  1. The meat of a well-fed animal is the most delicious. It is light pink and very delicate. It is enough to boil, fry or stew using a minimum of spices. On the carcass of a skinny rabbit, the meat is bluish-red and quite tough. It makes good cutlets, meatballs and balls.
  2. The legs and back are the most delicious parts of the rabbit.
  3. Rabbit meat, especially the carcasses of mature animals, has a characteristic smell. If this bothers you, soak the meat in water or vinegar solution, changing the liquid once every half hour. Usually 3 – 4 pours are enough. When pouring the meat for the last time, add a little wine, milk or soy sauce to the liquid.
  4. It is convenient to cook rabbit in a multicooker using two programs. First, turn on the “Baking” mode to fry pieces of meat, onions and carrots in a small amount of oil, and then bring the dish to readiness in the “Stew” mode, adding the required amount of liquid and spices.

We offer you a recipe for a dish from the “finger-licking” series. Its highlight is the thick and very fragrant gravy: it permeates the tender meat with sharp notes of spices, softened by the sweet and sour taste of prunes.

Products from which we will cook:

  • young rabbit meat (fillet) – 2 kg;
  • carrots – 2 pcs.;
  • onions – 2 pcs.;
  • prunes – 200 g;
  • sweet ketchup – 3 tbsp. l.;
  • sour cream – 3 tbsp. l.;
  • olive oil – 2 tbsp. l.;
  • garlic – 3 cloves;
  • mustard – 1.5 tsp;
  • seasoning of your choice.

Let's prepare the stewed rabbit in a slow cooker according to the instructions:

  1. For this dish, choose pitted prunes. Before doing anything with dried fruits, they are soaked for 30 minutes, or even for 1 - 1.5 hours if they are too dry. Pour warm water over the prunes and set aside for now.
  2. Cut the rabbit meat into medium-sized pieces. Place the multicooker in the “Baking” mode for half an hour and fry the rabbit meat. Meanwhile, peel and chop the vegetables. Place the chopped carrots and onions in the bowl where the fillet is already fried and cook for another 10 minutes (that is, 40 minutes in total).
  3. Fill the multicooker 2/3 full, add the required amount of ketchup, sour cream and mustard. Then add a pinch of salt and pepper, as well as your favorite spices and herbs (for example, rosemary or basil). Mix the ingredients of the future dish and switch the kitchen appliance to the “Stew” mode, setting the timer for 1.5 hours.
  4. 30 minutes before the end of stewing, place the soaked dried fruits in the bowl. At the same stage, adjust the taste of the dish if you lack salt or pepper. 10 minutes before the end of the program, put the garlic through a press into the multicooker.
  5. The finished stewed rabbit in a slow cooker is placed on a large dish and decorated with herbs. Served with a side dish of mashed potatoes or boiled rice. Bon appetit!

This recipe makes the most delicate gourmet dish.

It is suitable for both everyday and festive tables. The rabbit meat will end up soft and juicy. At the very beginning, the rabbit is washed, soaked, and marinated. For a brighter taste, the recipe uses apples and tangerines. The calorie content of the treat will be approximately 96 kcal per 100 g.

Ingredients

For the dish you need to take:

  • rabbit legs – 1.3-1.5 kg;
  • white wine (semi-dry) – 1 tbsp.;
  • garlic – 4-5 cloves;
  • sour cream - 3.5-4 tbsp. l.;
  • apple and tangerine – 1 pc.;
  • cinnamon, dried basil, salt, olive oil.

Step-by-step cooking process

The cooking process includes several stages:

  1. The washed rabbit carcass should be chopped into medium pieces. Then send it to a separate container. The remaining entrails and rib pieces should not be thrown away. It is better to set them aside and use them for other dishes. For example, for soups, broths. These parts will not be baked.
  2. All dry spices must be mixed. Afterwards, add olive oil to them. About 1 tbsp will be enough. l. This mixture will best soften the meat.
  3. The rabbit should then be poured with aromatic oil, wine, and covered with crushed garlic.
  4. After thorough mixing, you will need to leave the mixture in a cool place for 3.5-4 hours. A balcony is also good for this purpose.
  5. Fruits need to be peeled and chopped randomly. It is advisable to remove the films from the tangerine slices. Be sure to remove all the seeds.
  6. When the rabbit is marinated, it’s time to move it into the sleeve and secure one end with a special clip. Half of the remaining marinade will be mixed with sour cream. Afterwards, you can pour the mixture over the meat and add pieces of fruit there.
  7. Place the sleeve on a baking sheet and bake at medium temperature for about 75-80 minutes.
  8. Then you will need to remove the food from the oven, cut the sleeve at the top and continue baking for about a quarter of an hour. This is required to achieve an appetizing golden brown crust on the treat. But you can ignore this stage.

