Ingredients:
- Kefir – 2 tbsp.
- Flour – 4 tbsp.
- Egg – 2 pcs.
- Sugar – 3–5 tbsp. l.
- Vanilla sugar to taste.
- Salt and soda - ½ tsp each.
- Vegetable oil – 3 tbsp. l.
Cooking method:
- Break chicken eggs into a container for kneading dough and grind them with the required amount of sugar, salt and vanilla.
- Heat kefir in the microwave, add soda to it, stir and add this mixture to the eggs. Pour vegetable oil into this mixture and use a whisk to whisk everything until smooth.
- Then add the sifted flour into the liquid base and knead the dough with your hands. Knead it until it stops sticking to your hands.
- Cover the container with the dough with a napkin and leave to rest for 30 minutes. Then cut it into 3-4 pieces.

Ingredients:
- Flour 3 cups
- Kefir 300 ml.
- Chicken egg 1 pc.
- Baking soda 1.5 tsp.
- Vegetable oil 3 tbsp.
- Granulated sugar 3 tbsp.
- Powdered sugar for sprinkling
- Oil for frying.
Cooking method:
- Break a chicken egg into a bowl for kneading dough, add the required amount of salt and sugar to it and, using a fork or whisk, grind everything until smooth.
- Heat kefir in the microwave, add soda to it and stir. Then pour the kefir into a bowl with the egg and pour in the vegetable oil.
- Add the required amount of flour to the resulting liquid base and knead the dough with your hands. Knead until it stops sticking to your hands and becomes smooth and elastic.

Cottage cheese contains a lot of calcium, which is necessary for the child’s body, so every mother tries in every possible way in preparing dishes to feed the little mischief. An excellent way to force a child to eat healthy cottage cheese is to add brushwood. The cooking process is quite simple, the main thing is to prepare all the necessary components.
Ingredients:
- Homemade cottage cheese – 200 gr.
- Sugar – 1 tbsp.
- Kefir – 500 ml.
- Chicken egg – 1 pc.
- Soda – 0.5 tsp.
- Wheat flour – 2 tbsp.
- Vegetable oil - for frying.
Cooking process:
- Bring homemade cottage cheese to a homogeneous consistency using a blender and mix with kefir.
- Add sugar, soda and a little salt to the resulting mass. You should not increase the amount of sugar; the dish will burn during frying and will not look appetizing.
- Sift flour through a fine sieve.
- Add an egg to the curd-kefir mixture and beat the mixture again with a blender. Add sifted flour and knead soft dough.

This option is considered very successful. By adding yeast, the dough gets an extraordinary taste and aroma. It turns out incredibly rich, but it takes much longer to prepare. Otherwise, the cooking process is no different; it is very simple and doable even for a novice housewife.
Ingredients:
- Fat kefir – 200 ml.
- Chicken egg – 2 pcs.
- Natural honey – 4 tbsp.
- Dry yeast – 14 gr.
- Salt – 0.5 tsp.
- Flour – 3 tbsp.
- Butter – 100 gr.
Cooking process:
The flour must first be sifted, the kefir heated to 40 degrees, and the butter melted.
Pour kefir into a deep container, add dry yeast to it and mix thoroughly. Add liquid honey.
Beat the chicken eggs into a separate container and mix thoroughly with a whisk until smooth; no need to beat them. Add the eggs to the kefir and mix the mixture again.
Add ghee (it must cool before doing this).
Very slowly add the sifted wheat flour into the mixture and mix the mixture thoroughly. You need to remember that the dough is yeast, so it is important not to overcook it.
Leave the dough for 30-40 minutes in a warm place. Cover the container with a clean kitchen towel.
After 30-40 minutes, the dough should be placed on a dry surface sprinkled with flour and rolled out using a rolling pin.
Cut diamonds or squares from the resulting layer, cut a hole in the center and turn the bottom part through it.

- Flour – 4 tbsp.
- Cottage cheese – 300 gr.
- Egg – 1 pc.
- Baking powder – 1 tsp.
- Sugar and vanillin to taste.

