Five recipes for savory muffins for every taste

It seems that there are no people in the world who do not like sweet cupcakes. Soft melting dough, an abundance of candied fruits and spices, a festive taste - you can’t think of a better dessert for evening tea. But you can move away from the usual way of looking at things. And if you put meat filling inside and serve the dish in the morning, it will become a nutritious breakfast. Or if you “hide” spinach, which children don’t like, in a muffin, they themselves will ask for more.

And so, the hit five of the most delicious basic recipes for savory muffins and several ideas on how to diversify them.

Muffins with hot cheese and sweet peppers

The inventor of this cheese bomb says it was created... by mistake. They just put too much cheddar in the dish. But it turned out that this proportion gives a delicate consistency, average between dough and custard.

Mix one and a half cups of flour with 2 tsp. baking powder and 1 partial tbsp. l. sugar, add a little salt - this is a mixture of dry ingredients. Now wet: 1 cup milk, a quarter cup melted margarine, 3 cups grated hot cheese, large bell pepper, diced (the brave ones can go for chili), 1 egg. Combine both ingredients, mix thoroughly, bake portioned cupcakes for about 25 minutes.

For a milder taste, you can take mild cheese and replace the pepper with an apple or canned pineapple.

Curd cupcakes in silicone molds

Cottage cheese dough is always a pleasure to prepare. The baked goods come out soft and tender.

To make muffins you will need cottage cheese, flour, starch, butter, eggs and sugar.

Ingredients

  • cottage cheese – 250 grams;
  • eggs – 3 pieces;
  • butter – 200 grams;
  • sugar – 0.5 – 1 glass;
  • flour – 150 grams;
  • starch - 3 tablespoons;
  • baking powder.

Cooking method

  1. Sugar, eggs and cottage cheese need to be mixed and starch added to the mixture.
  2. Melt the butter and pour it into the cottage cheese.
  3. Sift the flour and baking powder into the bowl with the curd mixture and mix thoroughly again.
  4. Divide the dough into the molds and bake in a preheated oven for 30-50 minutes. You can check readiness with a dry toothpick.

Vegetarian muffins made from ready-made bread

This recipe will be appreciated not only by those who have given up meat, but also by those who want results with a minimum of effort. Here the dough has already been made for us, so all that remains is to prepare the delicious filling.

Grind the stale loaf (in small cubes). Chop 1 onion, 3 apples, 4 celery stalks. Chop half a cup of fresh herbs (parsley, thyme, rosemary, sage). Chop 2 pickled cucumbers, carefully drain the brine.

Stew the onion in vegetable oil, add apples, celery, and herbs. After 5 min. add 2 cups of water and keep for a couple more minutes. Add the stewed mixture and cucumbers to the bread, mix, trying not to destroy the cubes, season with salt and pepper. Place in molds and bake until crispy.

Varying the greens changes the taste. In addition, instead of cucumber, you can take any sour component (cranberries, dried cherries, unsweetened dried apricots, soaked apples, etc.).

Cupcakes in silicone molds with yeast

How to make muffins in silicone molds using yeast? This recipe will take a little longer to prepare. They are prepared using yeast, but don’t be alarmed: it’s easier than grandma’s pies.

Yeast helps the dough rise, making the muffins fluffier and airier.

Ingredients

  • flour - 3 cups;
  • milk – 0.5 cups;
  • butter – 2/3 pack;
  • sugar – 0.5 cups;
  • eggs – 5 pieces;
  • dry yeast – 1 sachet;
  • salt – 10 grams;
  • a little vanillin;
  • raisins – 0.5 cups;
  • candied fruits – 2 handfuls.

Cooking method

  1. First of all, you need to sort out the raisins and pour boiling water over them, leaving them for a few minutes. Then drain the water and dry it on a paper towel.
  2. The milk must be heated (but not boiled) and the yeast must be diluted in it.
  3. Melt the butter in a water bath.
  4. Beat eggs with sugar and vanilla. Pour in melted butter and milk with suitable yeast.
  5. Pour flour, raisins and candied fruits into the mixture, mix the dough thoroughly. Let it sit for half an hour under a towel in a warm place.
  6. Divide the dough into the molds and let it rise again for 10-15 minutes.
  7. Place the molds in a preheated oven and bake for up to 50 minutes at 180 degrees.

