    Cheese. Any hard cheese is suitable for preparing this dish. If you suddenly bought a soft one, don’t worry. Place this cheese in the freezer for 10-15 minutes and then take it out and immediately grate it. The main thing is that this product is fresh and of high quality. And to do this, be sure to pay attention to the appearance when purchasing: the cheese should not be weathered and free of plaque. The presence of these signs indicates that it is stale. If there are holes in it, they should be uniform and distributed over the entire surface. The smell of fresh cheese should be milky and fresh. Sour and putrid odors indicate spoilage of the product. The color should be natural. If the color of the cheese is too rich, it means there was a need for dyes. Pay careful attention to the composition: it should contain a minimum amount of various chemical additives.

    Cottage cheese. For such dishes, it is best to use unleavened cottage cheese. It is suitable for various fillings. If you buy it at the market, taste it. Then you will be able to understand exactly what kind of product is being offered. If you take packaged cottage cheese, pay attention to the composition and expiration date. The more natural the cottage cheese, the shorter its shelf life and the composition will not contain any chemical additives.

    Step-by-step preparation

    Step 1: preliminary preparation

    1. The greens need to be washed well, first soaking them in water for 2-3 minutes and then rinsing them under running water.
    2. Sift the flour through a sieve a couple of times, thanks to this you can remove foreign impurities from it, and also saturate it with oxygen, which makes the baked goods more airy.

    Step 2: preparing the dough

    1. Pour kefir into a bowl, add soda and mix everything well to quench it.

    2. After this, add salt, egg and mix until smooth.

    3. Next, add flour in portions, constantly stirring until smooth.
    4. When you get a thick mass, transfer it to a surface sprinkled with flour and knead it into a soft dough with your hands. You may need about 50g more flour to dust the surface.

    5. Cover the finished dough with a bowl or put it in a bag so that it does not dry out while you prepare the filling.

    Step 3: preparing the filling

    Grate the prepared cheese on a coarse grater, chop the herbs and mix everything with the prepared cottage cheese until smooth, so that all products are distributed evenly throughout the entire volume of the filling.

    Step 4: modeling khachapuri

    1. The dough must be divided into small balls. If you have a frying pan measuring 20-22 cm, you will get approximately 7-8 circles.
    2. Roll out the dough ball using a rolling pin into a small round layer, place 2-3 tbsp in the middle. l. prepared filling, there should be more of it than dough.

    3. Connect the edges of the flatbread and you should get a ball with filling, now you need to carefully roll it into a layer of the size you need (here you need to be guided by the size of the frying pan). Do this with each ball of dough.

    Step 5: preparing khachapuri with cheese and cottage cheese

    1. In a heated frying pan, without oil, place the filled flatbreads one by one and fry on both sides until golden brown. Approximately 2-3 minutes. over low heat.

    It doesn’t take much time to prepare a hearty khachapuri. The original combination of smoked cheese and salted cottage cheese gives it an unusual taste. For six servings you will need the following products:

    • two pita breads;
    • two chicken eggs;
    • two hundred grams of smoked sausage cheese;
    • a glass of kefir;
    • a glass of cottage cheese;
    • butter;

    Mix eggs and kefir using a whisk or mixer. Smoked cheese is grated and added to cottage cheese. The resulting mixture is salted to taste. Place a sheet of lavash on a baking sheet. Only one part of the cake is placed on the baking sheet. The dishes themselves are greased with oil.

    The second sheet of thin flatbread is torn into large pieces. About a third of the pieces are soaked in a mixture of kefir and egg and laid out on dry pita bread. Half the cheese is evenly distributed on top.

    A third of the pita bread torn into pieces and the rest of the cheese are again placed on the cheese layer. The final layer is lavash soaked in kefir. The sides of the cake are tucked in.

    The layers are covered with the remaining part of the Armenian lavash, which is greased with a kefir-egg mixture. The dish is placed in an oven preheated to two hundred degrees for half an hour.

    Khachapuri is served both hot and cold. The flour product is washed down with tea or eaten as an independent dish.

    • Place the cottage cheese in a container and knead.
    • Grind the cheese using a grater with large holes.

    Advice. To make the filling more fluffy, you can beat the eggs a little beforehand.

    • Finely chop the greens and mix with the total mass, add salt, add spices and seasonings.

    • Peel the garlic, chop it and add it to the total mass.

    Advice. The garlic can be finely chopped or grated on a fine grater - this will not affect the taste of the dish.

    • Mix the future filling thoroughly, breaking up any lumps.

    • Cut the sheet into squares approximately 15x15 cm in size.

    Advice. Lavash should only be used fresh. When opened, the sheets quickly become stale and break when folded.

    • Place the prepared filling in the center of the square.

    • Fold the prepared sheet into an envelope and press slightly so that the filling is evenly distributed inside the envelope.

    • Heat refined vegetable oil in a frying pan.
    • Place the lavash khachapuri with cheese in a frying pan, seam side down, and fry on both sides for 3-4 minutes until an appetizing crust appears.

    • Place the finished baked goods on a paper towel or napkin to remove excess fat.
    • Serve khachapuri made from pita bread with cheese, cooked in a frying pan, with sour cream.

    To prepare a dish of cheese and cottage cheese you will need:

    • four pita breads;
    • two hundred grams of Gouda cheese;
    • two hundred grams of cottage cheese;
    • one egg;
    • one tablespoon of sour cream;
    • one bunch of dill;
    • vegetable oil.

    The filling is prepared on the basis of cottage cheese with a small percentage of fat content. Do not take a watery product with a lot of whey.     Lazy khachapuri from lavash

    Cooking lazy khachapuri will take no more than half an hour. For the dish you will need:

    • one pita bread;
    • sour cream, “Russian” and Adyghe cheese are taken in equal proportions (150 grams).

    The tortilla should be the size of a baking dish. The number of layers depends on how many pieces the pita bread is cut into. Both cheeses are grated. Sour cream mixed with “Russian” and Adyghe cheeses is placed on all sheets. Do not cover the last layer to form a golden brown crust. The dish is baked for about a quarter of an hour at a temperature of 200 degrees.

    Tips and tricks

    • For cooking, it is best to use a non-stick frying pan , since oil is practically not used when frying. If you bake khachapuri, be sure to cover the baking sheet with parchment paper.
    • To ensure that your baked goods have a golden crust, brush them with a small amount of butter or brush them with a raw chicken egg.
    • When baking, the cheese may separate , so when preparing the filling, add an egg and a little flour to the cheese.