Cooking method:
- Break a chicken egg into a bowl for kneading dough, add cottage cheese, sugar and whisk well until smooth.
- Heat the kefir a little in the microwave, add baking powder and stir. Then mix kefir with the egg-curd mixture.
- Gradually, one glass at a time, pour sifted flour into the resulting liquid dough base and knead the dough.
- Then we transfer the dough to the table and, sprinkled with flour, continue kneading it with our hands until it stops sticking to our hands. If necessary, add a little flour, but the dough should not be very tight.
- Roll the prepared dough into a bun, cover with a napkin and leave to rest for 30 minutes.
- After this time, cut the dough into 3-4 parts and roll each piece into a sheet up to 3-4 mm thick.
- We cut the sheets into rectangular strips measuring approximately 4x7 cm. We cut each strip in the middle and, wrapping one end, we form bows.
- Pour vegetable oil into a deep frying pan and heat it. Fry the brushwood in oil in batches on both sides until golden brown.
Before serving, the finished brushwood can be poured with condensed milk, honey or sprinkled with powdered sugar.

Brushwood prepared with kefir often turns out not crispy due to the fact that the dough is not mixed correctly. It is important to accurately maintain the proportion of kefir and flour so as not to clog the dough; if it turns out not elastic, but hard, there is no point in hoping that the dish will be successful. Vodka or another strong alcoholic drink helps to increase the shelf life, the main thing is not to overdo it - a small glass is more than enough.
Ingredients:
- Egg – 4 pcs.
- Kefir – 500 ml.
- Flour – 5-6 tbsp.
- Soda – 1.5 tbsp.
- Vodka – 4 tbsp.
- Sugar – 4 tbsp.
- Salt – 1 tsp.
Cooking process:
- The cooking process begins by breaking chicken eggs into a separate container. They need to be gently whisked with gentle movements of the whisk.
- In a separate bowl, mix kefir, soda and vodka. The resulting mass is left for 20 minutes. The soda should start working in the kefir.
- The flour is sifted through a sieve. Mix the egg and kefir mixture.
- The sifted flour mass is introduced into the kefir composition and a soft dough is kneaded.

The secret to delicious cookies is using the right frying oil. Thus, it is recommended to fry brushwood on kefir in regular refined vegetable oil.
Recipe for kefir crisps or fluffy verguns in a frying pan

Lush, airy, tender crunches are a favorite dish in our family, which can always be deliciously simply and quickly prepared from the most affordable ingredients in a hurry. Khrustiki or brushwood are ideal with hot sweet tea or homemade compote - it doesn’t get any tastier! Prepare fluffy kefir verguns, and these will be verguns, since the difference between them and brushwood and crisps lies precisely in the splendor of the dough and the finished baking (the brushwood is rolled out very thinly, about 0.5 cm, when preparing the dough, be sure to add 30-50 grams of vodka and bake until crispy – that’s why it’s crunchy) is very simple.
So, let's prepare deep-fried fluffy crunchies : to prepare the crunches we need homemade kefir or regular kefir from the store, 2 or 3 chicken eggs. fresh, baking soda 1 tsp. without a slide, granulated sugar, a pinch of salt to enhance the taste, butter or sour cream, wheat flour, powdered sugar for sprinkling.
- First of all, pour baking soda into kefir at room temperature, without slaking, there will be enough kefir acid and the taste of soda will not be felt in the finished baked goods, and the fluffiness of the brushwood will be excellent. Stir the mixture and leave for 3 – 5 minutes until the soda is completely dissolved and a light kefir foam forms.
- Add chicken eggs, sugar and salt, sour cream and stir everything until completely homogeneous. Eggs can be ground with sugar, then it will be much easier for the products to achieve homogeneity.
- Gradually add sifted wheat flour, making the dough thick. We use as much flour as we need, but as soon as the dough begins to form a certain lump, we transfer the mass to a table sprinkled with flour and then begin to mix with our hands until the final result. The main thing is not to overfill the dough with flour! Use flour to a minimum and do not overdo it! As soon as the dough has formed a tender, soft, pliable lump, stop kneading and leave the dough to rest for a while. On average, you will need about 3 cups of flour for everything. Some skilled housewives prepare verguns by generously greasing their hands and table with vegetable oil, and leaving the dough in the state of “barely kneading with your hands” - this is when the dough is no longer liquid, but has not yet formed a dense lump. It's difficult - but quite possible! But the baked goods look like cloud fluff...the crunches are so tender that they melt in your mouth!
When the dough has rested a little, we begin making brushwood:
-roll out the dough on a table sprinkled with flour or greased with vegetable oil, 1 cm thick. It’s up to you to decide whether to work with oil or flour, but know that when excess flour gets into the deep fryer, it burns with black smoke and gives off bitterness.
- randomly cut the dough into diamonds, making a slit in the center of each, and then, turning one edge of the vergun through the slit, we form brushwood.
- having prepared all the dough, fry the formed fluffy crunches in hot refined sunflower oil over medium heat. Set the oil to heat up in advance, and over medium heat, otherwise it will burn and smoke, and also disappear catastrophically quickly from the frying pan due to the high temperature - simply put, it will burn out. The oil must completely cover the products for high-quality baking and the formation of a golden, tender crust.
Use small baking dishes (frying pan, small saucepan) this will reduce oil consumption and be more economical. When preparing brushwood at home, I use a regular frying pan, which is both convenient and practical.
Remove the brushwood onto a paper towel, allowing excess oil to drain. When the verguns have cooled, sprinkle them generously with powdered sugar mixed with vanilla or cinnamon. Serve with fruit compote! Bon appetit!