Healthy muffins with cheese and spinach

Checked: adults and kids fight for these cupcakes. Such pastries are suitable to give to a schoolchild - unusual, nutritious and according to the rules of healthy food.

We make a simple dough from 2 eggs, one and a half cups of flour, the same amount of milk, melted margarine (a third of a pack) and 1 tsp. baking powder. Add a little salt. Add a finely chopped bunch of spinach leaves and 150 g of cheese. Unfold and bake for half an hour until golden brown.

This recipe is a godsend because it gives room for experimentation. Instead of spinach, add broccoli, peas, Mexican mixture, stewed cauliflower or white cabbage, and feta cheese can be replaced with feta, mozzarella or other soft cheese, including cream cheese.

Muffins with cottage cheese and kefir

Ingredients:

  • Cottage cheese - 400 gr.
  • Wheat flour - 1 cup
  • Kefir - 100 ml.
  • Baking powder - 1.5 teaspoons
  • Egg - 1 pc.
  • Butter - 50 grams
  • Granulated sugar - 100 gr.
  • Salt - a pinch
  • Vanilla sugar - 10 gr.

Cooking method:

  1. Melt the butter and leave it to cool. Take the cottage cheese, put it in a deep bowl, add granulated sugar, vanillin, and grind thoroughly. It should be a paste.
  2. In a separate cup, beat the egg and pour it into the dissolved cottage cheese.
  3. Add melted, cooled butter, mix and pour in kefir. Mix the sifted flour, baking powder, salt, and gradually add to the ingredients, knead the dough. It should turn out thick.
  4. Place in the molds and place in a preheated oven at 180 degrees for 20 minutes.

We check readiness, remove from the oven and use for its intended purpose. Bon appetit.

Ham muffins

A very “masculine”, satisfying option, rich in protein. If you need to recharge for the whole day or want to have a hearty snack after work, this is a good choice.

For the dough, combine 2.5 cups of sour cream, 1 tsp. baking powder, one and a half cups of flour and 1 egg. As a filler we will have 200 g of ham and 3 crumbled hard-boiled eggs. Knead everything together, put it in molds, put half an olive on top and bake for about 20-25 minutes.

Use as a filling any meat or fish salad left over from yesterday with mayonnaise (yes, Olivier will also work). Then slightly reduce the amount of sour cream.

Preparing dishes and food

  1. To make muffins in silicone molds, you will need a large bowl for kneading the dough, a sieve to sift the flour, a mixer or whisk, a measuring cup and the molds themselves.
  2. If the molds are used for the first time, they will need to be washed with dishwashing detergent and greased with oil.
  3. The flour must be sifted, the milk must be heated, and the butter must be melted in a water bath.
  4. It is better to remove the eggs from the refrigerator a couple of hours before starting the cooking process.

Versatile snack muffins

The leader of the hit parade is a leader because it contains a base recipe for all occasions, and you can fill it with anything.

Half a liter of kefir (sour milk), soda and salt on the tip of a teaspoon, 100 g of soft butter, 2 eggs, 10 tbsp. l. flour. From this set we prepare a liquid mixture. Pour a little dough into the bottom of the mold, put a couple of spoons of filling and put a little dough on top again. Sprinkle with sesame seeds and cook in the oven for about half an hour.

The filling can be minced meat, chicken, mushrooms, stewed vegetables, fish, crab meat, eggs, liver - there are a million options. Instead of sesame seeds, poppy seeds, chopped nuts or any seeds are suitable.

You can make not portioned baking, but a full-fledged cupcake in a large form. In this case, the cooking time is doubled.

The dough is baked when the blade of a knife inserted into it remains clean and dry. For muffins, use a toothpick for the same purpose.
