  • Baking powder – 1.5 teaspoons;
  • A pinch of salt;
  • Filling - to taste: dried fruits, candied fruits (100-150 grams).

The cooking method, thanks to a smart device, is extremely simple:

  1. Melt the butter and place it in the bowl of the bread machine together with the cottage cheese.
  2. We take the eggs out of the refrigerator in advance, since they need to be at room temperature before baking. We break them into a separate bowl where we mash them a little with a fork. We send this mass to cottage cheese and butter.
  3. Mix the pre-sifted flour with the rest of the dry ingredients, and then put them in the bread machine.
  4. We set the desired mode, if this is not the case, then “Baking” will do.
    While the machine is busy kneading the dough, we will deal with dried fruits, which need to be doused with boiling water, dried with a towel and sprinkled with a little flour. All these manipulations are necessary to ensure that the berries become soft and evenly distributed throughout the dough.
  5. After a special signal from the bread machine, we load dried fruits into it. Now we just have to wait for it to be completely ready. Baking time according to the recipe is approximately 40-50 minutes. The overall cooking process can take about 1.5 hours.
  6. Readiness is checked with a toothpick. If, after piercing the pastry, you take it out completely dry, the cake is ready.

  • table salt – 3 g;
  • cane sugar – 150 g;

Lemon cake in a bread machine

For this recipe you need to take:

  • 300 g flour;
  • three to four eggs;
  • a glass of sugar;
  • half a glass of raisins;
  • 70 g butter;
  • juice and zest of one orange;
  • a pinch of salt;
  • 2 tsp. baking powder;
  • a little powdered sugar.

Preparation:

  • Squeeze the juice from the orange. Grate the zest.

    Contrary to practice, the following recipe does not require full-fat sour cream. Twenty percent fat is quite enough, but a cake made with a less calorie product will turn out just as good.

    Ingredients:

    • a glass and three more spoons of 20 percent sour cream;
    • 350 grams of flour;
    • a spoonful of vanilla sugar and 150 grams of regular sugar;
    • eggs, fresh - three pieces;
    • ready-made ripper - a teaspoon;
    • juicy light raisins - one hundred grams.

    How to cook

    1. Leave the washed raisins in boiling water for a quarter of an hour. Then drain the water, and transfer the raisins to a towel and blot them thoroughly. Place in a bowl, sprinkle with flour and stir.
    2. Pour sugar into another, deep enough container and release the eggs. Stir with a spoon, then thoroughly go through the mixture with a mixer. Pour into a bread machine, add sour cream and flour sifted with baking powder. Activate the muffin baking program and wait for the beep.
    3. Add raisins to the dough that has passed the first stage of kneading and lower the lid. No further intervention is required, just wait until the bread machine turns off, remove from the bucket and cool the cake, decorate as you wish.

    And then aromatic homemade kefir cakes will come in handy. Save the kefir cake recipe in your bread maker so you always have it on hand. Believe me, guests will eat it in a matter of minutes and ask for more.

    Ingredients:

    • flour – 400 gr.;
    • kefir – 200 ml;
    • egg – 4 pcs.;
    • lemon – 0.5 pcs.;
    • granulated sugar – 250 gr.;
    • baking powder - 3 tsp;
    • raisins – 50 gr.;
    • candied fruits – 100 gr.;
    • vanillin – 10 g;
    • salt - a pinch.

    Recipe for kefir cake in a bread machine:

    Preparing the cake dough Remove the kefir from the refrigerator and bring to room temperature. In a deep bowl, beat the eggs with a whisk, add salt, sugar and vanilla. Using a blender, beat continuously for up to 4-5 minutes. Add kefir and stir well with a spoon.

    Boil water. In a separate plate, mix raisins with candied fruits and add boiled water. Set aside for 10 minutes. After the time has passed, drain the liquid and rinse the food thoroughly under the tap. Fill it again, but with cold water. Pour boiling water over the lemon, remove the zest and squeeze out the juice.

