Products must be removed from the refrigerator in advance so that they reach approximately the same room temperature. Sift the flour so that it is saturated with air, the lumps crumble, and foreign inclusions remain on the sieve. This preparation of products is important for creating an airy dough, which will result in baked goods with many small bubbles that lift the dough.

Yeast can be used either dry or compressed. The difference between them is only in quantity: for every 1 g of dry powder there corresponds 3-3.5 g of pressed fungi. In order for the yeast to come to life and begin its work of fermenting the dough, it must be awakened by placing it in a warm environment.

Milk is traditionally used to create a suitable environment for the development of culinary fungi. If necessary, it can be replaced with water or kefir. The fat content of dairy products does not play a big role, but they must be of good quality and fresh.

Growing yeast fungi require nutrition in the form of sugary substances. Sugar is added to the dough not only to improve the taste, but also to feed the growing yeast. When carbohydrates are processed, microscopic creatures release carbon dioxide, which expands and raises the dough during baking. But excess sugar is harmful to yeast, so you need to add it exactly according to the recipe.

To improve the taste, butter, eggs, vanillin and other ingredients are added to the dough. These products must be added in the quantities specified in the recipe. So, in order to bake Moscow buns with yeast and milk, the housewife will need:

  • milk - 1 glass;
  • yeast - dry (8 g) or pressed (25 g);
  • butter (you can take refined vegetable oil) - 3 tbsp. l.;
  • sugar - 5 tbsp. l.;
  • salt - ¼ tsp;
  • chicken eggs - 2 pcs.;

  • wheat flour – 0.45 kg;
  • milk – 150 ml;
  • water – 100 ml;
  • sugar – 0.2 kg (including 80-100 g for sprinkling the dough when forming buns);
  • butter – 180 g;
  • chicken egg – 1 pc.;
  • pressed yeast – 20 g;
  • vanilla sugar – 10 g;
  • salt – 2-3 g.

Cooking method:

  • Heat the water to a temperature of about 35 degrees. Pour into a bowl. Crumble the yeast into it, add a tablespoon of sugar, and stir. Wait a little until the liquid becomes foamy. Once you are sure the yeast is working, move on to the next step.
  • Pour milk heated to 30-35 degrees into a bowl with yeast, add another spoonful of sugar into it, stir.
  • Sift the flour. Pour some of it into a bowl with yeast. Stir the mixture until smooth.
  • Cover the bowl with the dough with a thin cloth and place in a warm place. Wait for the dough to come up.
  • Melt the butter in the microwave or in a water bath. If you simmer it over low heat, be careful not to let it boil.
  • Allow the melted butter to cool slightly, pour it into the bowl with the dough.
  • In a separate container, beat the egg with salt, vanilla sugar and 60-80 g of regular white granulated sugar. Pour the egg mixture into a container with the remaining ingredients. Mix the ingredients thoroughly.
  • Add the remaining flour and knead into a soft but not sticky dough.
  • Place the dough in a pan, cover with a damp towel, and place in the warm dough. Wait for the dough to rise. Increasing in volume by 2-3 times. Punch it down and wait until it rises again.

After this, you can knead the dough a second time and begin to form buns out of it. To do this, the dough is rolled out and cut into rectangles, sprinkled with sugar and rolled into long tubes. The ends of the tubes are fastened, an incision is made in the center and the products are turned inside out, giving them the shape of a bow or a heart. The formed buns are placed on a baking sheet, allowed to stand for 15-20 minutes at room temperature, then placed in a preheated oven and baked until cooked.

  1. Preparing the dough. During the first stage of dough creation, the yeast changes from an inactive state to a living state. A more complex way to make buns with sugar is dough butterflies. Despite the complex shape, making butterflies is not at all difficult if you have already mastered cutting with a heart. Each butterfly represents a double heart. First, all operations are performed in the same way as when making a heart: they roll out the layer, lubricate and sprinkle it, and roll it up.

To make it easier to make butterflies, the width of the layer is made slightly larger than for the heart. The ends of the finished roll are folded down. They should come together halfway through the roll. Using a knife, cut both folds, leaving the middle of the workpiece untouched. The cut ends are unrolled, as when making hearts. The buns are placed on a baking sheet.

How to make curl buns?

Curls can be made in two different ways. The simplest is to roll out the dough into a large layer, grease it with butter and sprinkle with sugar and other additives as desired. Now I leave the dough in a warm place, after covering it with a towel. First, it fits within an hour, then I press it down a little with my hand, and then leave it for another hour so that it increases in size again.

I sprinkle a silicone mat or other work surface with flour and place the dough on it, which I cut into two equal parts. I cut each of these parts into 4 more approximately equal parts. In total you will get 8 sweet buns.

Next, I take a piece of dough and, using a rolling pin, roll it out into a long oval. This is necessary so that the bun has many layers.

Since I have cinnamon buns made from yeast dough, I pour the remaining sugar into a separate container, add cinnamon to it and mix. The bun filling is ready for further use.

To make the yeast dough buns as sweet as in the photo, I grease the dough a little with the melted butter that is left and sprinkle it with a mixture of sugar and cinnamon.

Now I want to show you how to make buns, or rather, how to roll them correctly. I roll the prepared dough into a tube. I roll it not with the long side, but with the short one, this way I get more layers in the bun.

I connect the ends of the tube together, securing the two edges with my fingers.

Next, using kitchen scissors, I cut the folded dough in the center, but without cutting a little to the end. Then I bend the two cut edges from the center to the sides, and you get these heart buns with sugar.

As can be seen in the recipe, I place the buns with sugar on a baking sheet lined with parchment so that they do not stick. If there is no parchment, I simply sprinkle the baking sheet with a small amount of flour. I place the buns at a distance from each other, since during the baking process they will increase in size.

Making the dough

  1. Pour 11 grams of yeast into 500 milliliters of warm milk and mix.

  2. Add 500 grams of flour and mix well.

  3. Cover with film and place in a warm place for thirty to forty minutes. The bowl with the dough can be placed in warm water.

  4. Beat 2 eggs into a large bowl, add 150 grams of sugar, 1/4 teaspoon of salt and grind.

  5. Add 200 grams of melted margarine or butter and mix.

  6. Place the dough into the eggs and stir thoroughly.

  7. Gradually add flour and knead into a soft, elastic dough.

  8. Cover the dough and set aside in a warm place for one hour.

  9. Place the dough on a table sprinkled with flour. Knead the dough, adding flour little by little.

Making sugar buns

  1. Divide the dough in half and cut each part into equal pieces.

  2. Mix 100 grams of sugar with 1 packet of vanilla sugar. Roll out the pieces into even circles.

  3. Grease the circles with vegetable oil and sprinkle with 1-1.5 teaspoons of the sugar mixture.

  4. We roll the circle into a tube, bend it, cut it and unfold the ends as in the photo.