Next, the dish will be completely ready. All that remains is to cool it slightly, divide it into plates and serve. It will be a good idea to combine the legs with an assortment of fresh vegetables.

This dish may not be as sophisticated as the previous one, but it is certainly no less tasty! Tender rabbit meat in sour cream and vegetables are the ideal choice to feed your family a proper lunch or dinner. As a side dish, you can boil potatoes or make homemade noodles.

For the dish you will need the following products:

  • rabbit carcass – 2 kg;
  • carrots – 3 pcs.;
  • large onions – 2 pcs.;
  • sour cream – 250 ml;
  • garlic – 3 cloves;
  • ground black pepper, salt - to taste;
  • vegetable oil;
  • greenery.

Cooking instructions:

  1. Divide the animal carcass into portions.
  2. Chop the onion, cutting it into small cubes, and grate the carrots on a grater with large teeth.
  3. Pour a little vegetable oil into the bowl, put the meat in there and set the “Baking” for 40 minutes. During this time, periodically turn the rabbit pieces over to the other side to ensure even frying.
  4. While the multicooker is running, use the stove and fry the vegetables in oil in a frying pan. First, onion until golden brown, then carrots until soft.
  5. Place the fried vegetable mixture on top of the meat, add salt, pepper and the spices you usually use to cook with. Make the sour cream thinner by adding a little water and pour it into the bowl.
  6. Turn on “Stew” for 1.5 hours, and then use the “Baking” mode for another 40 minutes. 5 minutes before the end of the program, add chopped garlic to the bowl. It would be wrong to ignore this dish - rabbit and rice complement each other perfectly!

Let's cook:

  • rabbit meat – 500 g;
  • long grain rice – 2 multi-cups;
  • vegetable oil - 3 tbsp. l.;
  • carrots – 1 pc.;
  • onion – 1 pc.;
  • salt and spices.

We will cook in this order:

  1. Divide the rabbit fillet into portions that are convenient for you.
  2. Peel the vegetables and chop them into small pieces.
  3. Grease the bottom of the multi-bowl with oil, place the rabbit meat and vegetables there, then start the “Baking” for half an hour.
  4. Add salt and spices of your choice to the products, place rice on top of the meat and pour hot water there. It should be about 1 cm above the contents of the bowl. Rabbit legs, recipes for which are published later in the article, turn out most tender with sour cream sauce. You can use more vegetables to taste than recommended in the recipe.

If there are enough of them, you can even do without a side dish. Then you will get a particularly healthy low-calorie treat. In this case, you should add sweet peppers and zucchini to the vegetables. You can even use potatoes.

Ingredients

For the dish you need to take:

  • rabbit legs – 900-950 g;
  • carrots and onions – 1 pc.;
  • garlic – ¼ head;
  • sour cream – 1 small pack (approximately 260-270 g);
  • salt.

It is recommended to take the maximum fat content of the dairy product for the recipe. Then the gravy will turn out especially tasty. You can also use different spices. For example, regular black pepper goes well with the dish.

Step-by-step cooking process

The cooking process includes several stages:

  1. The legs should be thoroughly soaked and covered with a mixture of grated garlic, salt and spices. Then leave them in the marinade for approximately 50-60 minutes.
  2. In order for the parts of the carcass to be covered with a golden crispy crust, they should be fried in a frying pan in hot oil. This process will take several minutes over high heat.

Rabbit meat prepared according to this recipe turns out incredibly tasty. Fragrant mushrooms will imbue the meat with the original spirit of the forest and give it an even more appetizing appearance.

Required ingredients:

  • any dry mushrooms - 1 handful;
  • young rabbit fillet – 1 kg;
  • water – 2 tbsp.;
  • onions – 1 pc.;
  • carrots – 1 pc.;
  • sour cream – 1.5 tbsp;
  • vegetable oil;
  • salt pepper.

It’s very easy to prepare rabbit stewed with mushrooms in a slow cooker:

  1. Pour oil into the bowl of a kitchen appliance and place the rabbit meat cut into pieces. Salt, pepper and add any spices to taste. Fill the bowl with water and simmer on the appropriate program for 2 hours.
  2. While the meat is cooking, soak the mushrooms in warm water for half an hour, then rinse them in running water and cut into strips.
  3. Cut the onion into half rings, grate the carrots with large shavings. Fry the vegetables in a frying pan until golden brown. Then add mushrooms to the fry, and after another 10 minutes - sour cream. Simmer the food for 15 minutes over low heat, add a little water if necessary.