    Pour the cake batter into the prepared bread machine container, along with the zest and freshly squeezed lemon juice. Sift the flour, add a little at a time while stirring the almost finished kefir dough with a spoon. Add baking powder.

    Drain the candied fruits and raisins, rinse and dry well, wrapping them in a paper towel. Place dry fruits in a bread maker container. If the equipment operates a special signal, it is recommended to add dried products to the kefir dough only after the signal.

    Cooking a delicious cake in a bread machine The household assistant you use should have the “Sweet Bread” program (perhaps a different name, because each manufacturer tries to make his creation unique even in the names of small details). Homemade cakes take about an hour to prepare in a bread machine. Cooking time can be reduced/increased due to the power of the kitchen appliance.

    Cover with a lid, set the desired program and wait. At the end, check for readiness by inserting a wooden match into the middle of the product. If the kefir dough sticks, then you need to press the “Bake” button and let it bake for about 15 more minutes.

    Now you know how to make a kefir cake in a bread maker, it doesn’t take long: it’s quick and easy. You can cook delicious baked goods every day. All that remains is to decorate the delicious cupcake.

    Cupcake "Golden"

    One of my favorite recipes. The cake prepared using it really has a beautiful golden hue, and the recipe is, one might say, golden, that is, classic.

    1. Melt the butter in an iron bowl; while it is hot, add sugar and stir. Break the eggs and beat.
    2. Then pour in the milk, add salt, vanillin, baking powder and flour. By the way, instead of vanilla sugar, I used crystalline vanillin, of course, in a smaller proportion.
    3. Pour the dough into the mold and place it in the bread machine. In the very first photo you can see that there was very little dough in the mold. (The maximum volume of my mold is 700 g.) Install the “Cupcake” program and wait for the deliciousness.
    4. This is the tiny cupcake I got. Yes, it’s not high, but my muffins never rise in my bread machine, this is its main disadvantage. If you do better, share in the comments what the secret is.

    Christmas cupcake

    To call this baking option traditional for us would not be entirely correct, but in Western Europe the tradition of baking this cupcake several weeks before the most anticipated holiday has existed for centuries. Its uniqueness is that, unlike any other delicacy, it must “infuse” thoroughly to reveal its true taste, and this cake is served on the table only after a few weeks, generously greased with melted butter and sprinkled with a thick layer of powdered sugar. In this way it is similar to our Easter cake, which, as you know, also does not go stale for a long time, maintaining a wonderful taste all the time.

    The recipe for a Christmas cake is quite simple and requires virtually no outside intervention, which makes it especially attractive, because in most cases, preparing such delicacies is not easy. For it we will need the following ingredients:

    For the test:

    • Flour – 365 grams
    • Sugar – 3 tablespoons;
    • Butter – 150 grams;
    • Yeast – 2 teaspoons (instant dry);
    • Milk – 60 ml;
    • A pinch of salt.

    For filling:

    • Almonds – 100 grams;
    • Dried cherries – 100 grams (preferably pitted);
    • Raisins – 100 grams;
    • Candied orange – 100 grams;
    • Cinnamon - a pinch;
    • Lemon liqueur – 100 grams;
    • Juice of ½ lemon.

    Cooking should begin by preparing the filling:

