread is easy and simple, and it is eaten quickly and without residue. Because it turns out very tasty. Ingredients:

For the test:

  • Wheat flour 3 tbsp.
  • Kefir 1 tbsp.
  • Chicken egg 1 pc.
  • Salt 1 tsp.
  • Sugar 1 tsp.
  • Soda 0.5 tsp.
  • Sunflower oil.

For filling:

  • Cheese 300 gr.
  • Chicken egg 1 pc.
  • Greens - to taste.

Cooking process:

  1. In a deep bowl, knead the dough for future cheese cakes. To do this, pour out the kefir and add salt, soda and sugar to it. Mix the flavored kefir mass thoroughly and then beat in one chicken egg.
  2. Mix the mixture thoroughly and begin adding the sifted wheat flour. You need to pour it in carefully to prevent the formation of lumps.
  3. Place the dough in cling film and refrigerate for 1 hour.
  4. While the dough is resting in the refrigerator, you can prepare the filling. To do this, you need to grate the cheese on a coarse grater, I used suluguni.
  5. We take the dough out of the refrigerator and place it on the previously prepared one. Surface. The table should be well floured to prevent the dough from sticking. Divide the mass into 4 parts and roll it out to a thickness of 3-5 mm.
  6. Place grated cheese in the center of the flatbread and press the edges together to form a kind of pouch.
  7. Turn the flatbread over and roll it out to form the original pancake.
  8. Beat the egg and brush the top of each flatbread with it.
  9. Place on a baking sheet and sprinkle a little grated cheese on the top.
  10. We send the cakes to bake in the oven, preheated to 200 degrees for 30 minutes.
  11. The golden brown crust of the cheese indicates that the dish is ready.

The dish is ready to serve; you can decorate it with chopped herbs.

Quick khachapuri for busy housewives

This is the simplest Adjarian-style khachapuri recipe - the boats turn out no less beautiful and tasty. So, defrost the puff pastry dough, lightly roll out the squares, cut them in half, make sides on the sides, connect them at the edges and form boats. Brush the boats with egg, pierce the bottom with a fork in several places to let air out, and place in the oven preheated to 200°C. Ingredients:

  • Milk 2 tbsp.
  • Wheat flour 3 tbsp.
  • Butter 2 tsp.
  • Lightly salted cheese 700 gr.
  • Salt 0.25 tsp
  • Chicken egg yolk 2 pcs.

Cooking process:

  1. To prepare unleavened dough, mix milk, flour and salt. Add the flour into the milk gradually and try to stir thoroughly. The dough for khachapuri should not be tight.
  2. Divide the finished dough into portions weighing 50-70 g.
  3. Grind the cheese with a fork. Set aside 200 grams. And divide the remaining 0.5 kg evenly among the flatbreads.
  4. Turn on the oven to warm up - khachapuri with cheese is baked at 200 degrees.
  5. Roll out each piece of dough to a thickness of up to 2 mm.
  6. Grease the rolled out dough with butter and place the filling in the center. We seal the edges with an envelope so that the filling is inside the dough.
  7. Place the khachapuri on the prepared baking sheet, seam side up, and bake for 20 minutes.
  8. Mix the egg yolks thoroughly with the remaining cheese, remove the envelopes from the oven and place the cheese-egg mixture on them.
  9. Place the khachapuri back into the oven and bake until done – 10-15 minutes.

The dish is ready to delight the hostess and her guests.

What is khachapuri confused with?

Lobiani – flatbread with spicy beans. In terms of popularity, lobiani is in no way inferior to khachapuri. Even on December 17 (St. Barbara’s Day) this dish should be on the table of every Georgian!

Habisgini is a flatbread filled with cheese and potatoes in equal proportions. The potatoes are boiled, peeled and passed through a meat grinder. This mass is then mixed with cheese and a couple of raw eggs. This mixture is used as a filling. Habisgini is very large in size and the dough is rolled out thin.

Kubdari or Svan khachapuri - “meat pie”. An original Svan dish, the filling of which is chopped meat baked in dough. It is the “highlight of the program” at weddings in those places.


Recipe for khachapuri with cheese and kefir

A golden-brown cheese cake is made by baking in the oven. But there are other cooking options. Khachapuri can be fried in a frying pan - this greatly simplifies the cooking process.

Ingredients:

For the test:

  • Wheat flour 3 tbsp.
  • Kefir 1 tbsp.
  • Chicken egg 1 pc.
  • Vegetable oil 1 tbsp.
  • Sugar 1 tsp.
  • Salt 1 tsp.
  • Baking soda ½ tsp.
  • Butter 50 gr.

For filling:

  • Suluguni cheese 300 gr.
  • Cheese cheese 100 gr.
  • Egg 1 pc.

Cooking process:

  1. Pour kefir or matsoni into a deep saucepan and add sugar, salt and soda, as well as a chicken egg and vegetable oil.
  2. Mix all ingredients well together using a mixer or whisk.
  3. Carefully and gradually add 2.5 cups of twice-sifted flour.
  4. Knead the thick khachapuri dough by hand or using a food processor with a hook attachment.
  5. Cover the dough with a towel and leave for half an hour at room temperature.
  6. In the meantime, you can start preparing the filling. To do this, grate suluguni cheese. And carefully rub the cheese with a fork. Add 1 chicken egg to the cheese mixture and mix thoroughly.
  7. Place the dough on a floured surface and roll it into a wide sausage. Mode it into pieces.
  8. We stretch each flatbread with our hands and put the cheese filling inside. We pull the edges up and press carefully.
  9. Roll out the resulting ball using a rolling pin to a thickness of several millimeters.
  10. Khachapuri needs to be fried in a dry frying pan. Place the resulting pancake in a frying pan and fry on one side for 5-7 minutes. It should form rosy bubbles. Turn over to the other side. Repeat for each cake.
  11. Place the finished khachapuri in a stack on a dish and generously grease each cake with butter.