- Butter – 2 tbsp. l.
Cooking method:
- Heat kefir in the microwave and melt the required amount of butter and honey. Sift the wheat flour into a sieve.
- Pour warm kefir into a bowl for kneading dough, add dry yeast to it, add liquid honey and stir everything well. Leave this mixture for 10 minutes.
- In a separate bowl, use a fork or whisk to beat the eggs with salt. Add beaten eggs and melted (not hot) butter to the kefir mass and mix well.
- Then add wheat flour sifted into a sieve into the resulting liquid base and knead the dough with your hands.
- Cover the bowl with the dough with a towel and place it in a warm place for 1.5 hours until it rises well.
- After this time, roll out the dough into a flat cake up to 4–5 mm thick and cut it into rectangles or diamonds.
- From the resulting blanks, form bows through a cut in the middle.
- Deep fry the brushwood according to the usual rules.
- Sprinkle the finished brushwood with a little crushed sugar and you can serve.

Brushwood on kefir with cognac - a simple recipe
Vodka, as one of the ingredients that helps the dough rise, is used more often in baking. However, if necessary, it can be replaced with cognac without any problems. That's what's done in this recipe.
Light crispy brushwood with cognac will be liked by everyone without exception and will probably become one of your favorite desserts.
Ingredients:
- 0.5 cups sugar;
- 2 tablespoons of cognac;
- Milk – 1.5 tablespoons;
- 2.5 cups flour;
- Vegetable oil;
- Vanillin – 1 sachet;
- 2 eggs;
- 0.5 tsp baking powder (can be replaced with soda, slaked with vinegar);
- 0.5 tsp salt.
Stages:
Beat the eggs in a bowl with a regular whisk.
Mix them with cognac and milk. Add some salt. Add soda, sugar and vanillin. Whisk everything again.
Add flour little by little and knead into an elastic dough.
Roll out the dough in parts into a thin layer.

Ingredients:
- 3–4 tbsp. wheat flour;
- 300–400 ml kefir;
- 1 egg;
- 1 tsp. soda;
- 3 tbsp. l. granulated sugar;
- 1 pinch of salt;
- 100 ml vegetable oil for frying;
- powdered sugar for sprinkling.
Preparation:
- Prepare your food. Remove kefir and milk from the refrigerator half an hour before cooking so that they warm up to room temperature.
To prepare lush brushwood, you must use kefir with a fat content of at least 2.5%. Otherwise, the dough will require more flour, and the delicacy will turn out less airy.
Eggs and kefir for the dough should be warm
- Sift the flour 2-3 times, mix with soda, sugar and salt.
- Beat the egg into the mixture.
To mix the ingredients you need without effort, choose a large capacity container. - Mix the ingredients, pour in the kefir. Add the drink gradually, focusing on the consistency of the dough.
The mass should not be liquid. If the kefir is too cold, warm it up a little - Knead into a thick, slightly sticky dough.
To keep the dough fluffy, do not add too much flour and do not knead the mass for too long. - Grease your hands with vegetable oil, roll the dough into a ball and place in a bowl.
- Cover the dough with a towel and let rest for 30 minutes.
- Place the dough on a floured board and roll it out to a thickness of 0.5 cm or a little more.

Many different baked goods are made from kefir dough. And it always turns out different, even when the same ingredients are put into the dough. Pour kefir into a bowl, add sugar and salt. Mix with a whisk.
Add eggs and butter. Stir again.
Add flour mixed with baking soda. Stir the dough first with a wooden spatula, then place it on a floured table and knead into an elastic dough. Cover it with a plastic bag and leave it to rest for 20-30 minutes.
During this time, the dough will become elastic and rise slightly.
Then divide it into several parts and roll each part into a very thin piece.
Cut it into strips and then into rectangles. Make cuts in them through which one side of the dough is turned out. Or you can make three cuts on a piece of dough and braid it.