    1. We thoroughly wash all dried fruits and candied fruits, dry them and pour in liqueur for at least an hour.
    2. Dry the almonds in a frying pan, chop them coarsely, and then sprinkle with cinnamon.
    3. Place the dried fruits that have infused and absorbed the flavor of the liqueur onto a strainer to drain off any remaining liquid. If you have large candied orange peels, then it is better to chop them a little at this stage.
    4. Sprinkle the resulting filling with lemon juice.
    5. Now you can start preparing the dough.
    6. Mix the milk heated to 30 degrees with melted butter and place it in the bread maker bowl. Add salt and sugar there.
    7. Sift the flour and add yeast. The dough base is ready. Now you need to insert the bowl into the body of the bread machine, close the lid and set “mode 6”, and then start the device.
    8. An hour after the start of kneading, the machine will notify you of the need to add fillers with a special signal. Sprinkle them with a little flour before placing them in the bowl, this will help distribute them evenly throughout the dough. If the device is unable to mix such an amount of filler, do it manually. After this, the dough must be allowed to rise for an hour; to do this, leave it under the closed lid.
    9. The risen dough must be given the correct shape. To do this, it is pressed down in the middle with a rolling pin, after which it is folded like a closed book. In this form it is sent to bake.
    10. The finished cake should cool right in the bowl, after which it is wrapped in parchment and sent to “ripen” for at least a couple of weeks. Before serving, it is greased with 50 grams of melted butter and generously sprinkled with powder.

    Cupcake from a cookbook

    I have a Rolsen RBM-1480 bread machine, which does not have a “Baking” program, and I have to use the standard “Cake” mode, which includes a proofing cycle before baking.

    If you use the cake recipe from the cookbook for the Rolsen RBM-1480 bread machine, you will end up with something burnt and over-salted. The original recipe had to be creatively reworked and improved, reducing the amount of salt, increasing the amount of other ingredients, as well as baking powder and yeast, so as not to beat the eggs as recommended in the cookbook.

    Simple cupcake recipe

    Basic composition of the cake, approximately 650 g:

    If you are baking a cake with coarse or coarse vanilla, dissolve it in a small amount of vodka before adding it to the bread machine bucket.

    Add the main ingredients to the form in the same sequence as they are located in the list. There is no need to beat the eggs. Then add three tablespoons of cocoa.

    After the flour, I pour all the ingredients in one direction (in the photo on the right), and the yeast in the other.

    Next, turn on the bread machine, select the “Cupcake” mode and press the “Start” button.

    After finishing the first kneading, check if the dough is sticking to the walls of the mold; if there is a lot of it on the walls, scrape it off into the total mass with a wooden spatula. You can see in the photo that there wasn't a lot of dough stuck to it, so I didn't clean it off.

    If you plan to use raisins or nuts, or both, a beep will sound during the second batch to let you know it's time to add them to the pan.

    Then the stove will do everything itself. At the end of the cycle, remove the cake from the mold.

    Carrot cake in a bread machine - recipe

    The category of healthy baked goods includes carrot cake prepared with kefir in a bread maker. Root vegetables rich in carotene will fill the product with color, vitamins and new taste. They are first ground on a fine grater or crushed in a blender. In addition to raisins, steamed and chopped dried apricots will effectively complement the composition.

    Ingredients:

    • eggs – 2 pcs.;
    • carrots – 1-2 pcs.;
    • flour – 160 g;
    • granulated sugar – 150 g;
    • butter – 150 g;
    • cinnamon and lemon zest - 0.5 teaspoon each;
    • baking powder - 1 teaspoon;
    • soda – 0.5 teaspoon;
    • raisins and dried apricots - 80 g each.

    Preparation

    1. Beat eggs with sugar, mix with melted butter and grated carrots.
    2. Add zest, cinnamon, dried fruits, flour with soda and baking powder.
    3. Transfer the dough into the bucket of the device.

    In terms of sweetness, the “Spring” cupcake from this recipe turns out just like a store-bought one. If you like it sweeter, increase the amount of sugar to 1 cup.

    Yeast cake in a bread machine

    Cooking a cake in a bread machine according to the following recipe will allow you to get an analogue of Easter cake. Here, baking modes would be more appropriate: “Sweet bread” or “Sweet pastries” where the dough is kneaded more efficiently and baked perfectly. After cooling, the product can be coated with chocolate or sugar glaze and decorated to taste.

    • dry yeast – 2 teaspoons;
